During cultivation, all inputs with negative impact are decreased to a minimum and soil and plant health are actively restored.ABOUT THE PROCESSThis lot underwent fermentation for 40 hours: the whole cherries are sorted and cleaned, before being placed in a sealed anaerobic environment. The fermented cherries were then dried on patios with the whole outside cherry intact. The cherries come from small family farms with an area of less than 1 hectare. These farms are located in parishes—local administrative communities consisting of 7 to 12 villages, often with as few as 200 inhabitants. Farmers typically work in groups led by a designated leader.The harvest of East Ugandan coffee takes place from August to January. In lower-lying areas, the season falls between August and October, while at higher altitudes, it lasts from September to January. Farmers sell their cherries at small collection points or deliver them directly to the washing station. Fruity sweetness that really lingers on the palate.ABOUT THE FARMEl Vergel is a family operation of two brothers, Elias and Shady, and their mother Marta. Located in Fresno, Tolima, they started as an avocado farm. In 2012 both brothers saw the opportunity to utilise their land to grow specialty coffee. Situated on the slopes of the snowcapped Nevado del Ruiz volcano, the farm benefits from a unique microclimate. Starting with Caturra and Castillo, it was not long before they started expanding their collection of varietals to fully explore the amazing terroir at their disposal. Soon, they were planting Tabi, Pink Bourbon, Pacamara, and Gesha, to name a few. Through experimentation and collaboration, the Bayter family have sought to discover new expressions of Colombia flavour and are renowned for their adaptation of modern processing techniques.THE PROCESSGuava Banana coffee begins with the careful selection of ripe Red and Yellow Caturra cherries. The cherries first undergo a 48 to 60-hour anaerobic fermentation, bringing intense character to the profile. The whole cherries are then dried in the sun on covered raised beds - ""Marquesina"" - until they reach 30% moisture. Then, the cherries are moved to mechanical drying in circular dryers at temperatures below 45°C until they achieve 18%-16% moisture. After a pre-stabilisation stall to intensify flavours, the drying process is completed until optimal moisture is achieved. The beans are then stabilised for 45 days in GrainPro bags, ensuring consistency and quality.

Among them is a crown jewel from the Gasharu washing station: Women’s Crown. A lot prepared entirely by women, from the moment the cherries are harvested all the way through to the final stages of processing.The name refers to the Rwandan tradition of Urugori, a symbolic crown given to a woman after the birth of her first child as a sign of recognition for her role within the family and the community. In the case of this coffee, it also serves to highlight the role women play across the entire coffee value chain.In the cup, this year’s harvest is defined above all by sweetness. The profile is fruity, though closer to dark and dried fruits. Notes of plum appear first, followed by dried apricot and raisins. To round out this wave of sweetness, the whole profile feels as if the fruits had been drizzled with buckwheat honey. Sweet, dense and deeply satisfying.This lot was produced within a transparent pricing model, where additional value goes directly to the women involved in its production.
