Samurai Shoelace is a unique coffee brand that has left whole beans behind to focus exclusively on roasting coffee for capsules. Founded by two former specialty café owners, the brand is dedicated to sourcing the finest green beans from around the world to make exceptional coffee accessible to everyone.
Samurai Shoelace uses only 100% recyclable aluminum capsules, which help preserve the freshness of the coffee for a longer time. Each capsule is filled in the brand’s own small factory, using in-house machinery operated directly by its founders. Quality control is treated with the same importance as the coffee itself.

After harvesting, the coffee cherry is a fruit that looks like a cross between a hibiscus fruit and a cherry. The flesh of the fruit has to be removed, then the seeds are dried (the seeds are the green coffee, i.e. we actually make our favorite morning drink from the seeds of the coffee cherry), and these seeds (the green coffee beans) reach us.When tasted side by side, the difference between the two coffees is perfectly felt: an experience that is rarely experienced so clearly.Of course, both coffees are light roasted Ethiopian, with the typical taste and aroma of such coffees. The Story from the roasteryPerhaps ten years ago, we were sitting in a bar in a dusty little Mexican town, somewhere halfway between Saltillo and Torreón. After the fourth tequila, even the peeling plaster on the wall seemed friendly, and we lazily stared into the bottoms of our glasses. Then, out of nowhere, a husky voice spoke:For a moment, we didn't know whether to hide or run. Slowly, we dared to turn around.-¿Le interesa el café mexicano?- he asked with complete seriousness.- Sí…- we answered decisively, because one does not argue with a mariachi in a pink dress.At that moment, a huge fiesta broke out in the bar. Suddenly we felt as if we were in the middle of one of the most extraordinary experiences of our lives - or a very strange dream.Exactly the same surprise awaited us when we first tasted this fantastic Mexican coffee (which was the first Mexican coffee in our story). The carbonic maceration process boosts the fruitiness of this incredible coffee.Did you know that Ethiopia is the birthplace of coffee? That is precisely why we love Ethiopian coffees – they possess a very distinct character, and beans from this region are famous for their floral-fruity, refreshing aroma. Beloya, coming from Yirgacheffe, one of Ethiopia's most renowned coffee-growing regions, is exactly like that: cultivated among high mountains, bursting with fresh, fruity flavors and floral aromas. It is a bit more unique, a bit wilder than coffee in general, but that is what makes it so exciting. Coffee produced this way is gathered at washing stations, where it is processed, graded, and sold, with farmers living in the vicinity bringing their harvests there. The washing station uses water from local rivers to process the coffee cherries (hence the name, as the washing process is common here).The Beloya washing station is located north of Chelelektu in the Kochere district, 45 km from the regional capital, Dilla. The facility, which has been operating for 20 years, features two processing plants and is currently being expanded and modernized.ABOUT THE PROCESSINGCarbonic Maceration (a technique also known from winemaking) is a relatively new process in the coffee world. During this process, only the highest quality cherries are placed into a sealed steel tank, and carbon dioxide (CO2) is then used to completely displace the oxygen.In this anaerobic environment, an intracellular fermentation process begins. Instead of external microorganisms and yeast initiating the breakdown, it is an enzymatic transformation of sugar within the fruit itself. As the cells begin to break down sugar in the absence of oxygen, various types of aromas and esters—and sometimes alcohols—are produced. This gives carbonic macerated coffees a very distinctive, almost fruit-candy-like flavor, while simultaneously preserving the classic aromatic characteristics of Ethiopian coffee.Store in a cold and dry space.
