Now in the trusted hands of his son, Diego, Los Pirineos continues to deliver the unexpected. At 1400 metres above sea level, Los Pirineos sits on volcanic slopes amongst lush forest. The microclimate around the volcano provides sun-filled days and cool breezes that are ideal for growing and drying. In the drying area of the farm, raised beds are positioned between two peaks which consistently channel the wind across the drying coffee. With twelve hours of sun per day, this creates an ideal environment for Honey and Natural processing. Quality and responsibility are central to the way Diego works. All the water used in processing is from collected rain, and bees are kept on the farm to help pollination across the farm and surrounding forest. With more than 60 employees, Diego ensures year round employment on projects across the farm.ABOUT THE PROCESSOur Pacamara lot underwent Black Honey processing. After harvest, ripe cherries are pulped but almost all of the mucilage is left intact. The pulped coffee is then spread in a thin layer on shaded raised drying beds. The shade slows the drying process compared to the other Honey processes used on the farm. The plantation grows traditional Bourbon varieties. The Salaverrias apply an innovative approach both to processing and farm management. Coffee cherries are sorted by harvest day and then processed using different fermentation and drying methods, tailored to the potential of each lot. This approach allows them to bring out the best sensory qualities of every batch and offer coffees with truly distinctive profiles.José Antonio Salaverria and his sons, Andrés and José Antonio Junior, represent the sixth and seventh generations of coffee producers from Huachapán. In recent decades, the family has focused on top-quality coffees, implementing programs that select plots based on altitude, quality potential, and growing conditions. Their main production areas are Santa Rita, San Francisco, and El Molino, located around the Santa Ana volcano.Traditional varieties dominate on the Salaverria farms, such as Bourbon Elite and Híbrido San Francisco, a hybrid of Bourbon and Pacas. The family is known for its innovative approach to coffee cultivation and processing. They experiment with various fermentation methods to optimize quality and create lots with standout sensory profiles. Each farm is divided into smaller plots called tablones, allowing for precise crop management and the creation of meticulously described microlots. In response to challenges such as coffee leaf rust, the Salaverrias have focused on soil regeneration and strengthening plant resilience. They produce their own organic fertilizer called Huisil, made from organic waste, mainly coffee pulp as well as fish and animal by-products. Currently, they use a blend of 50% Huisil supplemented with mineral components such as nitrogen, potassium, boron, and zinc. They also apply various pruning methods adapted to tree height and variety to maintain productivity and plant health.The Salaverrias place great importance on staff management and providing fair working conditions. Farm managers receive bonuses based on harvest quality, and many workers are employed on a permanent basis, fostering a committed and experienced team. Between 50 and 60 people live and work directly on the farms, and coffee pickers are offered competitive wages along with optimized work systems that allow them to finish earlier in the day, giving them more time with their families.The family also invests in local social infrastructure. Near one of the farms in San Francisco, housing has been built for seasonal workers and access to medical care has been ensured. Doctors regularly visit the plantations, and the family supports local clinics, including two they built themselves in Ataco. In addition, they donated land for the construction of two public clinics and supported the development of a local school and a football field. Over 80 hectares are dedicated to more than 20 botanical varieties, each treated as a unique project.ABOUT THE COFFEEThis exceptional batch is SL28 — a legendary variety known for its incredible purity and elegance, especially in Kenya, but under Hacienda Sonora’s conditions, it achieves extraordinary clarity and finesse. Grown at an altitude of about 1300 meters above sea level, it offers a cup full of juiciness, delicate structure, and refined sweetness.The natural processing was carried out with great precision: selectively picked cherries are first separated by floatation, then dried whole on black tarps for about 12 days, with full control over airflow and humidity. After the initial drying, the coffee matures, undergoes final drying at low temperatures (up to 35°C), and then rests for two months before being hulled and hand-sorted.In the cup, the coffee is light, juicy, and incredibly clean for a natural – with dominant notes of raspberry and ripe melon, complemented by a delicate, tea-like tannin of black tea. The finish is long, elegant, and sweet, with no heaviness or excessive fermentation. This is a natural in the Hacienda Sonora style: precise, harmonious, and incredibly drinkable.We always roast the coffee fresh, so when it arrives to you, it’s just a few days old. They also saw that roasters around the world had a difficult time getting consistently great coffees from Burundi. In an effort to see positive change in both farmers and roasters' lives, Long Miles Coffee was born. Long Miles Project is a farmer-driven coffee production model. They work with coffee farming families on eleven unique hills within Burundi. Long Miles create traceable micro-lots that yield consistently great coffees while improving the livelihoods of the small holding farmers who grow them. Here are three of the most important ways to do this: 1. The farmers who grow coffee on the eleven hills receive year-round agricultural assistance through one of the twenty-six Long Miles Coffee Scouts who are trained agronomists. 2. Long Miles pay higher prices for coffee cherries as well as annual premiums. 3. They strengthen relationships between roaster and farmer so they can serve coffee from a specific hill year after year.THE PROCESSThe traditional Burundian process is fully washed: freshly harvested cherries are delivered by coffee farmers to the washing station, then floated and hand-sorted for ripeness upon arrival. The cherries are pulped and undergo a single fermentation process. This allows for better control of fermentation and the development of aromatic complexity.ROASTER’S OPINIONKenyan coffees processed using the sleeping bag method are still rare, which is why this lot immediately caught my attention. Whole-cherry fermentation combined with controlled drying resulted in an unusual profile that is softer than classic washed Kenyan coffees.In the cup, you’ll find notes of nectarine, blackberry, and tea, with a subtle chocolate accent in the background. The acidity is medium and well-balanced, and the overall profile is very clean and cohesive for a natural process.This coffee shows a different side of Kenya: less aggressive, more juicy and calm, yet still full of character. Much like in Kenya, the volcanic soil here is extremely rich in minerals and nutrients, which translates directly into a complex and sweet cup profile. Bourbon is produced here by nearly 500 smallholder farmers living around the washing station. Nearby lies Nyungwe National Park, known for its pristine forests and a significant protected population of gorillas. The water used during processing comes from a natural spring.Cyiya supports its local community in several ways, including providing training for producers and distributing coffee seedlings and shade trees free of charge. At the same time, it promotes environmental protection through conservation programs and wastewater treatment initiatives.ABOUT THE COFFEE PROCESSING AT THE FARMThe Bourbon variety is hand-picked and undergoes an initial selection before being delivered to the mill. The next stage involves soaking the cherries in water to separate the under-ripe ones, which float to the surface instead of sinking. After the beans are separated from the fruit, they undergo fermentation in tanks for 18 hours, followed by washing and drying on raised beds for approximately two weeks.ROASTER'S OPINIONEvery year we get excited about fresh Rwandan coffees and pack these beautiful beans into jars. This is where the fruit is depulped, fermented, and dried. The coffee cherries processed at Bulambuli are sourced from 200–400 local farmers. The high altitude of the area favors the production of high-quality coffees. The processing at Bulambuli is carried out by specialized staff who ensure precise and controlled conditions throughout the entire process.The region primarily grows the SL14, SL28, and SL34 varieties, which are also characteristic of Kenya. The cherries come from small family farms with an area of less than 1 hectare. These farms are located in parishes—local administrative communities consisting of 7 to 12 villages, often with as few as 200 inhabitants. Farmers typically work in groups led by a designated leader.The harvest of East Ugandan coffee takes place from August to January. In lower-lying areas, the season falls between August and October, while at higher altitudes, it lasts from September to January. Farmers sell their cherries at small collection points or deliver them directly to the washing station. There, the fruit is sorted and then—depending on the method—sent for depulping (washed process) or to the drying yard in Mbale (natural process).ROASTER'S OPINIONSurprisingly sweet, with notes of chocolate and almond, complemented by a light hint of forest and stone fruits.
