The decaf flank consists of beans from the Popayan region in Colombia. On one hand, this mix allows us to enjoy coffee without the heart palpitations, thanks to the (naturally!) reduced caffeine content; on the other, it stimulates the imagination – bringing juicy flavors of tropical fruits and citrus, especially when served cold. COFFEE OF THE MONTH
FILTER OF THE MONTH: COFFEELAB - Papua New Guinea Sigri A Washed Filter 250 g

Manufacturer: COFFEELAB

Roasting date: 13.04.2026

Whole-bean specialty coffee from Papua New Guinea, roasted in Warsaw by CoffeeLab. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of dark grapes, halva and thyme.Origin: Papua New GuineaRegion: Waghi TalFarm: Plantation SigriVariety: Typica, ArushaProcessing: WashedAltitude: 1550 m a.s.l.ABOUT THE COFFEE AND THE PLANTATIONThe Sigri plantation in the Waghi Valley (Western Highlands) has been operating since the 1950s and is the largest single coffee plantation in Papua New Guinea. Located at an altitude of over 1500 m a.s.l. on fertile, volcanic soils, it is a rare example of a full-scale plantation in a country dominated by small, backyard crops. The site employs chemical-free practices with an emphasis on a sustainable approach and natural shading, which supports even ripening of the fruit. Harvesting is done by hand, selecting only fully ripe cherries, which allows the proper balance of sugars and acidity to be maintained at the raw material stage. The processing is a classic washed method with extended fermentation. The beans ferment for three days, during which they are rinsed daily, followed by an additional day of fermentation. After this stage, the coffee is sun-dried for a minimum of 21 days and undergoes multi-stage sorting, which translates into the clarity and repeatability of the profile.ROASTER'S OPINIONThe opinion of Filip Ślęczek – our head roaster: Papua New Guinea – we haven't had coffee from this region for several years. And when it finally appeared, it made its way to Coffeedesk! It is safe to say that this is an unusual daily coffee. You will find a lot of clean, halva-like sweetness, broken by the acidity of dark grapes (you certainly know the taste of thick grape skin), with the whole subtly seasoned with a hint of thyme. Diverse, as May weather tends to be, and something good for everyone!COFFEE OF THE MONTHEvery month we pick two coffee specials – one for the espresso lovers, and the other for the pour-over sippers. COFFEE OF THE MONTH
ESPRESSO OF THE MONTH: COFFEE PLANT - Uganda Bugoye Fully Washed Espresso 250 g

