The company was founded by Syoum and Emame, and is currently run by their grandchildren. Bette Buna is committed to improving the quality of life for its community members – it teaches local farmers how to improve soil quality, restore agroforestry systems, and understand the importance of harvesting ripe cherries. Ripe cherries weigh more and yield better coffee, so farmers receive higher pay per kilogram, as well as a quality premium. The company also distributes over 350,000 seedlings from its own nursery every year.Fun fact: The coffee underwent a decaffeination process at the Coffein Compagnie using a solution of water and ethyl acetate, which occurs naturally in sugar cane, coffee, and fruits. Its captivating and complex flavor profile is characterized by floral notes, fruitiness, juicy acidity, and honey-like sweetness.This exceptional coffee was produced using a method developed at El Vergel Estate, employing Aspergillus oryzae, a fungus renowned for its ability to enhance flavor profiles. The conditions of the region favor slower fruit ripening, which is important for the development of sweetness, acidity, and the structure of the brew.On local farms, coffee is often grown alongside other crops, such as tea, avocado, macadamia, or mango. This is an important element of the farmers' daily operations, as it increases the economic stability of the farms.ABOUT THE VARIETYThis coffee features SL28, SL34, and Batian. SL28 and SL34 are responsible for the classic Kenyan profile: high acidity, fruitiness, and a long, clean finish. Batian is a newer variety, introduced among other reasons for its greater disease resistance and better production stability.The combination of these varieties yields a coffee with a distinct regional character, with a good balance between intensity and clarity of the profile.ABOUT THE PROCESSINGCoffee cherries are selectively picked and delivered to the station after harvest. After removing the skin and part of the pulp, the beans undergo fermentation, are then washed with fresh water, and dried on raised beds. During drying, the coffee is regularly turned so that the process proceeds as evenly as possible.At Karimikui, a mechanical pulper is also used, which helps reduce water consumption. Coffee cherries are delivered to it by over 1,700 small-scale producers who grow coffee mainly on small plots of land.The crops are situated at an altitude of approximately 1,700–1,800 meters above sea level. The region is characterized by red volcanic soils, good access to water, and conditions that favor slower ripening of the fruit. Longer ripening can support the development of sweetness, acidity, and a more complex sensory profile.This is a classic Kenyan production model: small farms, a central washing station, fruit selection, and a consistently managed process. Simple. Effective. Good.ABOUT THE VARIETYThe dominant varieties are SL28 and SL34. These are classic Kenyan Arabica varieties, valued for their high sensory potential, especially in terms of vibrant acidity, fruitiness, and the structure of the brew.Batian and Ruiru 11 may also appear in smaller quantities, which are varieties introduced, among other reasons, for the plants' greater resistance to diseases. However, the character of this coffee is primarily built by SL28 and SL34.ABOUT THE PROCESSINGAfter harvest, the coffee cherries are delivered to the station and sorted. Then, the skin and part of the pulp are removed from the fruit, and the beans undergo fermentation, washing, and drying on raised beds. His father was a legend of Guji during his lifetime, building the region's first wet mill in the early 2000s, whose infrastructure began to be used by small producers of the Bule Hora community. When the Ethiopian government liberalized export regulations in 2018, which practically opened up opportunities for smallholders to sell their coffee outside the country, Tagel founded the Olkai company and, in addition to exporting, also took over the coordination of the Hambela Goro mill.The coffee comes from 460 small producers in the area, from an impressive altitude of approx. 2,300 meters above sea level. They cultivate the local 74110 variety here, and many of them own only a few hundred trees. The organization, standards, and cleanliness at Hambela Goro made a big impression on us, as did the incredibly clean and consistent lots that we had the opportunity to taste fresh while still on site.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMVariety 74110, hand-picked by 460 small producers from around Hambela Goro, depulped, and then fermented in a tank for 48 hours. When Alberto Guardia took over the farm in the 1970s, he focused on coffee as the main source of income and began a transformation that forever changed its character.A pivotal moment came in 1999 — during the price crisis, Alberto decided to invest in his own mill and alternative processing methods like natural and honey. That’s when Hacienda Sonora became a pioneer of quality in a country historically known almost exclusively for washed processing.Today, the farm is co-managed by Alberto’s son, Diego Guardia, who blends family traditions with a modern approach to quality, experimentation, and selection. Over 80 hectares are dedicated to more than 20 botanical varieties, each treated as a unique project.ABOUT THE COFFEEThis exceptional batch is SL28 — a legendary variety known for its incredible purity and elegance, especially in Kenya, but under Hacienda Sonora’s conditions, it achieves extraordinary clarity and finesse. Grown at an altitude of about 1300 meters above sea level, it offers a cup full of juiciness, delicate structure, and refined sweetness.The natural processing was carried out with great precision: selectively picked cherries are first separated by floatation, then dried whole on black tarps for about 12 days, with full control over airflow and humidity. After the initial drying, the coffee matures, undergoes final drying at low temperatures (up to 35°C), and then rests for two months before being hulled and hand-sorted.In the cup, the coffee is light, juicy, and incredibly clean for a natural – with dominant notes of raspberry and ripe melon, complemented by a delicate, tea-like tannin of black tea. The finish is long, elegant, and sweet, with no heaviness or excessive fermentation. This is a natural in the Hacienda Sonora style: precise, harmonious, and incredibly drinkable.We always roast the coffee fresh, so when it arrives to you, it’s just a few days old. In some cases, we extend the processing time to 3 business days due to our roasting schedule at Kaizen Coffee.Store in a cold and dry space.
