The station is managed by Alemu Bukato, and the cherries delivered to it come from around 650 local farmers cultivating coffee at altitudes of 1,900–2,100 meters above sea level. High altitude, fertile soils, and regular rainfall create conditions for which Yirgacheffe is famous for exceptionally aromatic coffees with a floral and fruity character.Only ripe cherries enter the processing stage, which, after selection, are dried whole on raised African beds for 12–15 days. During this time, they are regularly turned and protected from intense sun, rain, and night moisture. Slow and controlled drying allows the beans to absorb sugars from the pulp, building the intense sweetness and characteristic floral notes of the finest Ethiopian natural process coffees.
