Hi! Coffeedesk - Mad Jungle Filter 250 g

Manufacturer: HI! COFFEEDESK

Roasting date: 02.06.2026

Whole-bean specialty coffee from Uganda, roasted in Warsaw by CoffeeLab. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of cherry, blueberry, dried fruits, spices, rum and alcohol finish.Origin: UgandaRegion: Rwenzori, Western RegionFarm: Nyabirongo / Agri EvolveVariety: SL14, SL28Processing: NaturalAltitude: 1600–2200 m a.s.l.ABOUT THE COFFEENyabirongo is located on the southern slopes of the Rwenzori Mountains in western Uganda. It is an important point for local producers from the Bakonzo people and, at the same time, a quality hub for Agri Evolve, a company that has been working with farmers in the region since 2018. The facility in Nyabirongo has been operating since 2022 and combines both a wet and dry mill, ensuring that quality control covers the entire journey from receiving the cherries to preparing the green coffee for export. This lot is a natural. Ripe cherries are hand-picked, sorted through flotation, and then sealed in fermentation tanks. After fermentation, the coffee is dried in thin layers, and later hulled and sorted. The result? Plenty of fruit, high sweetness, and that characteristic, slightly rum-like finish. A coffee with character. No pretending.ROASTER'S OPINIONThis is Uganda on the darker, more fruity side of the force. It is not "polite." It is sweet and fermenty, with cherry and blueberry at the forefront. It works best as a filter coffee for people who like coffees with a strong processing profile but without a heavy, muddy body. Plenty of flavor. Very little boredom.Store in a dry and cool place.

Hi! Coffeedesk - Juicy Monster Filter 250 g

Manufacturer: HI! COFFEEDESK

Roasting date: 10.06.2026

Whole-bean specialty coffee from Kenya. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of black currants, grapefruit, red currant, tea and brown sugar.Origin: KenyaRegion: KirinyagaFarm: Kiamutuira Washing Station / Mutira Cooperative SocietyVariety: SL28, SL34, BatianProcessing: WashedAltitude: 1650–1700 m a.s.l.ABOUT THE FARMKiamutuira is a factory (washing station) in the Kirinyaga region, belonging to the Mutira Cooperative Society. The factory itself has been operating since 1996, and the cooperative has been a part of Kenyan coffee history since 1951. The coffee comes from approximately 600 smallholders, with the average farm measuring just 0.1 ha. Small scale. Great precision. The crops are situated at an altitude of 1,650–1,700 meters above sea level, near the forest boundary of Mount Kenya. The soils are volcanic, and macadamia trees appear among the shade trees. Tea is also grown in the region, which reflects the climate of the area well: high, green, humid, with excellent conditions for the slow ripening of cherries. The coffee is processed using the washed method, so we expect cleanliness, high acidity, and classic Kenyan juiciness.ROASTER'S OPINIONThis is Kenya in a good, precise style. High acidity, plenty of juiciness, a clean profile, and that exact character you look for in Kirinyaga. Blackcurrant, citrus, tea. Zero randomness. A coffee like this does not need stories about magic. It needs a good recipe.Store in a dry and cool place.

HAYB - Birthday Coffee Colombia Los Nogales Chocoberry Natural Filter 200 g

Manufacturer: HAYB

Roasting date: 25.06.2026

Specialty-grade whole bean coffee from Colombia, roasted by the Warsaw-based roastery HAYB. Light roast, ideal for filter coffee makers, drippers, Chemex, AeroPress, French Press, and other alternative brewing methods. The flavor profile features notes of strawberry, raspberry and milk chocolate.Country of origin: ColombiaRegion: Bruselas, HuilaVariety: Pink BourbonProcessing method: Chocoberry NaturalCupping score: 88 / 100Altitude: 1600 -2000 m a.s.l.ABOUT THE PROCESSThe farmer himself, Oscar Hernandez, named this processing method this way because the final taste of the brewed coffee reminded him of something right on the borderline between chocolate and currants. How did it happen? Hand-picked cherries – nothing unusual. But then – SHOCK. Thermal! The cherries were submerged in water at a temperature of 180°F (80°C) for 30 to 60 seconds. Next, the fruits were washed and underwent ozonation. The seeds were extracted, and the juicy experimenting began. Juice was squeezed from the skins of still-fresh cascara. The juice was mixed with the beans in fermentation barrels. With the help of the necessary microorganisms, the beans underwent lactic fermentation for 220 hours. After that, just 20 days of drying, and there you have it.Reading this description, you might think it would turn into pickled cucumbers, or at least kombucha. Nothing of the sort. It is sweet, juicy, and crisp. Yum.Store in a cold and dry space.

