Everything around is buzzing with colors and scents; you don't have to shout anymore, you can just calmly ride this wave.ABOUT THE COFFEEWe’ve created an easy-to-use, low-caffeine blend that you can sip from sunrise to sunset. The Colombia component is the dark horse of the HAYB coffee warehouse – citrus refreshment with a solid, sweet base. The decaf flank consists of beans from the Popayan region in Colombia. On one hand, this mix allows us to enjoy coffee without the heart palpitations, thanks to the (naturally!) reduced caffeine content; on the other, it stimulates the imagination – bringing juicy flavors of tropical fruits and citrus, especially when served cold. It smells like nostalgia and tastes like summer, just like the biggest chillwave hits.Store in a cold and dry space.

COFFEE OF THE MONTH
FILTER OF THE MONTH: Good Coffee - Sumatra Aceh Natural Carbonic Maceration Filter 250 g

Manufacturer: GOOD COFFEE

Roasting date: 11.07.2026

Whole-bean specialty coffee from Indonesia, roasted by Good Coffee roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of guava, watermelon and raspberry.Country: Indonesia (Sumatra)Region: Pantan Musara, AcehProducer: Hendra Maulizar, Asman AriantoFarm: Hendra Maulizar/Ribang GayoProcessing: Natural Carbonic MacerationAltitude: 1600 m a.s.l.Variety: P88, Ateng, Abbyssinia, Catimor, TypicaABOUT THE PRODUCERS AND THE FARMIt is hard to find coffee from more renowned producers in Indonesian Sumatra. A blend of beans from Hendra Maulizar and Asman Arianto, who started the specialty revolution on the island. Both started with small fields and selling fruit to the mass market. In the early 2000s, both decided to switch to producing high-quality coffee and processing fruit from surrounding farmers. And both live in the same village of Pantan Musara near Lake Takengon. The revolution they started consisted of being the first to depart from the traditional Sumatran processing method, gilling basah, which minimized the fruit drying time due to the humid local climate and unfortunately resulted in a coffee flavor that was not good. Asman and Hendra tried natural processing (whole fruits are dried for a long time, and finally, the dry pulp and skin are removed) and washed processing (skin and pulp are removed from the fruits immediately, and the prepared beans are dried this way), and they began experimenting with fermentations. The result turned out to be excellent. Today, they work with trusted farmers who cultivate and harvest with proper care. You should know that Hendra and Asman are very demanding - of themselves and others. Hendra personally supervises his workers almost every day during the harvest season; he is a perfectionist. Asman is a Cup of Excellence winner. It is also worth mentioning that their path to where they are now was not easy. Asman came to Aceh from around Berastagi after a local volcano awakened and many people were displaced. Hendra arrived in Aceh with his father, who moved here to grow coffee - initially, they had only 1 hectare of land and struggled with many difficulties. It is also worth emphasizing that both support the farmers they work with, share knowledge and access to exporters, and are known for their high work ethic. What does this mean? For instance, they pay farmers immediately for delivered fruit, which is unfortunately not so obvious in the coffee world.  ROASTER'S OPINIONOur blend consists of a full spectrum of varieties characteristic of Aceh, including some you won't find outside of Indonesia. Each of them influences the final profile of the coffee, but roasting them together presents a significant challenge. The coffee composition includes: P88, Ateng, Abyssinia, Catimor, and Typica. Farmers grow them not only for their flavor qualities, but high yields and resistance to diseases or pests also matter.P88 comes from Colombia, from where it was brought to Sumatra; it can also be found on the island of Java. Catimor and the related Ateng are varieties known for their resistance to fruit disease; Ateng is a typical Indonesian hybrid. Abyssinia - almost unseen outside of blends - is a variety brought to Indonesia from Ethiopia in the early 20th century. Indonesian Typica arrived in Indonesia from Yemen - likely back in the 17th century. It is a very old variant of this variety, almost unseen in Indonesia outside of Sumatra. Probably each of these varieties separately would not yield such a good effect as they create in a blend, offering flavor intensity, sweetness, body, acidity, and earthy notes characteristic of Sumatra. When it comes to roasting beans from Sumatra, it is always a great pleasure for us, because for many years we have had an undisguised weakness for coffees from that region of the world and we love drinking them. But at the same time, it is a big challenge, because it means roasting several varieties in one drum, each behaving differently during the roasting process (which is why you will find beans of various shapes and shades of brown in the bag). The second difficulty lies in the fact that the beans from there are internally not very dense, and consequently very delicate and easy to "over-roast." When roasting coffee, we always strive to make its taste as balanced as possible. The roast cannot be too light, because then the coffee lacks sweetness. Nor can it be too dark, so that the brew has appropriately high acidity and well-emphasized fruity notes. In the case of coffees from Sumatra, as well as our coffee of the month, this window is exceptionally narrow. We hope we managed to hit it.  COFFEE OF THE MONTHEvery month we pick two coffee specials – one for the espresso lovers, and the other for the pour-over sippers. You can expect hints of papaya, passionfruit, blackberry and maple sirup.Origin: ColombiaRegion: TolimaProcessing: NaturalVariety: Colombia, Castillo, CaturraAltitude: 1700-2000 m a.s.l.ABOUT THE COFFEEGaitania is an exceptional lot created by smallholder producers from the vicinity of the town of Gaitania, located in the municipality of Planadas in the south of the Tolima region. The coffees come from plantations situated at an altitude of 1,700–2,000 m above sea level, where the Castillo, Caturra, and Colombia varieties are cultivated. Combining beans from several farmers made it possible to create a coffee with a distinct, juicy character that perfectly reflects the potential of this region.ABOUT THE PROCESSINGAfter harvesting, the ripe cherries fermented for 38 hours and then dried for eight days on raised, covered African beds. The slow and controlled drying highlighted the natural sweetness and complexity of flavor. It is a natural full of energy, distinct sweetness, and aromas that linger in the memory for a long time.Exotic notes of ripe papaya and juicy passion fruit dominate the cup, offset by a clear accent of wild berries. Everything is tied together by the velvety sweetness of maple syrup, which gives the coffee depth and pleasantly coats the palate. It is a rich, multidimensional, and remarkably satisfying profile. It is precisely the combination of exotic fruits, intense sweetness, and syrupy smoothness that gives this coffee its characteristic, funky style. It is bold, full-bodied, and distinct, with every subsequent sip revealing new nuances of flavor. This is a choice for those seeking coffees with character who are not afraid of intense, fruity taste experiences.Store in a dry and cool place.

