It is also a region with a difficult history, where despite many challenges local producers continue to develop and cultivate coffee of the highest quality. This lot was produced as part of the Black Condor Project – an initiative supporting more than 100 independent farmers through fair pricing, training, and access to modern processing infrastructure. The project is led by Emmanuel, a producer raised in a family with a multi-generational coffee tradition. In 2016, together with his family, he established a central processing station to help farmers from more than 15 nearby villages process their coffee in a controlled, quality-focused way. This approach allows for a consistent and clean sensory profile while also significantly increasing the income of the local community. Farmers are offered prices up to 18–20% higher than the market average, and regular workshops on fermentation, drying, and cupping help continuously improve production standards.ABOUT COFFEEColombia La Roma undergoes a classic washed process, which highlights the natural clarity and elegance of Colombian varieties such as Caturra and Castillo. Careful cherry selection, controlled fermentation, and slow drying contribute to a balanced and harmonious flavor profile. In the cup, this coffee offers notes of chocolate and almonds that create a sweet, creamy base. These are complemented by hints of red fruits, bringing freshness and a delicate fruity acidity. The cup is smooth and velvety, with a pleasant, lingering finish. It is an exceptionally versatile coffee that works beautifully as espresso, where its chocolate-nut depth stands out, and equally well in filter methods, where its fruitier and more complex character becomes more pronounced.Colombia La Roma from the KAFAR roastery is an example of classic Colombian specialty coffee – balanced, elegant, and full of character, while also representing the story of the people who are building the future of their communities through coffee.Store in a cold and dry space.

Situated at an altitude of 1,900–2,100 meters above sea level, the farms benefit from a cooler climate, fertile soils, and large temperature differences between day and night. Such conditions favor the slow ripening of the cherries, allowing the beans to gradually develop their natural potential.Coffee trees grow among traditional, diverse crops that provide natural shade. The cherries are harvested by hand, and only fully ripe cherries are selected for further processing. Subsequently, they are processed using the natural method on raised beds, where they require regular turning and careful monitoring throughout the entire drying period. This process allows the origin's character to be preserved and the full potential of the bean to be brought out.ABOUT THE COFFEENotes of mandarin, milk chocolate, and spices dominate in the cup. Citrus accents combine with a chocolate character, while spicy notes complete the whole, creating a cohesive and harmonious flavor profile. This is a coffee that demonstrates the classic character of high-quality coffees from southern Ethiopia, in a version crafted specifically for pour-over brewing methods.Store in a dry and cool place.

I would never have made it to the Chiapas region in Mexico, and certainly not to Los Altos – the northeastern highlands of Chiapas, located about two hours from the state capital, San Cristóbal de las Casas.Andreas was my guide back then, and today he’s one of the funniest friends I have. Even though he now lives far away in the state of Veracruz, we still talk often. Coffee regions in this country are places where you need a pass – or at least a Mexican passport – to truly feel safe. During the long hours on the road, Andreas told me about the challenges local farmers face and about the NKG BLOOM program. In short, it’s an initiative supporting coffee producers around the world. Its goal is to help farmers develop their farms by providing access to financing, knowledge, modern technologies, and markets. This enables them to work more efficiently, increase their income, and lift themselves out of poverty. Traveling from farm to farm and visiting coffee warehouses, you could truly feel the financial and technological support behind the program. The state of Chiapas, where this coffee comes from, borders Veracruz and Oaxaca to the west, Tabasco to the north, and Guatemala to the east. It’s the same region, and the farms there are often just 20–30 kilometers apart. Yet traveling between them can take two to three hours due to road conditions. Despite such short distances, the flavor of the same botanical variety differs greatly from farm to farm. Microclimate and soil play a huge role.ABOUT THE COFFEEOur El Búho is a blend of Bourbon and Caturra varieties. It is a washed coffee. In the cup, you’ll find plenty of sweetness, reminiscent of milk chocolate and caramel. There is minimal yet noticeable fruitiness, bringing to mind mandarins or sweet oranges. As an espresso, it leans toward the sweeter side, lingering pleasantly on the palate. In milk-based drinks, it develops notes of toffee with a smooth texture.Mexico is an underrated coffee producer. Its complex history and current political situation do not make coffee imports easy – only 2% of the world’s available Arabica comes from this country. That makes us even more excited to shine a light on this origin and the coffees of the Chiapas region.Store in a cold and dry space.
