Typically, the pulper is started around 2:00 PM and can run until 10:00 PM. After pulping, the parchment is sorted in washing channels into grades P1, P2, P3, P light, and pods, and then soaked in tanks for 8-10 hours. Drying the parchment in this area takes 7-10 days. The group began producing fully washed coffee in 2019.ROASTER'S OPINIONReminiscent of a sweet forest fruit brew. Very crisp and fruity.RECIPE16 g coffee250 g water 96°CMedium grind sizePlace a paper filter in the V60 and rinse it with hot water (96°C). This will heat the dripper and server and remove any paper taste from the filter. For best results, always use filtered water (remember that 98.5% of brewed coffee is water).Discard the rinse water from the server.Grind the coffee beans just before brewing and pour them into the dripper. Gently level the coffee in the center of the V60.Place the V60 on a vessel set on a scale and ensure the water temperature is 96°C.Tare the scale and start the timer.Add 50 grams of water. Your coffee will begin the bloom phase (pre-infusion).After 30 seconds, add water until you reach 100 grams. Pour the water slowly, gently, and in circular clockwise motions.At 00:50, pour up to 200g of hot water.At 01:10, pour up to 250g of hot water.Give the V60 dripper a light swirl and let the coffee draw down.The water should finish filtering through around 3:00. You may need to adjust the grind setting if the coffee brews too quickly or too slowly. However, always taste and evaluate the quality of the coffee.Store in a cool and dry place.

Just like crocuses pushing through the ground, this spring coffee comes with some lovely florals of its own.It’s a floral and properly complex cup. Fresh like pomelo, and sweet like a handful of freshly picked berries. A classic washed process, the traditional Kurume variety typical for the region, and a profile like a forest glade in bloom.Credit goes to the producer, Gemechu Shonora. This is the second harvest in a row we’ve featured on the menu, and once again it’s hard not to be impressed. Safe to say, not the last.Hand-picked cherries, flotation, depulping, then wet fermentation for 24–36 hours. After washing, the coffee moves to raised beds where it dries for around two weeks. A short rest in the warehouse follows, and only then does it head to Addis. Clean and straightforward, exactly how we like our washed Ethiopias.That’s our version of spring, sealed in a colourful bag. His father was a legend of Guji during his lifetime, building the region's first wet mill in the early 2000s, whose infrastructure began to be used by small producers of the Bule Hora community. When the Ethiopian government liberalized export regulations in 2018, which practically opened up opportunities for smallholders to sell their coffee outside the country, Tagel founded the Olkai company and, in addition to exporting, also took over the coordination of the Hambela Goro mill.The coffee comes from 460 small producers in the area, from an impressive altitude of approx. 2,300 meters above sea level. They cultivate the local 74110 variety here, and many of them own only a few hundred trees. The organization, standards, and cleanliness at Hambela Goro made a big impression on us, as did the incredibly clean and consistent lots that we had the opportunity to taste fresh while still on site.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMVariety 74110, hand-picked by 460 small producers from around Hambela Goro, depulped, and then fermented in a tank for 48 hours. Typically, the pulper is started around 2:00 PM and can run until 10:00 PM. After pulping, the parchment is sorted in washing channels into grades P1, P2, P3, P light, and pods, and then soaked in tanks for 8-10 hours. Drying the parchment in this area takes 7-10 days. It is characterized by two types of climate: cold and temperate, and coffees from this area differ from the rest of Huila – they are more acidic and delicate, with distinct fruity notes. Our coffee comes from a selected group of producers from the upper part of the municipality of Palestina, located at an altitude of approximately 1700 meters above sea level. This group of farmers has specialized in cultivating varieties such as Tabi and Caturra. Cooperativa Departamental de Caficultores del Huila Ltda. CADEFIHUILA is a non-profit organization and one of the most important coffee cooperatives in Colombia. Its reach covers 27 municipalities, where a support network operates consisting of 45 coffee purchase points, 46 fertilizer stores, 36 agricultural supply stores, 16 permanent cupping laboratories, one mobile laboratory, and 7 points offering drying services. CADEFIHUILA implements programs aimed at achieving high production standards on farms. These standards are based on codes of conduct such as Fairtrade, Rainforest, 4C, and C.A.F.E. Practices. The development of certification processes for these specialized coffees allows the cooperative to meet market demand for coffee purchased under specific conditions.ABOUT THE VARIETYCaturra is a coffee variety that originated as a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais in Brazil between 1915 and 1918. The name "Caturra" comes from the word "Guarani", which means "small". This variety is characterized by the short stature of the plant. Due to its small size and closely spaced branches, it can be planted close together, which increases the yield per given area. Caturra contributed to the intensification of coffee cultivation, especially in Central America, where it was introduced into cultivation in the 1940s. This variety also played a significant role in breeding coffee plants resistant to coffee leaf rust, contributing to the creation of the "Catimor" family of varieties. Tabi is a relatively young variety, created in Colombia as a cross between Bourbon, Typica, and the disease-resistant Timor Hybrid variety. The word "Tabi" comes from the language of the indigenous people of Colombia and means "peace" or "life".ABOUT THE PROCESSINGThe coffee undergoes a traditional washing process, which begins with harvesting ripe cherries, weighing them, and leaving them for 24 hours in a processing tank. Next, the beans are depulped and placed in a water tank, where they are rinsed twice after about 12 hours. The soils are volcanic, and macadamia trees appear among the shade trees. Tea is also grown in the region, which reflects the climate of the area well: high, green, humid, with excellent conditions for the slow ripening of cherries. The coffee is processed using the washed method, so we expect cleanliness, high acidity, and classic Kenyan juiciness.ROASTER'S OPINIONThis is Kenya in a good, precise style. High acidity, plenty of juiciness, a clean profile, and that exact character you look for in Kirinyaga. Blackcurrant, citrus, tea. Zero randomness. Ripe cherries weigh more and yield better coffee, so farmers receive higher pay per kilogram, as well as a quality premium. The company also distributes over 350,000 seedlings from its own nursery every year.Fun fact: The coffee underwent a decaffeination process at the Coffein Compagnie using a solution of water and ethyl acetate, which occurs naturally in sugar cane, coffee, and fruits. After being delivered to the station, they undergo an initial, manual selection, during which unripe and insect-damaged cherries are discarded. After the seed is separated from the fruit, the coffee ferments overnight in tanks, then it is washed and sorted into four quality categories. The company was founded in 2015 by Zuberi Matsitsi, who produces specialty coffee primarily for international markets.Fun fact: Zuberi Matsitsi owns over 7,000 coffee trees. In addition to the Nyagishiru CWS plantation, his company also owns two other plantations in the Kayanza province.
