The farm spans 6 hectares, 5 of which are dedicated to coffee cultivation. This scale allows for great attention to detail in cherry selection and process quality.ABOUT THE COFFEEPapayo Rojo is a variety that brings plenty of dynamics and freshness to the cup. In a well-managed process, it can deliver a juicy, complex, and very clear profile. This is one of those coffees that shows modern Colombia can still surprise with its form, without losing precision. The cherries were hand-picked, then subjected to 24-hour oxidation and 36-hour fermentation in mucilage. After this stage, the mucilage layer was removed mechanically, followed by drying in a marquesina for about 20 days. This process builds greater depth of flavor and helps maintain high profile clarity.RECIPEProportions: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind: medium-coarseBrewing time: 3:30 minutesMethod: Pour the coffee in 5 equal parts at 30-second intervals. The water should completely drain through the coffee between pours. If the water flows too slowly or too quickly, adjust the grind size to coarser/finer.Remember to use soft, filtered water!Store in a cold and dry space.

Bracia Ziółkowscy - Costa Rica Corazon de Jesus Anaerobic Natural Filter 250 g

Manufacturer: BRACIA ZIÓŁKOWSCY

Roasting date: 16.06.2026

Whole-bean specialty coffee from Costa Rica, roasted by Bracia Ziółkowscy roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of plum, wine acidity and papaya.Origin: Costa RicaRegion: Chirripó, BruncaFarm: Corazón de Jesus Variety: Blend, peaberryProcessing: Anaerobic NaturalAltitude: 1680-1880 m a.s.l.Cupping score: 86 / 100ABOUT THE FARMThe Corazón de Jesús farm, managed by Jhon Alvarado and his family in the Chirripó (Brunca) region of Costa Rica, spans approximately 16 hectares across several plots, including Finca La Torre, Los Toños, and El Salitre. The project has been developing since the early 2010s, when the family transitioned from growing vegetables to producing specialty coffee. A key step was the launch of their own processing station in 2015, which was expanded in 2025, allowing them to take full control over production and the preparation of beans for export.Production is based on a "variety-driven" approach, meaning the creation of microlots by variety and specific plots. The crops are dominated by both classic varieties, such as Caturra and Catuai, as well as more demanding and highly valued ones, including Gesha, SL28, Ethiopia 47, and Java. This approach allows them to precisely match the processing methods to the characteristics of the raw material and maximize the sensory potential of each lot.The farm utilizes a wide range of processing methods: from classic washed and honey to more advanced natural, anaerobic, and extended fermentation processes. Fermentations are conducted under controlled conditions, often in sealed tanks, with the duration and parameters precisely tailored to specific varieties. Drying takes place mainly on raised beds and patios, and the entire process – from harvesting to stabilization and dry milling – is strictly monitored. The result of this approach is coffee with high clarity and a complex profile: from elegant, clean Geshas and structured honeys to intense, controlled anaerobics with distinct fruitiness and winey notes. The quality of production is confirmed by numerous successes in the Cup of Excellence competition, where the farm has placed at the top multiple times, including first place in 2025.Our beans are a selection of peaberry, sourced from the coffees that won awards in this year's Cup of Excellence. Peaberry is a naturally occurring type of bean – about 10-15% of coffee beans do not split in half but remain as a single whole. Traditionally, they are separated from the rest for the consistency of the lot. In our experience, peaberry beans can have an incredibly clean and balanced profile, which is undoubtedly the case here.ROASTER'S OPINIONWe have been dreaming of a coffee like this for a long time – fruity, with a touch of fermentation and a slightly winey character. Very ripe fruit with a tropical kick. Sweet, complex, you can start every single day with it!Store in a cold and dry space.