In the cup, you’ll find notes of red fruits, apple, flowers and strawberry.Origin: ColombiaRegion: Pitalito, HuilaFarm: Los LagosProcessing method: Washed (fermented)Variety: GeshaAltitude: 1850 m a.s.l.ABOUT THE FARMLos Lagos is located in Colombia, in the Huila region, in the municipality of Pitalito, in the village of Filo de Chillurco, at an altitude of 1,850 meters above sea level. The farm covers 6 hectares, 5 of which are dedicated to coffee cultivation, and the trees in this lot are around four years old.The farm is managed by Vladimir and his family, and the entire process, from harvesting to drying, takes place on-site and under their direct supervision. The harvest season runs from April to December and is based on selective hand-picking to maintain consistent quality and uniformity of the cherries.ABOUT THE COFFEEGesha is a variety strongly associated with exceptional quality and a very high sensory potential when grown at high altitudes. It is also a low-yield variety, which means that even with high demand, it remains genuinely limited on the market. For years it has consistently won the most prestigious coffee competitions and achieved record-breaking results at international auctions. This lot is processed using a washed method with extended, controlled fermentation. The harvest is done manually and selectively, in cycles roughly every 20 days, using only fully ripe cherries. After harvesting, the cherries ferment in bags for about 12 hours. They are then transferred to a hopper, where the initial oxidation stage is completed. The coffee then undergoes flotation, followed by depulping and an extended fermentation of approximately 200 hours in tanks or vats. After fermentation, the coffee is washed using either a portable washing unit or an Ecomill system. It is then dried on raised beds for 15–17 days and stabilized in GrainPro bags for 10–15 days. The final step is careful sorting to remove defects and ensure the highest physical quality of the beans.ROYAL BEANSWhat’s behind the name Royal Beans? If Speciality beans are the pinnacle of coffee, our Royal Beans reach the Himalayas! In this series, we present the very top of the coffee pyramid, the crème de la crème, as precious as crown jewels. You can expect hints of red currant, green apple and yellow plum.Origin: UgandaRegion: Mount ElgonFarm: The Coffee GardenProcessing: WashedVariety: SL14 · SL28Altitude: 1800-2200 m a.s.l.ABOUT THE COFFEE Uganda Butawa is a microlot selected at the Coffee Garden washing station, which processes cherries from local farmers growing coffee at altitudes of 1,800–2,200 m a.s.l. The SL14 and SL28 varieties underwent classic African wet processing. From the very first sip, this coffee is surprising – its profile closely resembles beans from Kenya.Redcurrant dominates the aroma, complemented by a delicate floral background. In the cup, the currant notes are distinct, rounded out by hints of slightly underripe green apple and yellow mirabelle plum. The acidity is intense, reminiscent of currant and apple, with moderate fruit sweetness and a long, fresh finish. This is another highly successful lot from Coffee Garden. The Coffee Yard is a company owned by Norman Mukuru, who has collaborated with The Coffee Gardens for years on projects related to coffee processing and traceability. Thanks to this relationship, his beans can be exported to global markets.Norman operates at the foot of Mount Elgon, sourcing coffee from the Sironko, Mbale, Bulambuli, and Kapchorwa regions. He has nearly 20 years of experience and, since 2018, has also been developing natural processing, constantly refining his methods. This is another coffee from this station—polished and standing out with a slightly different profile than previous batches.Store in a cold and dry space.

