It is characterized by two types of climate: cold and temperate, and coffees from this area differ from the rest of Huila – they are more acidic and delicate, with distinct fruity notes. Our coffee comes from a selected group of producers from the upper part of the municipality of Palestina, located at an altitude of approximately 1700 meters above sea level. This group of farmers has specialized in cultivating varieties such as Tabi and Caturra. Cooperativa Departamental de Caficultores del Huila Ltda. CADEFIHUILA is a non-profit organization and one of the most important coffee cooperatives in Colombia. Its reach covers 27 municipalities, where a support network operates consisting of 45 coffee purchase points, 46 fertilizer stores, 36 agricultural supply stores, 16 permanent cupping laboratories, one mobile laboratory, and 7 points offering drying services. CADEFIHUILA implements programs aimed at achieving high production standards on farms. These standards are based on codes of conduct such as Fairtrade, Rainforest, 4C, and C.A.F.E. Practices. The development of certification processes for these specialized coffees allows the cooperative to meet market demand for coffee purchased under specific conditions.ABOUT THE VARIETYCaturra is a coffee variety that originated as a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais in Brazil between 1915 and 1918. The name "Caturra" comes from the word "Guarani", which means "small". This variety is characterized by the short stature of the plant. Due to its small size and closely spaced branches, it can be planted close together, which increases the yield per given area. Caturra contributed to the intensification of coffee cultivation, especially in Central America, where it was introduced into cultivation in the 1940s. This variety also played a significant role in breeding coffee plants resistant to coffee leaf rust, contributing to the creation of the "Catimor" family of varieties. Tabi is a relatively young variety, created in Colombia as a cross between Bourbon, Typica, and the disease-resistant Timor Hybrid variety. The word "Tabi" comes from the language of the indigenous people of Colombia and means "peace" or "life".ABOUT THE PROCESSINGThe coffee undergoes a traditional washing process, which begins with harvesting ripe cherries, weighing them, and leaving them for 24 hours in a processing tank. Next, the beans are depulped and placed in a water tank, where they are rinsed twice after about 12 hours. Great precision.The crops are situated at an altitude of 1,650–1,700 meters above sea level, near the forest boundary of Mount Kenya. The soils are volcanic, and macadamia trees appear among the shade trees. Tea is also grown in the region, which reflects the climate of the area well: high, green, humid, with excellent conditions for the slow ripening of cherries. It is run by a married couple, Wildan Mustofa and Atieq Mustikaningtyas. It consists of six farms with a total area of 105 hectares and its own washing station with a laboratory for anaerobic processing. Since its inception, the estate has focused on quality coffees. Initially, this was primarily related to producing coffees using the washed process, which is rare in Indonesia. Later, experimental processes were added to the mix. Thanks to the experience of the Mustofa and Mustikaningtyas couple and continuous investment in infrastructure, these coffees are always of the highest standard.ROASTER'S OPINIONThis is our first washed bean from Indonesia. The acidity is distinct and pleasantly juicy. In mouthfeel, the coffee is light, tea-like, and clean, with a crisp finish that practically begs to be brewed over ice.The enigmatic PB stands for peaberry. It refers to a natural anomaly where, instead of two flat beans, a single, smaller, and rounder bean develops inside the coffee cherry. Sometimes overlooked, though completely unfairly, because it can yield a very intense, concentrated flavor. It was this intensity that stole our taste buds from among the other grades.The raw material comes from the Itumpi cooperative in the Mbozi district, Songwe region. About 160 local producers operate here, cultivating coffee at an altitude of 1500–1700 meters above sea level. CO₂ acts as a selective solvent, binding caffeine molecules without affecting the compounds responsible for the coffee’s flavour and aroma. After the process is complete, the CO₂ is released and the caffeine separated, making this method completely safe, clean, and environmentally friendly.The Mountain Water Washed method, on the other hand, uses pure water from mountain sources. The beans are soaked under controlled conditions, which opens their structure. The water is then circulated repeatedly, washing out the caffeine through a natural difference in concentration. After the process, the beans are carefully dried to restore the proper moisture level.Both methods preserve the authentic character of the coffee, delivering a full, natural taste — without caffeine.BREWINGThe density of decaffeinated coffee differs slightly from that of caffeinated coffee. It’s worth using a little more to enhance mouthfeel. Use 18.5 g of coffee, ground at 19 clicks on a Comandante grinder. At times, we had the impression of those yoghurt-and-strawberry chocolates appearing in the flavour too. There is no doubt that a lot is going on here, and sensory boredom is not really an option. We completed the flavour profile with notes of mango and sea buckthorn to highlight the fresh, soft sweetness and intense acidity that stays with us long after the last sip. In truth, the range of associations was almost endless, so we narrowed it down to the