Bracia Ziółkowscy - Honduras Caballero Las Lomas Natural Filter 250 g

Roasting date: 31.03.2026

Whole-bean specialty coffee from Honduras, roasted by Bracia Ziółkowscy roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of pineapple, cocoa and alcohol.Origin: HondurasRegion: Chiancla, La PazFarm: Las Lomas, Marysabel Caballero i Moises HerreraVariety:  Catuai Processing: NaturalAltitude: 1600 m a.s.l.Cupping score: 86 / 100ABOUT THE FARMMarysabel Caballero and her husband, Moises Herrera, are second and third-generation coffee producers. They inherited their farms from their parents and creatively evolved their cultivation and processing methods. They have been working with specialty coffee since the early 2000s and achieved legendary status long ago. Year after year, they produce the highest quality green beans, serving as pioneers not only of specialty coffee in Honduras but also of new processing techniques. They were the ones who successfully adapted natural processing to the challenging climatic conditions of Honduras. The Caballero family owns nearly 200 hectares of land divided into 17 different farms in the Marcala region of eastern Honduras. All their operations are centered at a central washing station – Xincala. This is where all the cherries they harvest are processed. The family constantly invests in the station's development, making it possible to continuously improve quality.Marysabel and Moises's farms feature clay-like soil, and the main variety they grow is Catuai, though they also have Java, Pacamara, and Geisha trees.ROASTER'S OPINIONWe roasted our first naturals from Caballero in 2020. A lot has changed since then. Back then, the processing still had its flaws; there were many heavily over-fermented beans that roasted darker than the rest, creating a slight "muddiness" or what some called "tarriness" in the cup. Today, that is completely gone. This is a sweet, jammy, and thick natural, yet remarkably clean and transparent at the same time. We were fans of those coffees back then, but now we are truly blown away.Store in a cold and dry space.

The cup is filled with notes of guava, cherry and muscovado.Country: ColombiaRegion: BuesacoFarm: Alta ClaraProcessing: HoneyVarietal: GeshaCupping score: 88 / 100 Altitude: 2400 m a.s.l.ABOUT THE FARMFinca Alta Clara is located in the mountainous Buesaco region of Nariño, at an altitude of 2200 to 2400 meters above sea level. The four-hectare farm, entirely planted with coffee, belongs to Laureano Gómez — a second-generation producer and former teacher who decided to leave his career in education to fully dedicate himself to developing the family farm and producing specialty coffees.Laureano brought back to life an estate that had been neglected for years, building a project based on quality, experimentation, and a conscious approach to production. Together with his brother, he is responsible for both the daily work on the farm and the sale of their coffees. On different plots, he cultivates varieties such as Gesha, Pink Bourbon, and Castillo, constantly developing processing methods to search for even higher quality coffee. This specific lot of Gesha was selected from among the best coffees in the Nariño region during the La Mejor Taza de Nariño competition. It then went to the auction of the best lots, where it was won by Adam Laska — co-owner of the KAFAR roastery — who had previously participated in the competition as a judge.ABOUT THE PROCESSINGThe processing starts with the manual harvesting of fully ripe cherries. Next, the coffee undergoes a four-day anaerobic fermentation in sealed jute bags kept in the cool climate of the Alta Clara region. The next stage is an eight-day anaerobic fermentation in airtight steel tanks, which deepens the sweetness, texture, and complexity of the sensory profile. After fermentation, the coffee is dried for 15–20 days in parabolic dryers, which ensures uniform airflow. The final stage is manual selection and a 15-day stabilization period in jute bags.In the cup, the coffee presents an elegant and refined character with notes of guava, sweet cherry, and muscovado sugar, supported by a creamy texture and a long, sweet finish. This is a limited lot created for the most demanding consumers who brew coffee using filter methods.Store in a dry and cool place.

You can expect hints of raspberry, lemon, cranberry and pomegranate.Country: ColombiaRegion: HuilaFarm: Finca El RosalProcessing: NaturalVarietal: TabiAltitude: 1650 m a.s.l.ABOUT THE COFFEEColombia El Rosal is a juicy and multi-layered coffee for alternative brewing methods, combining an intensely fruity character with an elegant, natural sweetness. In the cup, you will find raspberry, red gooseberry, pomegranate, and freshly squeezed lemon, with the overall profile resembling a fruity infusion of red fruits and citruses. The natural process gives it depth and a velvety sweetness, while maintaining a fresh, crisp profile. Perfect for those who enjoy modern, distinctly fruity coffees from Colombia.Colombia El Rosal comes from the Finca El Rosal farm, owned by Wilmer Cubillos, a producer from the Huila region who has focused for years on high-quality specialty varieties and a modern approach to processing. It is there, at an altitude of approximately 1,650 m a.s.l., that the Tabi variety matures – a unique hybrid combining the characteristics of Typica, Bourbon, and Timor, known for its very high sensory potential and intense sweetness. From the very first sip, Colombia El Rosal showcases its juicy, fruity character. Notes of raspberry, red gooseberry, and pomegranate dominate, giving the coffee a distinct, winey-fruity freshness. Lemon acidity brings lightness and energy, keeping the cup remarkably clean and refreshing despite the natural processing. In the background, a sweetness reminiscent of ripe red fruits and fruit syrup emerges, beautifully tying the entire profile together.PROCESSINGThe natural process highlights the intensity of the fruit and builds a fuller structure in the brew, yet the coffee remains very clear and elegant. It is a juicier and fresher natural rather than a heavy, fermenty bomb – with a distinct fruity character, but without excessive funkiness.Store in a cool, dry place.