Manufacturer: COFFEE PLANT

Roasting date: 20.04.2026

Whole-bean specialty coffee from Uganda, roasted in Poland by COFFEE PLANT. Dark roast, perfect for espresso, coffee machines, and moka pots. You can expect hints of caramel, peach, lemon and black tea.Country: UgandaRegion: Kasese DistrictFarm: Bugoye Washing StationProducent: Kyagalanyi Coffee    Varietal: SL14, SL28Processing: Fully WashedAltitude: 1700-2200 m a.s.l.ABOUT THE REGION AND THE FARMThe magnificent Rwenzori Mountains, known as the "Mountains of the Moon," stretch for over 120 km across western Uganda. High altitude, fertile volcanic soils, abundant rainfall, and appropriate temperatures create ideal conditions for growing high-quality coffee, while rivers flowing from the snow-capped peaks effectively irrigate the surrounding areas.Farmers delivering coffee cherries to the Bugoye washing station cultivate coffee trees on very small farms (approx. 2 acres), working by hand, often with the help of their entire families. This is because coffee serves as their primary source of income. Although the region is mainly famous for natural process coffees, washed coffees are also produced here—and that is exactly what this coffee is.Due to difficult access, many farms can only be reached on foot. To facilitate sales, 18 collection points were established, from which the coffee is transported for further processing. The mission of the Bugoye station is sustainable development, supported by professional agronomists working directly with local farmers.ABOUT THE PROCESSINGThe coffee cherries delivered to Bugoye are grown and harvested at altitudes between 1,700 and 2,200 meters above sea level. In addition to washed coffees, the station itself produces classic naturals, honey-processed coffees, and has also begun conducting experiments with fermentation. After the processing phase, the coffees were exported by Kyagalanyi Coffee, which is the first company in Uganda to receive a coffee export license. The washed process at Bugoye begins by placing the harvested cherries into large fermentation tanks filled with water. Anything that floats to the surface is then removed—damaged cherries, underripe ones, and all foreign objects like leaves or sticks. Next, the coffee is passed through a depulper and moves to further water tanks, where it is "washed" and ferments for 24 hours. Finally, the beans in parchment are dried, hulled, and packed into GrainPro bags.ROASTER'S OPINIONUganda is another African country where coffee production methods are changing dynamically. This momentum also greatly affects the quality of the beans sourced from there. For years, coffees from Uganda were primarily associated with low-quality Robusta. While high-quality microlots did appear, they were rare exceptions. The current situation in the green coffee market and the work of importers and exporters have ensured that the quality of Ugandan coffee improves year after year, with more high-quality coffee entering the market. We observe an improvement in bean quality annually, even as a result of minor adjustments to production processes. This washed lot from the Bugoye station is particularly interesting because it is very complex and somewhat unusual for washed beans from Uganda. The coffee has a light, tea-like body, reminiscent of those well-known from Ethiopia. The acidity is medium, citric, and delicately sparkling. The whole profile is complemented by a caramel-peach sweetness that is noticeable in the long aftertaste. This is the case for espresso, but after adding milk, the coffee changes dramatically. Although it remains light and tea-like, such as washed Ethiopias, the caramel-peach sweetness begins to stand out, creating a delicious, sweet milk coffee.RECIPEUse 18 grams of beans to brew 40 grams of espresso. Grind the coffee finely to aim for an extraction time of approximately 25 seconds. If you want to slightly suppress the acidity and boost the sweetness, grind a bit coarser to extend the extraction by a few seconds.COFFEE OF THE MONTHEvery month we pick two coffee specials – one for the espresso lovers, and the other for the pour-over sippers. Whole-bean specialty coffee from Colombia roasted at HAYB. Dark roast, perfect for espresso machines and moka pots.  In the cup, you can expect hints of coconut, pina colada and rafaello.Origin: ColombiaRegion: Chinchiná CaldasProcessing: Washed, Co-fermented CoconutVariety: CaturraAltitude: 1400-1600 m a.s.l.Cupping score: 87 / 100Listen, this is a total coconut banger from Colombia, where Caturra met fresh coconut and wine yeast in a tank to create an absolutely creamy Piña Colada in a cup with an almond twist. It goes down like the best dessert and is completely easy on the acidity, because after all that crazy co-fermentation, the beans rested nice and slow on African beds. The result is a profile so clean, sweet, and harmonious that you’ll forget sugar even exists—pure holiday vibes in every sip. Grab it and enjoy, because it’s simply delicious!Store in a cold and dry space.

Hi! Coffeedesk - Juicy Monster Filter 250 g

Manufacturer: HI! COFFEEDESK

Roasting date: 19.05.2026

Whole-bean specialty coffee from Kenya. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of black currants, grapefruit, red currant, tea and brown sugar.Origin: KenyaRegion: KirinyagaFarm: Kiamutuira Washing Station / Mutira Cooperative SocietyVariety: SL28, SL34, BatianProcessing: WashedAltitude: 1650–1700 m a.s.l.ABOUT THE FARMKiamutuira is a factory (washing station) in the Kirinyaga region, belonging to the Mutira Cooperative Society. The factory itself has been operating since 1996, and the cooperative has been a part of Kenyan coffee history since 1951. The coffee comes from approximately 600 smallholders, with the average farm measuring just 0.1 ha. Small scale. Great precision. The crops are situated at an altitude of 1,650–1,700 meters above sea level, near the forest boundary of Mount Kenya. The soils are volcanic, and macadamia trees appear among the shade trees. Tea is also grown in the region, which reflects the climate of the area well: high, green, humid, with excellent conditions for the slow ripening of cherries. The coffee is processed using the washed method, so we expect cleanliness, high acidity, and classic Kenyan juiciness.ROASTER'S OPINIONThis is Kenya in a good, precise style. High acidity, plenty of juiciness, a clean profile, and that exact character you look for in Kirinyaga. Blackcurrant, citrus, tea. Zero randomness. A coffee like this does not need stories about magic. It needs a good recipe.Store in a dry and cool place.

