This season, we have two coffees from him from two different lots of his farm: Murundo comes first, and we have Mahembe up our sleeve for you.Willy experimented here with anaerobic fermentation. What is this "anaerobic" thing anyway? In this process, coffee ferments in an oxygen-free environment – in this case, it lasted for 72 hours. Prolonged fermentation adds a lot of sweetness and a characteristic "funk" to the coffee. It's easy to overdo the latter, but Willy keeps an eye on everything, so you won't find any aggressive, lemony, or vinegary notes in the cup. This place stands out for its impressive technical infrastructure created for the precise processing of only the finest, fully ripe cherries. The station's facilities include as many as 12 fermentation tanks, 3 soaking tanks, over 300 drying beds, and 4 specialized tables for quality sorting.Harvesting in this region usually lasts from April to June, but this coffee's journey to your cup only begins then. Summer is still hanging around, but you can already feel that autumn is just around the corner. The flavour works in a similar way. This is a natural, so there is no shortage of sweetness, but instead of heading towards heavy, dark berry notes, it stays bright, light and incredibly easy to drink. We described the profile as apricot syrup, papaya and yellow plums: plenty of bright, expressive fruit!The coffee comes from around Shantawene in the Bensa district of the Sidama region. It is processed at Buncho Station, whose name simply means “coffee tree” in the Sidama language. Established in 2018, the station receives cherries from small-scale producers in nearby villages.For the natural process, ripe cherries are sorted and then dried whole on raised African beds. At Buncho, this usually takes 14 to 16 days. The result is plenty of fruity sweetness and that characteristic sticky texture, but without any heaviness.Store in a cold and dry space.

Next, the fruit was dried on shaded, raised beds, laid out in a thin layer. The flavour goes in all sorts of fruity directions. It is exactly like reaching into a bag and pulling out a handful of colourful fruit gummies. Sweet, juicy and slightly tangy, enough to get your mouth watering.This coffee feels a little like the turn of summer into autumn. Summer is still hanging around, but you can already feel that autumn is just around the corner. The flavour works in a similar way. This is a natural, so there is no shortage of sweetness, but instead of heading towards heavy, dark berry notes, it stays bright, light and incredibly easy to drink. We described the profile as apricot syrup, papaya and yellow plums: plenty of bright, expressive fruit!The coffee comes from around Shantawene in the Bensa district of the Sidama region. It is processed at Buncho Station, whose name simply means “coffee tree” in the Sidama language. Established in 2018, the station receives cherries from small-scale producers in nearby villages.For the natural process, ripe cherries are sorted and then dried whole on raised African beds. At Buncho, this usually takes 14 to 16 days. The result is plenty of fruity sweetness and that characteristic sticky texture, but without any heaviness.Store in a cold and dry space.

This process does not overpower the coffee's natural character, but instead extracts even more sweetness, depth, and aromatic complexity.We chose this lot because it is exactly what we expect from modern specialty coffees. Fermentation here is a means, not the end — it does not take center stage, but rather enhances the very best that Guji has to offer. The result is spectacular.