Fazenda Mundo Novo is not just a random address on the map, but a place with a clearly established work standard.Although the farm's name is Mundo Novo (also the name of a botanical variety), the variety of this specific lot is Yellow Catucaí. It is valued for its sweetness, good structure, and a clean, organized sensory profile. This is a natural process managed with great control. The cherries were hand-picked at the optimal moment of ripeness and then spread in a thin layer on the patio that same day to begin drying. After several days, the coffee was moved to a dryer, where it finished drying slowly at a temperature of 40–45°C, which allowed for the preservation of profile clarity and good flavor intensity.RECIPERatio: 60 g of coffee per 1 liter of water. COFFEE PLANT - LOW Cold Brew Filter 250 g

Manufacturer: COFFEE PLANT

Roasting date: 25.05.2026

Whole-bean specialty coffee from Brazil, Kenya and Rwanda, roasted in Poland by COFFEE PLANT. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. You can expect hints of citrus, blackberry and caramel.Origin: Brazil, Kenya, RwandaRegion: Sul de Minas, Huye, NyeriFarm: Kiamambara Washing Station,Kigoma Washing StationProcessing: CO₂ Natural, Natutal, WashedVariety: Mundo Nuovo, Red Bourbon, SL28, SL34Altitude: 1050-2200 m a.s.l.ABOUT THE COFFEELOW Cold Brew is a coffee that gives a distinct sense of freshness and lightness from the very first sip. Citrus notes introduce a crisp quality, berry accents build a fruity profile, and caramel sweetness binds it all together, adding a pleasant depth. After the steeping process, you get a brew with a juicy, fresh, and naturally sweet character. This is a low-caffeine cold brew that, despite its lightness, remains distinct in flavor — perfect for when you want something delicate but still full of aroma and character.ROASTER'S OPINIONLOW Cold Brew is a light, refreshing blend of coffees from Brazil, Kenya, and Rwanda with a reduced caffeine content — created specifically for cold brews that you can drink at any time of the day. The composition offers a fresh, fruity profile balanced by a delicate sweetness. In the first impression, citrus and berry notes appear, giving the beverage a distinct crispness and lightness. The whole is completed by a subtle caramel sweetness that introduces a pleasant depth and balance. This is a cold brew that delivers exactly what you would expect from a summer infusion — juiciness, freshness, and natural sweetness, but with less caffeine. Perfect for warm days and all the moments when you feel like having something truly refreshing and light.RECIPELOW Cold Brew develops its character best in cold preparation — that is when it fully shows the freshness, lightness, and fruity juiciness that makes you want to come back for more.Start with a coarse grind of the coffee, preferably in the range of 28–32 clicks on a Comandante grinder (around 30 clicks will be a good reference point). Then, pour cold, filtered water over it in a ratio of 6 g of coffee per 100 g of water and place the whole thing in the refrigerator for 14–16 hours. After filtering, you will get a clear brew with a fresh, fruity profile and natural sweetness. It works great drunk on its own, with ice cubes, or as a base for light summer drinks.Store in a cold and dry space.

In the cup, you can expect the hints of blackberry, black tea and apricot.Origin: BurundiRegion: MuyingaVariety: BourbonProcessing: WashedAltitude: 1700 m a.s.l.ABOUT THE COFFEEAnother fresh harvest from Luis, and just like every year, it does not disappoint. This season, we went for the Aji variety, already warmly received by you, which struck us with its transparency. We got a proper strawberry punch straight to the taste buds, and we are still recovering from that fruity knockout. In the cup, the strawberry was the main thing: fresh, but also a little more jammy. At times, we had the impression of those yoghurt-and-strawberry chocolates appearing in the flavour too. There is no doubt that a lot is going on here, and sensory boredom is not really an option. We completed the flavour profile with notes of mango and sea buckthorn to highlight the fresh, soft sweetness and intense acidity that stays with us long after the last sip. In truth, the range of associations was almost endless, so we narrowed it down to the notes that stood out the most and best captured this juicy, ripe fruitiness.ABOUT THE VARIETYWe write the variety simply as Aji, though its fuller name is Bourbon Aji. The name comes from… a pepper. Farmers in southern Huila noticed the distinctive aroma of the cherries, reminiscent of a small chilli pepper. Here comes the plot twist, though: genetic testing has shown that it is not a direct descendant of classic Bourbon, but a variety of Ethiopian origin.ABOUT THE PROCESSINGThe coffee and its processing come from Luis Marcelino of Aroma Nativo in Pitalito. The name Hydro Honey may sound fancy, but it is not just a pretty label. Behind it stands a specific, multi-stage process. Only the ripest cherries go into processing, first fermenting in a controlled anaerobic environment. The coffee is then depulped and pre-dried. Later, it returns to the tanks for a rehydration stage with selected yeasts and bacteria, before moving to raised beds, where it dries for up to 26 days. Finally, it goes through three months of stabilisation under controlled conditions. This is exactly the process that helps build an equally layered profile: intense, juicy and long-lasting.Store in a cold and dry space.

