We’ve been working with Hellen for three years now, thanks to Nicolas, who exports coffees from Costa Rica. Last year I had the pleasure of driving up the most winding and bumpy road to the top of a mountain where Hellen’s house and farm are located. We got there in a car Nico had borrowed from his mom, because his had broken down the day before. At some point his mom’s little SUV simply couldn’t make it any further, so Hellen drove down in her big pickup truck and towed us the rest of the way up.First she fed us, then she showed us the farm and told us its story. After the walk she prepared a cupping where she presented eight of her coffees. A cupping in the kitchen while rice and beans are cooking right next to you? Why not.The coffees were phenomenal. And that Geisha? That’s the coffee that’s been appearing in my dreams ever since I came back from Costa Rica. Lots of tropical fruit, but without the kind of fermentation often associated with coffees from this country. Notes of banana and pineapple, plenty of red, sweet wine, currants, and everything beautifully structured and right where it should be.I’m very happy that we’re also presenting such an exceptional coffee as an espresso. It’s the essence of that trip in a cup: sweetness, tropical fruit, bright acidity supported by deep sweetness. The high altitude of the farms, the cool climate, and the long ripening period of the cherries translate into coffees with high sweetness, a clean profile, and great elegance in the cup.The coffees included in this lot come from the El Naranjal, Las Naranjas, and Los Angeles farms. The farmers manage their land under the shade of forest and fruit trees, taking care of biodiversity and soil fertility. Ripe cherries are hand-picked and then subjected to classic washed processing. After fermentation and washing, the coffee is dried for about twelve days under carefully controlled humidity and sun exposure.Behind the project is Cafetos de Segovia, an organization that has for years been helping local producers reach the specialty market directly. It places great emphasis on supply chain transparency, long-term cooperation with farmers, and fair compensation for high quality. Located at an altitude of over 1500 m a.s.l. on fertile, volcanic soils, it is a rare example of a full-scale plantation in a country dominated by small, backyard crops.The site employs chemical-free practices with an emphasis on a sustainable approach and natural shading, which supports even ripening of the fruit. Harvesting is done by hand, selecting only fully ripe cherries, which allows the proper balance of sugars and acidity to be maintained at the raw material stage. The processing is a classic washed method with extended fermentation. The beans ferment for three days, during which they are rinsed daily, followed by an additional day of fermentation. After this stage, the coffee is sun-dried for a minimum of 21 days and undergoes multi-stage sorting, which translates into the clarity and repeatability of the profile.ROASTER'S OPINIONThe opinion of Filip Ślęczek – our head roaster: Papua New Guinea – we haven't had coffee from this region for several years. Matsitsi himself is an experienced coffee producer, owning over 7,000 coffee trees. The producers here grow coffee at elevations all the way up to 2,200 meters above sea level, and the washing station is located at 1,850 meters above sea level. Coffees are brought to the Cyato washing station from the surrounding areas of Kivoga, Kageyo, Rusumo, Gatare, and Nsinduka. The washing station was established in 2017.One interesting facet to coffee here is that the native honeybees that live in and around the Nyungwe forest where the coffee is grown are said to be responsible in part to the "unique profile" this coffee has. The bee-assisted pollination, fertile ground (black humus and sandy soil), and cool lake-affected climate thanks to the area's proximity to Lake Kivu contribute to the flavors found in the cup. The farmers use no synthetic inputs, either as fertilizers or as pest control.ABOUT THE PROCESSING Honey-processed coffees go through steps similar to washed, with one notable difference - the amount of mucilage left on the seed before drying. After the cherries are collected and sorted, the coffee is typically depulped and fermented. During fermentation, washed coffees will have all the mucilage broken down and removed from the seeds. In honey-processed coffees, the fermentation is cut short, leaving some mucilage still intact on the seeds. The coffee will then dry with this mucilage intact, often contributing a denser texture, more sugar browning, and fruit notes to the final cup. It is important to note this coffee was intentionally processed utilizing anaerobic fermentation. In general, placing freshly-harvested cherries inside a sealed container or bag of some sort for a period of time will create a flavor impact. We find those anaerobically-fermented coffees often exhibit an increase in the intensity of fruit and acidity and a slight increase in the body. Nonetheless, the anaerobic fermentation process has a distinct impact on the outcome of the flavor profile.ROASTER'S OPINIONFirst time in our offer: Anaerobic Honey processed coffee, and from Rwanda too! A very complex fruit-and-floral profile with a super silky body.RECIPE V6016g of coffee250g of water 96°CMedium Grind Size 1. Put a paper filter in your V60 and rinse it with hot water ( 96C ). It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that  98,5 % of your brewed coffee is water)2. Remove the rinsing water from the server.3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. These extreme conditions favor slow fruit maturation and the building of a complex flavor profile.The Caturra variety is also not among the most common there — it accounts for about 20% of total coffee production in Peru, which makes lots of this type even more interesting and unique. Peru as an origin is often underestimated and overlooked by consumers, which is why we regularly try to include at least one coffee from this country in our offer. This time, it is the beans from Ismeria Leon.In the aroma, the coffee is fresh and fruity — green apple clearly dominates, complemented by delicate cranberry and caramel sweetness. On the palate, the profile remains very consistent: juicy apple appears in the foreground, enveloped in caramel, with hints of cranberry and grape.The whole has a medium, round body and low, smooth acidity reminiscent of an unripe apple. The sweetness is high and caramelly, and the aftertaste is medium-long, pleasantly sweet, and balanced. Years of collecting data, testing temperatures, fermentation times, and slow drying techniques have given Bridazul a far wider range of processing methods than most standard mills in the region. Processes here are designed with a specific flavor profile in mind rather than maximum efficiency.Little Red Riding Hood is an example of this approach. In 2020, Tim Willems from Bridazul noticed that several experimental batches were too small to export individually. Instead of discarding them, they were combined into a cohesive whole.