However, the Bayter family has rapidly transformed the plantation into one of the most advanced in the industry in terms of complex processing and the cultivation of a wide range of selected, highly sought-after botanical varieties, such as Geisha, Pink Bourbon, Laurina, and Pacamara.Currently, ongoing research on bacteria and yeast is being conducted at El Vergel to achieve even greater precision in controlling fermentation and, consequently, modulating flavor. In addition to coffee production, the Bayters are the founders of Forest, a company involved in both the export and import of green coffees, which means we were able to purchase this coffee without the involvement of intermediaries.ABOUT COFFEE PROCESSING AT THE FARMSidra variety, hand-picked, fermented as whole cherries for 72 hours with limited air access, with the addition of must from the fermentation of another botanical variety, Java. This must is a liquid that is produced as a byproduct of coffee fermentation and contains a high concentration of microorganisms—bacteria and yeast. Their increased presence lowers the starting barrier of fermentation, making it more intensive and faster. The result? More intensive formation of metabolites, which have a direct impact on the final, more complex and deeper profile in the brew. The coffee is dried in two stages—first mechanically for 4 days in a temperature-controlled environment, then for 18 days on raised beds. It is homogenized for 30 days in plastic bags.ROASTER'S OPINIONOne of those coffees where you take the first sip and specific descriptors come to the tongue faster than you can consciously think of them. In our case: mango-passion fruit yogurt, without a doubt!ROYAL BEANSWhat’s behind the name Royal Beans? If Speciality beans are the pinnacle of coffee, our Royal Beans reach the Himalayas! COFFEE PLANT - Honduras Sebastian Mejia Honey Filter 250 g

Manufacturer: COFFEE PLANT

Roasting date: 09.04.2026

Whole-bean specialty coffee from Honduras, roasted in Poland by COFFEE PLANT. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. You can expect hints of tropical fruits, strawberry, citrus fruits and flowers.Origin: HondurasFarm: Finca GonzaloVariety: ParainemaProcessing: HoneyAltitude: 1530 m a. s. l.ABOUT THE FARMSebastian Mejía Mejía runs Finca Gonzalo in La Peña, in the Santa Bárbara region of Honduras, at an altitude of 1,530 meters above sea level. He comes from a family of coffee growers who, after moving away from conventional production and spending a period raising cattle, eventually settled in their current location. It was here that Sebastian decided to focus on producing high-quality specialty coffee. The farm covers 2.8 hectares and yields approximately 70 quintals of coffee annually. The main variety is Parainema, complemented by a young Geisha plantation. About half of the coffee is grown under controlled shade. Sebastian uses fertilization based on chicken manure and coffee pulp, supplemented with local blends adjusted according to soil analysis. He regularly prunes the coffee trees and monitors pests and diseases such as coffee borer beetle, coffee leaf rust, and leaf spot. In addition to coffee, he also grows avocados, bananas, and blackberries, while preserving trees and minimizing the environmental impact of farming.PROCESSINGThe coffee is processed using the honey method. The cherries ferment for approximately 36 hours in plastic bags, after which they are depulped and undergo a second, dry fermentation lasting another 36 hours. After fermentation, the beans are dried in parabolic solar dryers for 15–18 days, with regular turning and hand sorting. Once dried, the coffee is packed and stored on the farm before being delivered to the exporter San Vicente. The honey process requires minimal water usage, supporting sustainable and responsible production.ROASTER’S OPINIONSebastian Mejía’s Parainema shows two distinct faces that complement each other exceptionally well. On one hand, it offers medium, well-developed, and complex acidity typical of the Parainema variety. On the other, the influence of the honey process is clearly evident, delivering high sweetness and an intensely fruity, juicy profile. The aroma is very pleasant and enveloping, dominated by notes of ripe strawberries and citrus, supported by subtle floral accents that add lightness and elegance. On the palate, the coffee unfolds in layers: pronounced sweetness of tropical fruits and strawberries combines with lively, clean acidity reminiscent of various ripe citrus fruits.Despite its high sweetness and noticeable acidity, the cup remains very well balanced, smooth, and free of bitterness. The coffee is fresh, refreshing, and extremely drinkable, while still surprising with its intensity and clarity of flavor—especially for a coffee from Honduras. It is a proposition that blends varietal classicism with the modern, fruit-forward character of the honey process.BREWINGUse your preferred method and recipe. Brew this coffee like any other, using water at around 95°C. It is very forgiving and difficult to mess up.                             Store in a cold and dry space.