COFFEELAB - Costa Rica Alvarado Fonseca Familia Natural Anaerobic Filter 250 g

Manufacturer: COFFEELAB

Roasting date: 29.06.2026

Whole-bean specialty coffee from Costa Rica, roasted in Warsaw by CoffeeLab. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of cherry liqueur, wild strawberry and grapefruit.Origin: Costa RicaRegion: ChirripóFarm: Corazón de JesúsVariety: PeaberryProcessing: Natural AnaerobicAltitude: 1800 – 1950 m a.s.l.ABOUT THE COFFEECosta Rica Alvarado Fonseca Family is another peaberry* that completely won us over. There is something of cherry liqueur to it: lightly fermented, deep and intense. But instead of drifting into a heavy, boozy ferment, it stays on the light side of the Force: fresh, bright, and grapefruit-leaning.Our first impression? Cherries in a liqueur-like, very sweet form. The grapefruit note is there to show clarity, freshness, and citrusy acidity. During our tests, the brew came out expressive, but not overwhelming. Fruity, clea,n and juicy. Not too light, not too heavy. Just right. The coffee comes from the Chirripó region in Costa Rica, from farms located at 1800–1950 m a.s.l. Behind the lot stands the Alvarado Fonseca Family, a producer family connected with the Corazón de Jesús micro-mill. Jhon Alvarado Abarca, also known as Johny, regularly appears among the top names in Cup of Excellence, and his work shows what you can achieve with experience, ambition, and constant process refinement. This lot was processed as natural anaerobic, which helps build deep, fermented fruitiness without taking away the coffee’s clarity. And that is exactly what we liked most about it: the intensity is clear, but kept in check. A good example of a thoughtful combination of peaberry selection and process. We especially recommend this lot to people who enjoy fruity-fermented intensity, but care just as much about balance. There is energy and depth here. But there is also lightness and freshness.*Peaberry is a natural anomaly: instead of two flat seeds developing inside the coffee cherry, there is one smaller, rounder seed. In practice, it can often give a more concentrated and intense flavour.Store in a cold and dry space.

Acidity? Calm, only lightly present, rather than stealing the show. If we had to sum it up in one word? Harmonious. The beans come from T’xayalaj, a small family-run farm in Huehuetenango, managed by Maria Perez Morales. Maria and her husband bought the land around a dozen years ago. When Diego left to find work abroad, she took over the farm and began developing it together with their children. Under her leadership, the farm produced its first specialty lots. While each of Guatemala’s eight coffee regions contains countless microclimates, each with its own character, Maria’s coffee reflects what we value most in classic washed Guatemalas: a comfort cup you can keep coming back to without overthinking it.Store in a cold and dry space.

Therefore, this lot combines a good origin with processing infrastructure that has a real impact on the quality of the cup.VARIETYRed Bourbon is a variety valued for its high sensory quality and distinct character. Under the right conditions, it yields sweet, complex, and very clean coffees. In this version, it shows a profile based on intense fruit and deep sweetness – with notes of strawberry, blueberry jam, and sweet cherry. This is a natural process coffee with multi-stage, controlled fermentation.Ripe cherries are first harvested and submerged in water to discard lighter, floating beans. Next, the coffee undergoes anaerobic fermentation in bags for 36 hours, after which it goes into another 36 hours of fermentation in a mucilage environment (mosto) prepared beforehand based on a previous batch and fed with panela for a month. After this stage, the coffee is rinsed twice, undergoes a one-time thermal shock with water at 60°C, and is finally dried in dehydrators to optimal moisture levels for 5 days.RECIPERatio: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind size: medium-coarseBrewing time: 3:30 minutesMethod: Pour the water over the coffee in 5 equal parts (e.g., 5x 60g) at 30-second intervals. The water should completely drain through the coffee between pours. If the water flows too slowly or too quickly, adjust the grind size to coarser/finer.Remember to use soft, filtered water!Store in a cool, dry place.