MAMAM - Peru Juver Santacruz Washed Filter 250 g

Manufacturer: MAMAM

Roasting date: 16.04.2026

Whole-bean specialty coffee from Peru, roasted by MAMAM roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The flavour of the brew resembles orange flowers, mango and melon.Origin: PeruRegion: CajamarcaFarm: Juver SantacruzVariety: Red & Yellow Caturra, BourbonProcessing: WashedAltitude: 2000 m a.s.l.Cupping score: 89 / 100 ABOUT THE FARMTwo brothers are the protagonists of this lot: Jesus and Lizandro Llatas Santacruz. They live in Queromarca, a small town in the Callayuc district, province of Cutervo and Cajamarca region. Callayuc has all the conditions to grow fantastic coffee: fertile soils, altitude that range from 1600 to 2000 masl, good cup varieties (mainly red and yellow Caturra, but also bourbon, Typica) but it is more and more affected by droughts. So farmers have had to adjust to the conditions and as a consequence the use of water is limited. On top of that, they have been fermenting their coffees into closed environments (often thick plasticbags under shade) to allow yeasts to form and add a distinctive fruity profile to their cups. Of course they supervise the levels of fermentation to avoid defects. The story of the Santacruz brothers fits within many farmers in Peru as they used to sell their entire crops to local buyers that would arrive at their farm door and take the bags away at a cheap price. Now they deliver their coffee to Cultivar, where after through quality control they receive a much higher price for it. This gap in price is a great help in their income that they complement with growing cattle. Cajamarca is very well known for its cattle culture, providing the region with an abundant amount of cheese, milk and beef.As for the future of the Santacruz family and their coffee business we have very good hopes. Jesus, one of the brothers, has recently bought a few extra hectares of land with the idea to plant more exotic and delicate varieties like Geisha and he is a good representation of the younger generation of farmers that will take the lead in the coffee production in the years to come in Cajamarca.ROASTER'S OPINIONSuper floral and sweet coffee that reminds us slightly of the Geisha botanical variety, even though it isn't one.RECIPE V6016g of coffee250g of water 96°CMedium Grind Size 1. Put a paper filter in your V60 and rinse it with hot water ( 96C ). It will preheat your drip brewer and gets rid of a paper taste from the filter.  specialty coffee from. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of almond, caramel and red apple.Origin: ColombiaRegion: Palestina, Huila Farm: CADEFIHUILAVariety: Caturra, TabiProcessing: WashedAltitude: 1700 m a.s.l.ABOUT THE REGION AND THE FARMThe municipality of Palestina is a unique place: it is called the "water and forest factory" of the Huila region. It is characterized by two types of climate: cold and temperate, and coffees from this area differ from the rest of Huila – they are more acidic and delicate, with distinct fruity notes. Our coffee comes from a selected group of producers from the upper part of the municipality of Palestina, located at an altitude of approximately 1700 meters above sea level. This group of farmers has specialized in cultivating varieties such as Tabi and Caturra. Cooperativa Departamental de Caficultores del Huila Ltda. CADEFIHUILA is a non-profit organization and one of the most important coffee cooperatives in Colombia. Its reach covers 27 municipalities, where a support network operates consisting of 45 coffee purchase points, 46 fertilizer stores, 36 agricultural supply stores, 16 permanent cupping laboratories, one mobile laboratory, and 7 points offering drying services. CADEFIHUILA implements programs aimed at achieving high production standards on farms. These standards are based on codes of conduct such as Fairtrade, Rainforest, 4C, and C.A.F.E. Practices. The development of certification processes for these specialized coffees allows the cooperative to meet market demand for coffee purchased under specific conditions.ABOUT THE VARIETYCaturra is a coffee variety that originated as a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais in Brazil between 1915 and 1918. The name "Caturra" comes from the word "Guarani", which means "small". This variety is characterized by the short stature of the plant. Due to its small size and closely spaced branches, it can be planted close together, which increases the yield per given area. Caturra contributed to the intensification of coffee cultivation, especially in Central America, where it was introduced into cultivation in the 1940s. This variety also played a significant role in breeding coffee plants resistant to coffee leaf rust, contributing to the creation of the "Catimor" family of varieties. Tabi is a relatively young variety, created in Colombia as a cross between Bourbon, Typica, and the disease-resistant Timor Hybrid variety. The word "Tabi" comes from the language of the indigenous people of Colombia and means "peace" or "life".ABOUT THE PROCESSINGThe coffee undergoes a traditional washing process, which begins with harvesting ripe cherries, weighing them, and leaving them for 24 hours in a processing tank. Next, the beans are depulped and placed in a water tank, where they are rinsed twice after about 12 hours. Finally, the coffee is dried in the sun or mechanically, depending on the producer's capabilities.Store in a dry and cool place.

