The president of Lima Coffee is Rony Lavan, who is responsible, among other things, for finding the most interesting coffees from small producers. He has guided the company toward specialty coffee, and his microlots are winning an increasing number of industry awards. Fun fact: Cajamarca is a relatively dry and cool tropical region located in the north-eastern highlands of Peru, characterized by very fertile soil at high Andean elevations. All of these factors contribute to the developing production of specialty coffee. Cajamarca is the main coffee-growing region in Peru, accounting for about 25% of national production. The project has been developing since the early 2010s, when the family transitioned from growing vegetables to producing specialty coffee. A key step was the launch of their own processing station in 2015, which was expanded in 2025, allowing them to take full control over production and the preparation of beans for export.Production is based on a "variety-driven" approach, meaning the creation of microlots by variety and specific plots. The crops are dominated by both classic varieties, such as Caturra and Catuai, as well as more demanding and highly valued ones, including Gesha, SL28, Ethiopia 47, and Java. This approach allows them to precisely match the processing methods to the characteristics of the raw material and maximize the sensory potential of each lot.The farm utilizes a wide range of processing methods: from classic washed and honey to more advanced natural, anaerobic, and extended fermentation processes. Fermentations are conducted under controlled conditions, often in sealed tanks, with the duration and parameters precisely tailored to specific varieties. Drying takes place mainly on raised beds and patios, and the entire process – from harvesting to stabilization and dry milling – is strictly monitored.The result of this approach is coffee with high clarity and a complex profile: from elegant, clean Geshas and structured honeys to intense, controlled anaerobics with distinct fruitiness and winey notes. The quality of production is confirmed by numerous successes in the Cup of Excellence competition, where the farm has placed at the top multiple times, including first place in 2025.Our beans are a selection of peaberry, sourced from the coffees that won awards in this year's Cup of Excellence. Peaberry is a naturally occurring type of bean – about 10-15% of coffee beans do not split in half but remain as a single whole. Traditionally, they are separated from the rest for the consistency of the lot. Coffees from El Diviso have won the World Barista Championship, and lots from Johan Vergara regularly appear in the routines of world-class competitors. In practice, this means one thing: the raw material is predictable, clean, and produced to meet the highest standards.This is a deliberate combination of two varieties. Tabi brings structure and elegance, often expressed as a more tea-like clarity and a stable, citrus-fruit acidity, while Yellow Colombia adds sweetness and juicy, ripe fruit character.Formally, this is a washed coffee, but processed in a way that strongly shapes the flavor profile. First, the fermentation is two-stage: an initial aerobic phase, followed by anaerobic submersion, designed to emphasize stone fruit notes (peach, apricot) rather than heavy, wine-like flavors. Second, after fermentation the coffee undergoes controlled hot/cold quenching, meaning contact with hot and cold water to stop the process at the right moment and preserve aromatic clarity. This season, we went for the Aji variety, already warmly received by you, which struck us with its transparency. We got a proper strawberry punch straight to the taste buds, and we are still recovering from that fruity knockout.In the cup, the strawberry was the main thing: fresh, but also a little more jammy. At times, we had the impression of those yoghurt-and-strawberry chocolates appearing in the flavour too. There is no doubt that a lot is going on here, and sensory boredom is not really an option. We completed the flavour profile with notes of mango and sea buckthorn to highlight the fresh, soft sweetness and intense acidity that stays with us long after the last sip. In truth, the range of associations was almost endless, so we narrowed it down to the notes that stood out the most and best captured this juicy, ripe fruitiness.ABOUT THE VARIETYWe write the variety simply as Aji, though its fuller name is Bourbon Aji. The name comes from… a pepper. Farmers in southern Huila noticed the distinctive aroma of the cherries, reminiscent of a small chilli pepper. Here comes the plot twist, though: genetic testing has shown that it is not a direct descendant of classic Bourbon, but a variety of Ethiopian origin.ABOUT THE PROCESSINGThe coffee and its processing come from Luis Marcelino of Aroma Nativo in Pitalito. The name Hydro Honey may sound fancy, but it is not just a pretty label. Behind it stands a specific, multi-stage process. Only the ripest cherries go into processing, first fermenting in a controlled anaerobic environment. The coffee is then depulped and pre-dried. Later, it returns to the tanks for a rehydration stage with selected yeasts and bacteria, before moving to raised beds, where it dries for up to 26 days. Finally, it goes through three months of stabilisation under controlled conditions. This is exactly the process that helps build an equally layered profile: intense, juicy and long-lasting.Store in a cold and dry space.

