But as it happens, until now these were mainly anaerobic, extended natural, and similar processes. In other words, the kind where the processing itself heavily influences the coffee's character. This time, however, we are offering you a washed coffee from Indonesia – it allows you to truly taste the origin.Frinsa is an estate that has been operating since 2010. It is run by a married couple, Wildan Mustofa and Atieq Mustikaningtyas. It consists of six farms with a total area of 105 hectares and its own washing station with a laboratory for anaerobic processing. Since its inception, the estate has focused on quality coffees. Initially, this was primarily related to producing coffees using the washed process, which is rare in Indonesia. Later, experimental processes were added to the mix. Thanks to the experience of the Mustofa and Mustikaningtyas couple and continuous investment in infrastructure, these coffees are always of the highest standard.ROASTER'S OPINIONThis is our first washed bean from Indonesia. His father was a legend of Guji during his lifetime, building the region's first wet mill in the early 2000s, whose infrastructure began to be used by small producers of the Bule Hora community. When the Ethiopian government liberalized export regulations in 2018, which practically opened up opportunities for smallholders to sell their coffee outside the country, Tagel founded the Olkai company and, in addition to exporting, also took over the coordination of the Hambela Goro mill.The coffee comes from 460 small producers in the area, from an impressive altitude of approx. 2,300 meters above sea level. They cultivate the local 74110 variety here, and many of them own only a few hundred trees. The organization, standards, and cleanliness at Hambela Goro made a big impression on us, as did the incredibly clean and consistent lots that we had the opportunity to taste fresh while still on site.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMVariety 74110, hand-picked by 460 small producers from around Hambela Goro, depulped, and then fermented in a tank for 48 hours. Washed, dried on raised beds for 12 days.ROASTER'S OPINIONA washed Ethiopian classic in its pure form. Last season we had Sambewe as a natural process; this time, the washed version is arriving. Located at an altitude of over 1500 m a.s.l. on fertile, volcanic soils, it is a rare example of a full-scale plantation in a country dominated by small, backyard crops.The site employs chemical-free practices with an emphasis on a sustainable approach and natural shading, which supports even ripening of the fruit. Harvesting is done by hand, selecting only fully ripe cherries, which allows the proper balance of sugars and acidity to be maintained at the raw material stage. The processing is a classic washed method with extended fermentation. The beans ferment for three days, during which they are rinsed daily, followed by an additional day of fermentation. After this stage, the coffee is sun-dried for a minimum of 21 days and undergoes multi-stage sorting, which translates into the clarity and repeatability of the profile.ROASTER'S OPINIONThe opinion of Filip Ślęczek – our head roaster: Papua New Guinea – we haven't had coffee from this region for several years. And when it finally appeared, it made its way to Coffeedesk! It is safe to say that this is an unusual daily coffee. You will find a lot of clean, halva-like sweetness, broken by the acidity of dark grapes (you certainly know the taste of thick grape skin), with the whole subtly seasoned with a hint of thyme. It brings together 160 small producers living in the Mbozi region, less than 70 km from the border with Zambia. Recently, in 2019, the cooperative built a central washing station, thanks to which all harvested cherries are processed on-site. Naturally, this boosted the quality of the final product and made exporting outside Tanzania easier – and as a result – increased the cooperative's profit.ABOUT THE PROCESSING OF COFFEE BEANS ON THE FARMThe Bourbon variety, hand-picked, is delivered on the same day to a small washing station owned by the cooperative. After the depulping process, which separates the seed from the fruit, it is sorted by bean size and then separately fermented in a tank for 10 hours. Washed and dried on raised beds for 10 days.ROASTER'S OPINIONOne could say that high-quality lots from Tanzania are a wonderful rescue that comes outside the fresh Kenya season. Jammy, fruity, and juicy. And that is exactly the case here. We are happy to put Itumpi into the roaster for another year in a row!Store in a cool and dry place.