notes that stood out the most and best captured this juicy, ripe fruitiness.ABOUT THE VARIETYWe write the variety simply as Aji, though its fuller name is Bourbon Aji. The name comes from… a pepper. Farmers in southern Huila noticed the distinctive aroma of the cherries, reminiscent of a small chilli pepper. Here comes the plot twist, though: genetic testing has shown that it is not a direct descendant of classic Bourbon, but a variety of Ethiopian origin.ABOUT THE PROCESSINGThe coffee and its processing come from Luis Marcelino of Aroma Nativo in Pitalito. The name Hydro Honey may sound fancy, but it is not just a pretty label. Behind it stands a specific, multi-stage process. Only the ripest cherries go into processing, first fermenting in a controlled anaerobic environment. The coffee is then depulped and pre-dried. Later, it returns to the tanks for a rehydration stage with selected yeasts and bacteria, before moving to raised beds, where it dries for up to 26 days. Finally, it goes through three months of stabilisation under controlled conditions. It was discovered on a plantation in the state of Minas Gerais in Brazil between 1915 and 1918. The name "Caturra" comes from the word "Guarani", which means "small". This variety is characterized by the short stature of the plant. Due to its small size and closely spaced branches, it can be planted close together, which increases the yield per given area. Caturra contributed to the intensification of coffee cultivation, particularly in Central America, where it was introduced to cultivation in the 1940s. This variety also played a significant role in breeding coffee trees resistant to coffee leaf rust, contributing to the creation of the "Catimor" family of varieties. It is also a low-yield variety, which means that even with high demand, it remains genuinely limited on the market. For years it has consistently won the most prestigious coffee competitions and achieved record-breaking results at international auctions.This lot is processed using a washed method with extended, controlled fermentation. The harvest is done manually and selectively, in cycles roughly every 20 days, using only fully ripe cherries.After harvesting, the cherries ferment in bags for about 12 hours. They are then transferred to a hopper, where the initial oxidation stage is completed. The coffee then undergoes flotation, followed by depulping and an extended fermentation of approximately 200 hours in tanks or vats.After fermentation, the coffee is washed using either a portable washing unit or an Ecomill system. The crops are situated at an altitude of 1900 to 2200 meters above sea level, and the dominant varieties are Kurume and other local varieties characteristic of this region.The name Harruu Bunnaqaa originates from the Oromo language. "Harruu" means a large shade tree, under which Oromo community meetings traditionally took place, while "Bunnaqaa" is related to sharing coffee. Harruu Bunnaqaa is also a historical site in Guji, where local Oromo leaders would meet to jointly celebrate peace, blessings, and coffee.Coffees from this area stand out for their exceptional complexity and aromatic intensity, resulting primarily from the high altitude of the crops and very fertile soils. Willian Hoyos, Julián Sandoval, Rubén Castillo, and Yovany Muñoz grow coffee on several-hectare farms in the El Tambo micro-region, located west of the capital of the Cauca department, Popayán.The phenomenal quality of their coffee is driven by the following synergy of factors:the microclimate of El Tambo and cultivation at elevations exceeding 2,000 meters above sea level result in slower cherry maturation, while lower humidity facilitates the drying process: processed coffee loses moisture in a predictable and controlled manner,a well-thought-out and precisely planned system of pruning and thinning older, less productive parts of the coffee trees to ensure optimal airflow and sunlight penetration,the producers’ modern knowledge of fertilization combined with a traditional practice locally known as “re-re,” which involves selectively harvesting overripe, underripe, or dried cherries and leaving them on the ground near the coffee trees. As a result, more pests feed on this “waste” instead of attacking healthy plants,and, of course, a conscious and strict selection of cherries harvested at optimal ripeness, supported by years of experience in fermentation and drying processes.Harvesting is carried out exclusively by local residents, who form the core of the community of several small villages in El Tambo. This community has naturally developed over generations around the continuous, seasonal cycle of coffee cultivation.ABOUT COFFEE PROCESSING ON THE FARMCastillo variety, hand-picked, with the beans separated from the fruit immediately after harvest. Fermented in tanks for approximately 36 hours, then washed up to three times to completely remove any remaining mucilage from the parchment. Slowly dried for about 15 days on raised beds. The pulping machine is only started once a large enough batch has been collected to allow for at least 2 hours of continuous operation. In the meantime, further deliveries arrive to maintain the workflow until approximately 19:00. After the pulp is removed, the beans are sorted by density in water channels into different grades: P1, P2, P3, lighter fractions, and so-called "pods" (the lowest grade).The coffee then ferments for 12–24 hours, after which it is thoroughly washed and soaked for another 8–12 hours. Finally, it is moved to drying tables, where it rests for 7 to 14 days until it reaches the appropriate moisture level.Store in a cold and dry space.