HAYB - Birthday Coffee Colombia Los Nogales Chocoberry Natural Filter 200 g

Manufacturer: HAYB

Roasting date: 25.06.2026

Specialty-grade whole bean coffee from Colombia, roasted by the Warsaw-based roastery HAYB. Light roast, ideal for filter coffee makers, drippers, Chemex, AeroPress, French Press, and other alternative brewing methods. The flavor profile features notes of strawberry, raspberry and milk chocolate.Country of origin: ColombiaRegion: Bruselas, HuilaVariety: Pink BourbonProcessing method: Chocoberry NaturalCupping score: 88 / 100Altitude: 1600 -2000 m a.s.l.ABOUT THE PROCESSThe farmer himself, Oscar Hernandez, named this processing method this way because the final taste of the brewed coffee reminded him of something right on the borderline between chocolate and currants. How did it happen? Hand-picked cherries – nothing unusual. But then – SHOCK. Thermal! The cherries were submerged in water at a temperature of 180°F (80°C) for 30 to 60 seconds. Next, the fruits were washed and underwent ozonation. The seeds were extracted, and the juicy experimenting began. Juice was squeezed from the skins of still-fresh cascara. The juice was mixed with the beans in fermentation barrels. With the help of the necessary microorganisms, the beans underwent lactic fermentation for 220 hours. After that, just 20 days of drying, and there you have it.Reading this description, you might think it would turn into pickled cucumbers, or at least kombucha. Nothing of the sort. It is sweet, juicy, and crisp. Yum.Store in a cold and dry space.

Thanks to this approach, a “regional blend” is not random mixing, but coffee unified under one processing protocol, in one place and under one supervision.Forest Coffee develops this project under the “Innovation” concept and openly communicates its goal: consistency, transparency, and real added value for producers.ABOUT THE COFFEECastillo, Caturra, Colombia. In practice: a solid foundation that carries sweetness and allows vanilla to shine without the flavor losing balance. This combination of varieties maintains structure in the cup — which means the processing can be intensive while the coffee still tastes like coffee, not perfume.First comes a 24-hour pre-fermentation of whole cherries. Then depulping and washing. Next, 96 hours of anaerobic fermentation in sealed tanks with the addition of natural vanilla aroma. Finally, mechanical drying (3–4 days) and 30 days of stabilization in GrainPro to allow the flavor to settle and remain consistent across future batches.RECIPERatio: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind size: medium-coarseMethod:Pour the water in five equal stages (e.g., 5 × 60 g), every 30 seconds.Allow the water to fully drain through the coffee between pours. If the flow is too slow or too fast, adjust the grind size accordingly.Use soft, filtered water.Store in a cold and dry space.

