Harvest: December - February 2021 Cupping score: 86.75 / 100 pts PROCESSING A top notch washed classic. Mauricio is an expert like no other. At first, he makes sure that only cherries with a deep maroon color go into the process. The beans are depulped as soon as they arrive at the washing station. Then, before washing, a 36-hours dry fermentation occurs. The coffee dries on the patio for about two weeks, depending on the weather conditions. The result? Ultra-ripe cherries gave this gem high sweetness. Clear fruitiness, on the other hand, is typical for the high-elevation san ramon from this region. And the clarity of flavor is mainly due to Mauricio's many years of experience in coffee processing. THE FARM La Maravilla means "the wonderland" in Spanish. The farm is located in the spectacular, high mountains of Huehuetenango. Despite the fact that not so long ago it could only be reached on horseback, thanks to Mauricio's hard work we’re driving a 4x4 to get there. With tinted windows, naturally. Until today you won't post anything on Instagram at La Maravilla though. What a tragedy! There's no signal on the farm. No electricity neither. But Mauricio's wife, Amavilia, makes the best tacos ever! Pure consolation. ROASTER'S COMMENT One of my favorite varieties in Guatemala. San Ramon has great quality potential, and in a good climate, at high altitudes, it performs almost perfectly. The Guatemalan Kenya, so to speak! Lots of jammy stories from the forest. Something beautiful. PACKAGING The coffee is packed in a brown jar made of PET, 100% recyclable or reusable. In case you're thinking "oh no, plastic!", bear in mind that standard coffee packaging is also made of plastic (and a few other materials, making it often harder to recycle). We also thought about glass, but it's heavier, more expensive, breakable and, wait for it, has the same or greater (sic!) environmental impact! A plastic jar turns out to be pretty eco-friendly, just remember to put it in the right container, or find a creative way to reuse it at home.
