After this time, all flower residues are rinsed out, and the coffee is sent to dry. So much for the processing, and now a few interesting facts about the Simalem farm where this coffee comes from. It is located in the highlands of North Sumatra. This region, thanks to its fertile, volcanic soils and cool climate, offers ideal conditions for growing coffee. The Simalem farm operates in a sustainable manner, without the intensive use of chemicals, and its practices are certified and transparent. Johan Kwe is responsible for the quality of the processing; he is the only certified Q Processing Professional in Indonesia, meaning he possesses the best available knowledge in the field of coffee processing.ROASTER'S OPINIONOfficially the first co-ferment in the history of our roastery. Now in the trusted hands of his son, Diego, Los Pirineos continues to deliver the unexpected. At 1400 metres above sea level, Los Pirineos sits on volcanic slopes amongst lush forest. The microclimate around the volcano provides sun-filled days and cool breezes that are ideal for growing and drying. In the drying area of the farm, raised beds are positioned between two peaks which consistently channel the wind across the drying coffee. With twelve hours of sun per day, this creates an ideal environment for Honey and Natural processing. Quality and responsibility are central to the way Diego works. All the water used in processing is from collected rain, and bees are kept on the farm to help pollination across the farm and surrounding forest. With more than 60 employees, Diego ensures year round employment on projects across the farm.ABOUT THE PROCESSOur Pacamara lot underwent Black Honey processing. After harvest, ripe cherries are pulped but almost all of the mucilage is left intact. The pulped coffee is then spread in a thin layer on shaded raised drying beds. The shade slows the drying process compared to the other Honey processes used on the farm. Red Bourbon cherries are hand-picked by families, floated, and sorted before pulping. Honey process – part of the mucilage remains on the parchment, followed by drying on raised beds for 2–3 weeks. Each lot is evaluated by the Greenco cupping team, and every bean is sorted by hand at the Budeca mill. IMPACT certified – the purchase supports the Livestock for Living Income project.ROASTER'S OPINIONKibingo is a classic Burundian honey with a sweet, structured, and very approachable profile. Sweet citrus and caramel bring warmth and brightness, while black tea provides structure and a clean, long finish. The cup is smooth, balanced, and easy to read, with a natural sweetness tying it all together. Expressive yet calm and highly drinkable – a great everyday coffee.RECIPEIt works best as filter coffee when you are looking for something sweet, balanced, and easy for daily brewing. Use a V60, Chemex, or batch brew, grind medium-coarse, and brew with water at 92–94°C to preserve the caramel sweetness and citrus brightness without losing the tea-like structure.In an AeroPress, the coffee becomes slightly fuller and rounder – the note of caramel steps into the foreground, and the body becomes a bit richer. Still clean, just more compact and warming. As it cools, the black tea character becomes more distinct and the citrus sweetness more noticeable – the cup gets smoother and more elegant. This region is located between the Andean mountain ranges, at an altitude of 1400–1700 meters above sea level, where lower temperatures and volcanic soils slow down the ripening of the coffee cherries and promote dense, high-quality beans.