Whole-bean specialty coffee from Colombia, roasted by Heresy roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of passion fruit, mango, yogurt, hard candies, flowers and champagne.Origin: ColombiaRegion: TolimaFarm: Elias & Shady BayterVariety: SidraProcessing: Anaerobic Natural + MosstoAltitude: 1500 m a.s.l.Cupping score: 90 / 100 ABOUT THE FARM AND COFFEE PRODUCEREl Vergel is a relatively young farm, as its first harvest took place only 10 years ago. However, the Bayter family has rapidly transformed the plantation into one of the most advanced in the industry in terms of complex processing and the cultivation of a wide range of selected, highly sought-after botanical varieties, such as Geisha, Pink Bourbon, Laurina, and Pacamara.Currently, ongoing research on bacteria and yeast is being conducted at El Vergel to achieve even greater precision in controlling fermentation and, consequently, modulating flavor. In addition to coffee production, the Bayters are the founders of Forest, a company involved in both the export and import of green coffees, which means we were able to purchase this coffee without the involvement of intermediaries.ABOUT COFFEE PROCESSING AT THE FARMSidra variety, hand-picked, fermented as whole cherries for 72 hours with limited air access, with the addition of must from the fermentation of another botanical variety, Java. This must is a liquid that is produced as a byproduct of coffee fermentation and contains a high concentration of microorganisms—bacteria and yeast. Their increased presence lowers the starting barrier of fermentation, making it more intensive and faster. The result? More intensive formation of metabolites, which have a direct impact on the final, more complex and deeper profile in the brew. The coffee is dried in two stages—first mechanically for 4 days in a temperature-controlled environment, then for 18 days on raised beds. It is homogenized for 30 days in plastic bags.ROASTER'S OPINIONOne of those coffees where you take the first sip and specific descriptors come to the tongue faster than you can consciously think of them. In our case: mango-passion fruit yogurt, without a doubt!ROYAL BEANSWhat’s behind the name Royal Beans? If Speciality beans are the pinnacle of coffee, our Royal Beans reach the Himalayas! In this series, we present the very top of the coffee pyramid, the crème de la crème, as precious as crown jewels. Anaerobic, Gesha, Nanolot, Lychee – what does it mean to go beyond the ordinary? – Royal Beans is a selection of coffees chosen by us from various roasters – they share exceptional flavor, limited production, unique processing methods, and the highest quality. A treat for coffee connoisseurs (and those aspiring to be)!Store in a cold and dry space.

The company was founded by Syoum and Emame, and is currently run by their grandchildren. Bette Buna is committed to improving the quality of life for its community members – it teaches local farmers how to improve soil quality, restore agroforestry systems, and understand the importance of harvesting ripe cherries. Ripe cherries weigh more and yield better coffee, so farmers receive higher pay per kilogram, as well as a quality premium. The company also distributes over 350,000 seedlings from its own nursery every year.Fun fact: The coffee underwent a decaffeination process at the Coffein Compagnie using a solution of water and ethyl acetate, which occurs naturally in sugar cane, coffee, and fruits. In several stages, caffeine was gently and selectively extracted from the beans, allowing the green coffee to retain a profile closely linked to the original batch.Store in a cold and dry space.