The producers focus on precise and responsible coffee processing, aiming to express the character of the local terroir while respecting the natural environment. During the harvest season, the farm employs around 15 people and produces approximately 5.5 tons of coffee annually from just under two hectares, cultivating several botanical varieties processed using different methods.Coffee production at this location comes with challenges such as variable weather conditions and rising operating costs. In response, the owners plan new plantings of varieties better adapted to the local climate, as well as a gradual expansion of their cultivation area. Since 2022, the farm has also been investing in the development of controlled fermentation infrastructure, which is used not only by the owners themselves but also by neighboring producers seeking to improve the quality of their coffees. This offering is another coffee from this farm in our portfolio—this time naturally processed Caturra and Red Catuai from the latest harvest in Costa Rica.ABOUT THE COFFEEAt the farm, every stage of the process is closely monitored and documented, allowing for consistent quality improvements from season to season. This lot was prepared using the natural processing method. Cherries of the Red Catuai and Caturra varieties are first placed in a water bath for flotation, during which selection takes place—only healthy, fully ripe cherries continue to the next stage, while defective fruit is removed.The cherries are then disinfected using ozone to limit the development of undesirable microorganisms. The next step is drying the whole fruit on raised beds typical of African coffee farms, under full sun. This process lasted 28 days and required regular turning of the coffee to ensure even moisture evaporation. The beans ultimately reached a moisture content of 10.5%.After drying, the coffee is placed in GrainPro bags, where it rests and stabilizes for at least one month. The final stage takes place at a dry mill, where the coffee is hulled, sorted by size and density, and subjected to electronic color sorting before shipment.Costa Rican coffees are often associated with pronounced sweetness, typically resulting from honey processing. In this case, however, we are dealing with a naturally processed coffee that dried for an extended period in full sun. The result is a very clean and transparent flavor profile, featuring notes of ripe grapefruit, plum, and dark chocolate. La Laguna stands out with an intense sweetness reminiscent of maple syrup. The body is high and almost oily, while the acidity is low and soft, with a subtle grapefruit accent. Altogether, this creates a smooth, harmonious, and well-balanced coffee.BREW RECIPEUse your preferred brewing method and recipe. Brew this coffee as you normally would, but grind it slightly finer than usual and use water at approximately 95–97°C.Store in a cold and dry space.

The project has been developing since the early 2010s, when the family transitioned from growing vegetables to producing specialty coffee. A key step was the launch of their own processing station in 2015, which was expanded in 2025, allowing them to take full control over production and the preparation of beans for export.Production is based on a "variety-driven" approach, meaning the creation of microlots by variety and specific plots. The crops are dominated by both classic varieties, such as Caturra and Catuai, as well as more demanding and highly valued ones, including Gesha, SL28, Ethiopia 47, and Java. This approach allows them to precisely match the processing methods to the characteristics of the raw material and maximize the sensory potential of each lot.The farm utilizes a wide range of processing methods: from classic washed and honey to more advanced natural, anaerobic, and extended fermentation processes. Fermentations are conducted under controlled conditions, often in sealed tanks, with the duration and parameters precisely tailored to specific varieties. Drying takes place mainly on raised beds and patios, and the entire process – from harvesting to stabilization and dry milling – is strictly monitored.The result of this approach is coffee with high clarity and a complex profile: from elegant, clean Geshas and structured honeys to intense, controlled anaerobics with distinct fruitiness and winey notes. The quality of production is confirmed by numerous successes in the Cup of Excellence competition, where the farm has placed at the top multiple times, including first place in 2025.Our beans are a selection of peaberry, sourced from the coffees that won awards in this year's Cup of Excellence. Peaberry is a naturally occurring type of bean – about 10-15% of coffee beans do not split in half but remain as a single whole. Traditionally, they are separated from the rest for the consistency of the lot. In our experience, peaberry beans can have an incredibly clean and balanced profile, which is undoubtedly the case here.Store in a cold and dry space.

Despite numerous structural barriers, La Tribu members invest every year both in their farms and in expanding their knowledge, striving for long-term stability and independence.ABOUT THE COFFEEThis lot is a carefully selected batch of coffee prepared by La Tribu that has undergone decaffeination. As with most coffees from Mexico, the Mountain Water Process was used, carried out in Veracruz. Despite the use of a water-based method, the coffee has retained its original sensory profile and character.The coffee went through two stages of processing. The first was post-harvest processing—in this case, the fully washed method. After delivery to the wet mill, the beans were hand-sorted and then placed in water. At this stage, another selection took place: damaged, underripe, or overripe beans were removed, along with other impurities resulting from hand harvesting. After a short soaking, the coffee passed through a depulper and then fermented in water. Once fermentation was complete, the beans were spread out on patios, dried to the appropriate moisture level, the silverskin was removed, and the coffee was prepared for storage.The second stage of production was decaffeination. The selected lot was transported to a facility in Veracruz, where coffee in Mexico is typically decaffeinated. Water from mountain springs is used to extract the caffeine. As with all methods of this type, organic compounds removed along with the caffeine are captured by carbon filters and then reintroduced into the water that comes into contact with the beans, allowing the coffee to retain its full flavor.ROASTER’S OPINIONThis coffee immediately caught our attention during the first cupping, and we quickly decided it deserved a place in our offering. The fact that it is decaffeinated turned out to be more of a coincidence—we did not initially plan to introduce a decaf with this kind of character. The aroma is dominated by floral and spice notes, complemented by a subtle hint of orange peel. On the palate, clear notes of orange appear, along with gentle spiciness reminiscent of pepper and cloves, as well as plum and sweet caramel. The profile is harmonious, with mild acidity, medium body, and excellent balance. Considering the terroir and the fact that this is a decaffeinated coffee, its character can be genuinely surprising.BREW RECIPEUse your preferred brewing method and recipe.
