The area is known not only for its fertile soil but also for the small family farms that have been growing coffee here for generations. Agriculture is deeply rooted in the local culture – coffee cherries are hand-picked and farmers pay close attention to every detail of the harvest and processing. The Sambewe processing station works with more than 400 smallholder farmers who bring their carefully hand-picked cherries to it.For this particular batch, only Peaberry beans were selected, which give the coffee a unique flavor profile. After hand-picking, the floaters were sorted from the coffee and then the coffee was hulled and sent to fermentation tanks, where after 18-36 hours of fermentation, the beans were freed from the remaining pulp. After washing in channels, the subsequent beans were spread out in parchment on African beds, where they are dried for an average of 14-30 days depending on the weather. Plenty of floral and citrus notes, just right for bright summer days.RECIPE V6016g of coffee250g of water 96°CMedium Grind Size 1. Put a paper filter in your V60 and rinse it with hot water ( 96C ). It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that  98,5 % of your brewed coffee is water)2. Remove the rinsing water from the server.3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.8. At 00:50 pour hot water to 200g. 9. At 01:10 pour hot water to 250g.10. Swirl your V60 and let the coffee drip. 11. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long. Sofie from Sucafina recommended that we contact Alfonso from Café Monteverde and his Timuyacu farm, as his philosophy and values in the pursuit of quality, caring for his people, and protecting the environment aligned with NOMAD values.Alfonso sent us samples of several of his lots, including this Washed Bourbon from Colasay Washed was a perfect fit for what we were looking for. A sweet, easy-drinking coffee, slightly fruity but not overly so, ideal for one of our house coffees.ABOUT THE FARMTimbuyacu comes from the Quechua words Timbu (boiling) and Yacu (water), referring to a natural water spring located within the farm, where the water bubbled up as if it were boiling. This farm has a long family history, from Alfonso's grandmother, Eleodora Mori de Ibérico, to the present day, where Alfonso is in charge of the care, sale, and export of the coffee. The farm is divided into several plots: Vista Hermosa, El Mirador, Pirruro, Nuevo México, Alto Timbuyacu, Jergón, El Shapingo, El Pante, La Cabaña, Quishtucto, Pileta, and Las Peñas. This particular lot comes from the El Pante plot, named for the predominant presence of native Pante trees distributed throughout it.The farm works with a regenerative approach, recovering degraded soils through the use of organic matter, agroforestry systems, and comprehensive management from germination to post-harvest. This is something we greatly value at NOMAD.In short, we are grateful to have met and started this relationship with Timbuyacu and hope to have their coffees from now on. This commercial relationship has been directly facilitated by Sucafina's help in importing and financing the lot.ABOUT THE PROCESSThe coffee is selectively hand-picked and pulped in a drum pulper. After pulping, it is fermented for 18 to 24 hours and washed with clean water. The resulting parchment is placed on drying beds or patios where it is regularly turned to ensure even drying.The drying process takes approximately 15 to 20 days. Once dry and at the required moisture level, the parchment is stored on the farm for approximately 60 days before being transported to the dry mill for threshing and export.Store in a cold and dry space.

Following family financial struggles, Tagel set a goal to rebuild what was lost—and he realized this plan by creating a modern, quality-focused project based on collaboration with local farmers.Today, Hambela Goro works with 460 small-scale producers, many of whom own only a few hundred coffee trees. Although each batch is a natural composition of many micro-plots, the coffee maintains impressive consistency and a clean profile.ABOUT THE COFFEEThis lot is the 74110 variety—a selection originating from the JARC research program, known for its high sensory quality and clarity in the cup. Combined with the altitude of 2300 m a.s.l., it yields a coffee with a distinct structure, elegant acidity, and multi-layered aromatics.The washed processing was carried out with great precision. Cherries are harvested at peak ripeness, hand-sorted multiple times, and then, after depulping, fermented in water for approximately 48 hours. First comes the sweetness of ripe pear and red apple, followed closely by notes of wild strawberry and red currant, with the whole experience rounded off by a pleasant, rhubarb freshness. It is a light coffee on the palate, with a tea-like structure and delicate intensity.ABOUT THE PROCESSINGThe exceptional character of this batch is greatly influenced by the Extended Fermentation Fully Washed processing method. The process begins with the manual harvesting of only fully ripe fruits. Next, the coffee cherries go to a depulper, which separates the skin and most of the pulp from the beans. At this stage, the beans are still covered with a layer of mucilage.The next step is extended fermentation. In contrast to classic washed processing, where fermentation usually lasts from a dozen to several dozen hours, here the process is intentionally prolonged and carefully controlled. Microorganisms naturally occurring on the surface of the fruit break down the remaining pulp, while creating aromatic compounds responsible for a greater complexity of flavor. The high altitude and iron-rich, acidic soils of the region contribute to the bright, floral character for which classic Yirgacheffe coffee is famous. His father was a legend of Guji during his lifetime, building the region's first wet mill in the early 2000s, whose infrastructure began to be used by small producers of the Bule Hora community. When the Ethiopian government liberalized export regulations in 2018, which practically opened up opportunities for smallholders to sell their coffee outside the country, Tagel founded the Olkai company and, in addition to exporting, also took over the coordination of the Hambela Goro mill.The coffee comes from 460 small producers in the area, from an impressive altitude of approx. 2,300 meters above sea level. They cultivate the local 74110 variety here, and many of them own only a few hundred trees. The organization, standards, and cleanliness at Hambela Goro made a big impression on us, as did the incredibly clean and consistent lots that we had the opportunity to taste fresh while still on site.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMVariety 74110, hand-picked by 460 small producers from around Hambela Goro, depulped, and then fermented in a tank for 48 hours. Washed, dried on raised beds for 12 days.ROASTER'S OPINIONA washed Ethiopian classic in its pure form.
