It is one of the most consistently developed coffee projects in the region — the family micromill Café Rivense, founded in 2005 by Régulo Ureña and Isabel Rojas, and now operated together with their sons: Ricardo, Mario, Esteban, and Luis.The Vista al Chirripó farm sits at elevations reaching up to around 2000 meters above sea level, overlooking Costa Rica’s highest peak, Cerro Chirripó. Lots from this very farm placed 5th in the Cup of Excellence 2019, confirming it as one of the most respected terroirs in the country.The family prioritizes biodiversity, full self-sufficiency, and minimal water usage. The entire production chain — from harvesting and processing to export — is managed by the family themselves, without intermediaries.ABOUT THE COFFEEThis is an exceptional lot of Caturra, processed through anaerobic fermentation and dried in the fruit. The method enhances juicy fruit character and deep sweetness, resulting in a profile full of cherry, dried plum, and praline-like creaminess.The cup is smooth and elegant, with a long, sweet finish — ideal for filter brewing.Cherries are selectively handpicked and then placed in sealed tanks for anaerobic fermentation, where they remain in controlled, oxygen-free conditions. This process gives the coffee deeper color, intensity, and a dessert-like character. The fruit is then naturally dried to concentrate sweetness and aromatics.The result? An intense, juicy, velvety coffee with beautifully developed stone fruit acidity.Our rice paper packaging reflects the Kaizen philosophy of continuous improvement in harmony with nature. Technically fine… but why limit yourself?This Ethiopia is different from the one in our regular offering because there’s simply more of everything. The acidity might be higher, but the finish is longer and more complex. The farm operates on 100% renewable energy generated by a hydroelectric generator that transform rushing rivers into energy. The energy fuels the wet and dry mills and provides free electricity for everyone living and working on the farm. On the whole, Hacienda Sonora has shared their success generously, paying fair wages to all workers and bolstering the local community economy.The farm and its mill cover approximately 100 hectares. Of those, 45 hectares are devote to shaded coffee lands. Coffee plants are surrounded by exotic trees and other native vegetation. This biodiversity promote soil health and maintains the nutrient-rich soil that helps grow dense, delicious cherry. The remaining land has wild forest reserve growing on 35 hectares and 20 hectares for sugarcane, which has been grown on Hacienda Sonora’s land for over 150 years.Hacienda Sonora has its own micromill, which enables the farm to keep lots separated by variety and create unique microlots. The mill is centrally located, right next to a traditional sugarcane mill that’s been preserved intact for over 150 years. This lot is naturally processed. In fact, all coffees at Hacienda Sonora are either honey or natural processed to reduce wastewater and further protect the environment. After selective handpicking, ripe cherry is laid to dry on either the farm’s raised beds or its patio where it is turned frequently to promote even drying.Hacienda Sonora is a part of the NAMA Café de Costa Rica project, the first of the Costa Rican government’s Nationally Appropriate Mitigation Actions (NAMAs). They’re actively working towards lower carbon emissions through investments in key technologies and methods. NAMA Café de Costa Rica is the first of its kind to support coffee farmers as they make changes to their coffee production to reduce overall emissions and resource use. Hacienda Sonora has contributed carbon emissions data to NAMA Café de Costa Rica and will receive 10% back on carbon reduction investments.

In 2019, our export partners Forest Coffee - founded by the Bayter family from El Vergel - and local coffee grower Emmanuel joined forces to establish the Black Condor Project, providing support to farmers in Gaitania affected by guerrilla warfare. The projects conducts regular workshops with producers to emphasise quality and cover processes such as fermentation, drying, and cupping of their own coffees. Their coffee is processed at a mill in Gaitania, which now serves over 15 villages across Gaitania.THE PROCESSThe process begins with embracing mucilage for 24 hours. The beans then rest on a drying patio, fostering a harmonious profile. After a 15 to 25-day drying period, they undergo a stabilisation process before proceeding to the milling process, which results in a consistent profile.ROASTERS OPINIONIn 2019, the Black Condor Project was established to support farmers affected by the violence that had swept Colombia. Across 15 villages, assistance with growing, processing, and quality control has helped lift coffee quality. This washed lot shows everything they have achieved.
