Familia Romero is a 100% single-variety coffee — Java — processed using the honey method. The Java coffee trees grow at Finca Romero at an altitude of approximately 1,550 m a.s.l., where they mature more slowly, giving the fruit more time to develop a complex and multidimensional sensory profile.Already in the aroma, the coffee stands out with its unusual character — associations with roasted sencha appear, accompanied by a delicate note of strawberries. On the palate, we find almonds, dried apple, and characteristic sencha accents, broken up by a distinct strawberry sweetness. This combination creates a very interesting contrast between a tea-like character, notes of dried fruit, and a sweet, fruity finish.The whole is harmonious and well-balanced, yet at the same time definitely intriguing. It is a coffee with a complex profile in which subsequent notes emerge gradually, making it very fascinating and revealing in the cup.

Initially, it resembles roasted sencha and strawberries, and as it cools down, more pronounced associations with matcha emerge.The taste is dominated by high sweetness reminiscent of dried apple and almonds, complemented by a tea-like body and clear notes of sencha. The coffee lingers on the tongue, leaving a sweet, tea-like aftertaste.The overall profile is characterized by very high sweetness, low and exceptionally smooth acidity, a medium body, and very high balance.