Founded in 2018 near the town of Palestina in southern Huila, the station was built to support local farmers by providing easier access to coffee processing and sales. Today, 214 nearby farmers deliver their freshly harvested cherries to El Puente—most of them of the Castillo variety.El Puente focuses primarily on honey, natural, and other experimental fermentation methods, all while minimizing water usage. This particular lot is 100% Castillo, processed using the honey method. Upon arrival at the station, cherries underwent an initial selection to remove debris and under- or overripe fruit. Then, they were placed in a water tank to eliminate remaining floaters and defects. Next, the cherries were pulped to remove the skin, and the beans were placed in anaerobic fermentation tanks for 6 hours. Afterward, they were dried on raised beds for about 20 days until reaching optimal moisture content. Finally, the beans were cleaned, vacuum-packed in GrainPro bags, and prepared for export. Thanks to this carefully designed process, the result is a uniform, defect-free coffee with beautifully developed beans—an excellent base for precise roasting.ROASTER'S NOTESInside this bag, you’ll find 100% Castillo – a variety known for its high yield, resistance to fungal diseases, and exceptional balance between sweetness and acidity. In the aroma, you’ll discover sweet notes of strawberry and banana, complemented by delicate floral hints. In taste, these fruity tones dominate, harmonized by a pleasant, grapefruit-like acidity. The texture is well structured on the palate, the deep sweetness is balanced by citric acidity. Fruity sweetness that really lingers on the palate.ABOUT THE FARMEl Vergel is a family operation of two brothers, Elias and Shady, and their mother Marta. Located in Fresno, Tolima, they started as an avocado farm. In 2012 both brothers saw the opportunity to utilise their land to grow specialty coffee. Situated on the slopes of the snowcapped Nevado del Ruiz volcano, the farm benefits from a unique microclimate. Starting with Caturra and Castillo, it was not long before they started expanding their collection of varietals to fully explore the amazing terroir at their disposal. Soon, they were planting Tabi, Pink Bourbon, Pacamara, and Gesha, to name a few. Through experimentation and collaboration, the Bayter family have sought to discover new expressions of Colombia flavour and are renowned for their adaptation of modern processing techniques.THE PROCESSGuava Banana coffee begins with the careful selection of ripe Red and Yellow Caturra cherries. The cherries first undergo a 48 to 60-hour anaerobic fermentation, bringing intense character to the profile. The whole cherries are then dried in the sun on covered raised beds - ""Marquesina"" - until they reach 30% moisture. Then, the cherries are moved to mechanical drying in circular dryers at temperatures below 45°C until they achieve 18%-16% moisture. After a pre-stabilisation stall to intensify flavours, the drying process is completed until optimal moisture is achieved. The beans are then stabilised for 45 days in GrainPro bags, ensuring consistency and quality.Store in a cold and dry space.

The brew resembles the flavour of passionfruit, blackberry and chocolate.Country: KenyaRegion: NyeriFarm: SubraProcessing: Anaerobic Natural (Sleeping Bag)Altitude: 1700-1720 m a.s.l.Variety: Ruiru 11, SL28, SL34Cupping score: 88 / 100ABOUT THE COFFEEIntense, with winey notes and a depth that makes every sip interesting. It stands out for its dark fruit notes and tropical character, while maintaining a distinct structure and being very pleasant in taste. This lot comes from the Ndurutu washing station in the Nyeri Central region of Kenya, where it is grown at an altitude of 1700–1720 meters above sea level. The station has been operating since 1999 and currently works with over 527 smallholder farmers growing mainly SL28, SL34, and Ruiru 11 varieties on volcanic soils. The process is a long, anaerobic natural process with a unique "Sleeping Bag" drying technique: after selective hand-picking and sorting by ripeness, the cherries undergo anaerobic fermentation lasting over 300 hours, and then are dried using the "Sleeping Bag" method, which concentrates sweetness and develops a winey, fruity character in the cup.ROASTER'S OPINIONA strong Kenyan natural coffee with a winey, tropical, and very distinctive flavor profile. Passion fruit and blueberries give it a distinct fruity character, while dark chocolate adds richness and depth. The brew is complex, sweet, and full of character, and the long aftertaste makes all the flavors blend together perfectly.