Whole-bean specialty coffee from Kenya. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of black currants, grapefruit, red currant, tea and brown sugar.Origin: KenyaRegion: KirinyagaFarm: Kiamutuira Washing Station / Mutira Cooperative SocietyVariety: SL28, SL34, BatianProcessing: WashedAltitude: 1650–1700 m a.s.l.ABOUT THE FARMKiamutuira is a factory (washing station) in the Kirinyaga region, belonging to the Mutira Cooperative Society. The factory itself has been operating since 1996, and the cooperative has been a part of Kenyan coffee history since 1951. The coffee comes from approximately 600 smallholders, with the average farm measuring just 0.1 ha. Small scale. Great precision. The crops are situated at an altitude of 1,650–1,700 meters above sea level, near the forest boundary of Mount Kenya. The soils are volcanic, and macadamia trees appear among the shade trees. Tea is also grown in the region, which reflects the climate of the area well: high, green, humid, with excellent conditions for the slow ripening of cherries. The coffee is processed using the washed method, so we expect cleanliness, high acidity, and classic Kenyan juiciness.ROASTER'S OPINIONThis is Kenya in a good, precise style. High acidity, plenty of juiciness, a clean profile, and that exact character you look for in Kirinyaga. Blackcurrant, citrus, tea. Zero randomness. A coffee like this does not need stories about magic. It needs a good recipe.Store in a dry and cool place.

specialty coffee from. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of almond, caramel and red apple.Origin: ColombiaRegion: Palestina, Huila Farm: CADEFIHUILAVariety: Caturra, TabiProcessing: WashedAltitude: 1700 m a.s.l.ABOUT THE REGION AND THE FARMThe municipality of Palestina is a unique place: it is called the "water and forest factory" of the Huila region. It is characterized by two types of climate: cold and temperate, and coffees from this area differ from the rest of Huila – they are more acidic and delicate, with distinct fruity notes. Our coffee comes from a selected group of producers from the upper part of the municipality of Palestina, located at an altitude of approximately 1700 meters above sea level. This group of farmers has specialized in cultivating varieties such as Tabi and Caturra. Cooperativa Departamental de Caficultores del Huila Ltda. CADEFIHUILA is a non-profit organization and one of the most important coffee cooperatives in Colombia. Its reach covers 27 municipalities, where a support network operates consisting of 45 coffee purchase points, 46 fertilizer stores, 36 agricultural supply stores, 16 permanent cupping laboratories, one mobile laboratory, and 7 points offering drying services. CADEFIHUILA implements programs aimed at achieving high production standards on farms. These standards are based on codes of conduct such as Fairtrade, Rainforest, 4C, and C.A.F.E. Practices. The development of certification processes for these specialized coffees allows the cooperative to meet market demand for coffee purchased under specific conditions.ABOUT THE VARIETYCaturra is a coffee variety that originated as a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais in Brazil between 1915 and 1918. The name "Caturra" comes from the word "Guarani", which means "small". This variety is characterized by the short stature of the plant. Due to its small size and closely spaced branches, it can be planted close together, which increases the yield per given area. Caturra contributed to the intensification of coffee cultivation, especially in Central America, where it was introduced into cultivation in the 1940s. This variety also played a significant role in breeding coffee plants resistant to coffee leaf rust, contributing to the creation of the "Catimor" family of varieties. Tabi is a relatively young variety, created in Colombia as a cross between Bourbon, Typica, and the disease-resistant Timor Hybrid variety. The word "Tabi" comes from the language of the indigenous people of Colombia and means "peace" or "life".ABOUT THE PROCESSINGThe coffee undergoes a traditional washing process, which begins with harvesting ripe cherries, weighing them, and leaving them for 24 hours in a processing tank. Next, the beans are depulped and placed in a water tank, where they are rinsed twice after about 12 hours. Finally, the coffee is dried in the sun or mechanically, depending on the producer's capabilities.Store in a dry and cool place.

Whole-bean specialty coffee from. Marysabel and her husband Moises have been running the farm for a quarter of a century. Roasteries all over the world buy coffee from them. We had the chance to talk several times during World of Coffee and a few times on calls – you don't meet such warm and wise people every day. This is one of those coffees that, beyond its taste and quality, stands out because of the story behind the farm. If I could, I would choose only coffees for our portfolio where a good, sweet, clean taste goes hand in hand with a spark of passion and wisdom in the eyes of the people running the farm. I wish you that this natural from the La Paz region is sweet for you and helps you get off to a good start to the day. Take care!Store in a cool and dry place.

Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of dried apricot, muscovado and rice tea.Origin: BrazilRegion: Cerrado MineiroFarm: Fazenda Vivir CaféVariety: Red CatuaíProcessing: Induced FermentationAltitude: 1100 m a.s.l.Brazil from the Veloso sisters is a proper sweet one for filter: sticky and dessert-like. Just right over a few ice cubes when you feel like a cold coffee that leans more sweet than fruity and juicy. You won’t find high acidity or a citrusy kick here. Instead, there are notes of dried fruit, like sweet apricot, alongside the darker, deeper sweetness of muscovado sugar. The finish reminds us of rice tea: gently toasted, smooth, with a pleasantly sticky texture.ABOUT THE FARMBehind this coffee are Virgínia and Viviane Veloso, sisters and co-founders of Vivir Café. Their family has been working with coffee in Cerrado Mineiro for over 50 years, and today they produce coffee across six farms, focusing on specialty Arabica, quality and a more conscious approach to farming. This lot is Red Catuaí grown at 1100 m a.s.l., processed as a natural with 48 hours of induced fermentation.Store in a cold and dry space.
