When my season for drinking coffees processed other than washed comes around, it is the Chacon family that shows how to do it best. We have had coffees from them in Alma Negra, Perla Negra, and Yellow Diamond processes – these are different "variations" of theirs on honey and natural processing – and all of them are invariably super clean in flavor. This time is no different, absolutely flawless.ABOUT THE PROCESSPerla Negra is a processing method that goes as follows: after harvesting, the cherries are transferred to the mill for grading, where only the ripest ones are selected. Then, they are moved to the greenhouse patio for drying. During the first week, the cherries are piled on top of each other in a thick layer for aerobic fermentation. After this first week, the coffee is spread across the patio, forming a thin layer until the drying process is complete. Delicious!Store in a cool, dry place.

The farm provides housing, medical care, and education for workers and their families, while focusing on responsible and environmentally friendly farming methods.The name "Mondul" comes from natural springs that have nourished the crops and local communities for generations. Water from these springs is also used for wet processing – after harvesting, ripe cherries are washed and fermented, then dried on raised African beds for about 7 days. This process preserves the clarity of the profile and brings out a delicate floral note, citrus, and tea-like qualities, without unnecessary heaviness or fermented character.ROASTER'S OPINIONIt is rare to come across coffee from a farm that has been operating continuously since 1899. Mondul is precisely such a case – one of the oldest and most recognizable farms in Tanzania, now belonging to Burka Estate at the foot of Mount Meru. The washed process emphasizes the clarity of the profile, allowing delicate florals, citrus, and a tea-like note to shine through.In the aroma, delicate flowers and fresh lemon come to the fore, with a light, tea-like note appearing in the background. He works full time in his farm assisted by his able children who completed their primary education but couldn’t find another job in towns. Mr Bekele, who is the father of 11 children, fully relied on the income he generated from his coffee farm. The coffee farm business also supports his two elder married sons who also work together with him.Mr Bekele Gemeda was incredibly grateful to see the care he has put into his coffee showed well enough in the cup to have his coffee kept separate, something that is rare in Ethiopia. The coffee is picked ripe and depulped the same day. There is usually a fermentation period of 8–12 hours in open-air tanks, then washed in water channels to remove the mucilage.
