With new approaches and an embrace of new methods, they are taking Thai coffee to exciting new places. Having left careers in accountancy and engineering behind, Nui and Aoy Jaisooksern decided to return to the land of their parents to grow coffee. Doi Saket is the oldest coffee growing area in Thailand, located in Chiang Mai province. The first few trees of Arabica coffee that were part of the opium replacement program of the Thai King were tested here. As a result, heirloom varietals, particularly Typica, are still commonplace in many old farms. The area of Doi Saket is the epitome of shade grown coffee farms. Typica trees are grown under a forest with many micro mills each producing about one ton of green beans per year. At 1300 - 1500 meters, Doi Saket is situated at a lower altitude than many of the farms we work with. However, at 19 degrees north of the equator, the altitude is very high for coffee - in Thailand, coffee cannot grow above 1550 meters. The result is a coffee with a level of complexity usually associated with coffees grown at higher altitudes.THE PROCESSThis lot was processed in washed style, with a double-stage fermentation used to produce a more complex profile. After arriving at the mill, cherries were immediately pulped then dry fermented in a sealed tank for 24 hours. After this first stage, water was added to the tank for a period of wet fermentation, for an additional 24 hours, followed by washing with clean water. The coffee was then dried on raised beds before undergoing multiple stages of sorting and quality control, including a final stage of hand sorting.ROASTER'S NOTEIn one of the oldest coffee growing areas in Thailand, Nui and Aoy Jaisooksern have introduced modern speciality methods to deliver clean, distinct flavour. Doi Saket is a juicy coffee with delicious berry notes.

Over 80 hectares are dedicated to more than 20 botanical varieties, each treated as a unique project.ABOUT THE COFFEEThis exceptional batch is SL28 — a legendary variety known for its incredible purity and elegance, especially in Kenya, but under Hacienda Sonora’s conditions, it achieves extraordinary clarity and finesse. Grown at an altitude of about 1300 meters above sea level, it offers a cup full of juiciness, delicate structure, and refined sweetness.The natural processing was carried out with great precision: selectively picked cherries are first separated by floatation, then dried whole on black tarps for about 12 days, with full control over airflow and humidity. After the initial drying, the coffee matures, undergoes final drying at low temperatures (up to 35°C), and then rests for two months before being hulled and hand-sorted.In the cup, the coffee is light, juicy, and incredibly clean for a natural – with dominant notes of raspberry and ripe melon, complemented by a delicate, tea-like tannin of black tea. The finish is long, elegant, and sweet, with no heaviness or excessive fermentation. This is a natural in the Hacienda Sonora style: precise, harmonious, and incredibly drinkable.We always roast the coffee fresh, so when it arrives to you, it’s just a few days old. Several years ago, these producers were dislocated from their homes and land because of a natural disaster, and they have rebuilt their lives and farms with a new focus on coffee. Unlike the vast majority of other Sumatran coffee receiving and processing centers, this mill is producing Washed coffees, as well as Naturals. The most common varieties grown in Sumatra, which are Ateng, Bor Bor, Catimor, and Timor hybrids. Aceh, in northern Sumatra, is an incredible region for coffee production. The average farm is one hectare, 80% of producers within northern Sumatra are women, and 95% of producers are smallholders. The region is diverse, geographically speaking. It is surrounded by beaches with a swampy inland, and the Barisan Mountains make up the inner two-thirds of the area. Coffee is grown on this volcanic mountain amongst the rainforest. One of the notable features of this area is Lake Taboa, the largest volcanic lake in the world.THE PROCESSHistorically, Indonesian coffee producers have implemented the wet hull method but recent years we have witnessed a shift towards modern specialty techniques which deliver exciting new profiles. This lot was naturally processed, with whole cherries placed on covered beds in greenhouses.ROASTER'S OPINIONThe Asman Gayo Mill works with smallholders in the Sumatran region of Aceh. Our visit to his place was entirely spontaneous.In January 2025, while traveling through Guji, our local partner Gemechu mentioned that he wanted to show us a small coffee drying plot behind the house of one of the nearby smallholders. It was our last day in this part of Ethiopia, so we were happy to stop by Gelo’s farm. Freshly harvested coffee, only a few days old, was covered with a tarpaulin to protect the cherries from the intense sun. This is a very good practice, although a distinct, intense fermentation aroma was clearly noticeable beneath the cover. Curious about the outcome, we took a sample of coffee that had previously been dried in the same way. Two days later, at the cupping table, we tasted a juicy, fruity, and very clean coffee, without any “wild” notes that can sometimes appear as a result of extended processing.Mr. Gelo owns just 5 hectares of coffee fields, and his annual production amounts to only… about 20 bags of export-ready coffee.A true gem from deep within Guji.ABOUT COFFEE PROCESSING ON THE FARMA single, regionally traditional Wolega variety, hand-picked and delivered to a small drying area with raised beds. Dried as a natural, in whole cherry, covered daily with a tarpaulin during periods of the most intense sunlight. After approximately 30 days, the coffee is removed from the beds and homogenized in bags in a shaded storage area.ROASTER’S NOTEAn excellent representation of Guji terroir from a small producer exporting only 20 bags per year. Everything you would expect from a high-quality natural from this region: stone fruit, florals, sweet citrus, and elegant complexity.
