I would never have made it to the Chiapas region in Mexico, and certainly not to Los Altos – the northeastern highlands of Chiapas, located about two hours from the state capital, San Cristóbal de las Casas.Andreas was my guide back then, and today he’s one of the funniest friends I have. Even though he now lives far away in the state of Veracruz, we still talk often. Coffee regions in this country are places where you need a pass – or at least a Mexican passport – to truly feel safe. During the long hours on the road, Andreas told me about the challenges local farmers face and about the NKG BLOOM program. In short, it’s an initiative supporting coffee producers around the world. Its goal is to help farmers develop their farms by providing access to financing, knowledge, modern technologies, and markets. This enables them to work more efficiently, increase their income, and lift themselves out of poverty. Traveling from farm to farm and visiting coffee warehouses, you could truly feel the financial and technological support behind the program. The state of Chiapas, where this coffee comes from, borders Veracruz and Oaxaca to the west, Tabasco to the north, and Guatemala to the east. It’s the same region, and the farms there are often just 20–30 kilometers apart. Yet traveling between them can take two to three hours due to road conditions. Despite such short distances, the flavor of the same botanical variety differs greatly from farm to farm. Microclimate and soil play a huge role.ABOUT THE COFFEEOur El Búho is a blend of Bourbon and Caturra varieties. It is a washed coffee. In the cup, you’ll find plenty of sweetness, reminiscent of milk chocolate and caramel. There is minimal yet noticeable fruitiness, bringing to mind mandarins or sweet oranges. As an espresso, it leans toward the sweeter side, lingering pleasantly on the palate. In milk-based drinks, it develops notes of toffee with a smooth texture.Mexico is an underrated coffee producer. Its complex history and current political situation do not make coffee imports easy – only 2% of the world’s available Arabica comes from this country. That makes us even more excited to shine a light on this origin and the coffees of the Chiapas region.Store in a cold and dry space.

Processed using the washed method, they retain a clean, elegant character, keeping the sweetness of chocolate and the juiciness of red fruits in perfect balance. We chose this coffee because it is a great alternative to classic Brazilian espresso. It brings together hundreds of smallholder farmers who collectively work to improve the quality of their harvests. The cooperative focuses on conscious cultivation practices: running training programs, seedling nurseries, and maintaining shade trees that protect coffee plants while enriching the plantation’s microclimate. You can taste the result of this care in Malolo coffee – clean, vibrant, and well-balanced, as if every small effort from the farmers came together in one clear profile. The cherries are hand-picked, usually in several passes through the trees to ensure only fully ripe fruit is selected. They are then delivered to the washing station, where they are pulped, fermented, washed, and dried either on patios or raised beds until they reach the right moisture level. This straightforward, classic method produces a transparent profile that highlights bright citrus and herbal notes.ROASTER’S NOTESThis year’s Tanzanian harvest kept surprising us. It delivers the clarity and brightness we always look for in African coffees – beans with real flair, you could say! Malolo is no exception. This particular lot surprised us with an extra nuance of nougat. It is characterized by two types of climate: cool and temperate. Coffees from this area differ from the rest of Huila – they are more acidic and delicate, with distinct fruity notes. Our coffee comes from a selected group of producers from the upper part of the Palestina municipality, located at an altitude of approximately 1700 m a.s.l. This group of farmers specializes in cultivating varieties such as Tabi and Caturra.Cooperativa Departamental de Caficultores del Huila Ltda. (CADEFIHUILA is a non-profit organization and one of the most important coffee cooperatives in Colombia. It spans 27 municipalities and operates a support network consisting of 45 coffee purchasing points, 46 fertilizer stores, 36 agricultural supply stores, 16 permanent cupping laboratories, one mobile laboratory, and 7 drying service points. CADEFIHUILA implements programs aimed at achieving high production standards on farms. These standards are based on codes of conduct such as Fairtrade, Rainforest, 4C, and C.A.F.E. Practices. The development of certification processes for these specialty coffees allows the cooperative to meet market demand for coffee purchased under specific, ethical conditions.ABOUT THE VARIETYCaturra is a coffee variety that originated as a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais, Brazil, between 1915 and 1918. The name "Caturra" comes from the Guarani word meaning "small," referring to the plant's dwarf stature. Due to its small size and densely spaced branches, it can be planted closely together, increasing the yield per area. Caturra contributed to the intensification of coffee farming, particularly in Central America, where it was introduced in the 1940s. This variety also played a crucial role in breeding coffee trees resistant to coffee leaf rust, contributing to the creation of the "Catimor" family of varieties.Tabi is a relatively young variety developed in Colombia as a cross between Bourbon, Typica, and the disease-resistant Timor Hybrid. The word "Tabi" comes from the language of Colombia's indigenous people and means "peace" or "life."ABOUT THE PROCESSINGThe coffee undergoes a traditional washed process, which begins with the harvesting of ripe cherries. They are weighed and left for 24 hours in a processing tank. Next, the beans are depulped and placed in a water tank, where they are rinsed twice after approximately 12 hours. Finally, the coffee is sun-dried or machine-dried, depending on the producer's facilities.RECIPERatio: 16.5g (dose) / 36g (yield). Water temperature: 94°C. Grind size: Very fine. When Rafał joined the team and sat down with us for his first cupping, he blurted out right away: "Hey, I think you've never had a coffee from Burundi, and I like them so much!" We had, but a long time ago! So we decided to make Rafał's life a little nicer, ordered samples, and chose this (and one more!) great lot.Located in Ngozi Province, the Mubuga processing station collaborates with over 1,900 local farmers who deliver their carefully selected harvests here every year. This place stands out for its impressive technical infrastructure created for the precise processing of only the finest, fully ripe cherries. The station's facilities include as many as 12 fermentation tanks, 3 soaking tanks, over 300 drying beds, and 4 specialized tables for quality sorting.Harvesting in this region usually lasts from April to June, but this coffee's journey to your cup only begins then. Burundi is a completely landlocked country – before these exceptional beans head out into the world and reach our roastery, they must travel an extremely long, demanding, and complex route.Store in a cool and dry place.
Kafar - India Bababudangiri Washed Espresso 250 g

Manufacturer: KAFAR

Roasting date: 09.10.2026

Whole-bean specialty coffee from India, roasted in Poland by Kafar. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The cup is filled with notes of cocoa, walnut and tobacco leaf. Country: GuatemalaRegion: AcatenangoFarm: Perez family's farmsProcessing: WashedVarietal: Caturra, Bourbon, SarchimorABOUT THE COFFEEThe cup is dominated by cocoa, walnut, and subtle notes of tobacco leaves. The profile is full and smooth, with very low acidity and a pleasantly long, dry finish. This character is shaped by both the growing location and the processing method. The coffee comes from the Chikmagalur region in the state of Karnataka—a mountainous part of India considered the birthplace of Indian coffee. According to legend, it was here that Baba Budan brought the first coffee seeds from Yemen, laying the foundation for Indian coffee cultivation. Today, on the slopes of the Bababudangiri range, surrounded by the extraordinarily rich nature of the Western Ghats, grows an Arabica with an exceptionally classic character.Chinennahally Estate has been owned by a single family for over 70 years. The coffee trees grow under a two-tier shade of native trees, and only mature cherries are selected during harvesting. After being processed using the washed method and sun-dried, the beans retain a clean, elegant profile where chocolate and nutty notes take center stage. We chose this coffee because it is a great example of classic Indian Arabica. Without excessive fruitiness, but with depth, a velvety body, and a character that will be appreciated by both espresso lovers and those looking for a calm, everyday cup. This is coffee from the place where the history of Indian coffee began—and in our opinion, you can taste that tradition in it.Store in a cool, dry place.

First, a dessert-like base of sponge fingers. Then plenty of sweetness, notes of almonds and that sweet-bitter amaretto accent. This coffee comes from Huila, Colombia, and follows a classic washed process. The beans are sourced from small-scale producers working on a few hectares each, where selective picking and controlled fermentation are the norm rather than the exception. Depulped on the day of harvest, fermented for 12–36 hours, then thoroughly washed and dried to the desired moisture level. The result is a clean, structured base that translates into clarity and balanced sweetness in espresso.Caffeine is removed using the EA (ethyl acetate) method. It is a compound that occurs naturally in fruit and as a by-product of sugar fermentation. The green coffee, already processed, is first steamed under low pressure to open up its structure. It is then placed in a water-EA solution, which binds to the caffeine molecules. The process is repeated until caffeine is no longer detectable. Finally, the coffee is steamed once more to remove any remaining traces, then dried and prepared for export. The result is a decaffeinated espresso that feels complete. Sweet, expressive and simply good.Store in a cold and dry space.
