This time in a special summer edition. We are continuing our series of seasonal releases inspired by fruity classics, and now we are turning to one of the most sought after summer pastries of all: the blueberry bun.FROM THE ROASTERYWhen Karolina asked for a coffee that tasted like a blueberry bun, our thoughts went straight to Burundi. Naturals from this origin can deliver exactly what we were looking for: plenty of dark fruit, pronounced sweetness and a round, smooth structure. Here, the blueberry flavour blends with a sweetness reminiscent of crumble topping, while the dense and velvety texture brings to mind a soft, buttery pastry. A blueberry bun in coffee form, only with caffeine instead of icing.ABOUT THE COFFEEHafi comes from Muyinga Province and from one of the newest washing stations working with JNP Coffee. The name itself means “close” in Kirundi and refers to a very real change in the lives of local producers. Before the station was built, some of them had to travel up to 20 kilometres to deliver freshly harvested cherries to the nearest mill. In the region’s hilly terrain, that journey was often too long for processing to begin on the same day. And the sooner the harvested fruit reaches the station, the easier it is to preserve its quality and the flavour potential of the green coffee.The new station shortened that distance and gave producers better control over freshly picked cherries. Around 2,000 farmers work with it, while the team itself is made up of people who gained experience at other mills across the region. We chose Hafi as a natural once again because everything works together so well here. The process highlights its dark fruit sweetness, gives the coffee a fuller character and moves the profile towards a rounded, dessert like cup.Plenty of blueberries, plenty of sweetness and a body reminiscent of the soft centre of a freshly baked pastry. A summer filter coffee that does exactly what the packaging suggests, without making a fuss about it. And somewhere in the back of your mind, you can almost hear that familiar seaside call: FRESH BLUEBERRY BUNS!Store in a cold and dry space.

This season, we went for the Aji variety, already warmly received by you, which struck us with its transparency. We got a proper strawberry punch straight to the taste buds, and we are still recovering from that fruity knockout.In the cup, the strawberry was the main thing: fresh, but also a little more jammy. At times, we had the impression of those yoghurt-and-strawberry chocolates appearing in the flavour too. There is no doubt that a lot is going on here, and sensory boredom is not really an option. We completed the flavour profile with notes of mango and sea buckthorn to highlight the fresh, soft sweetness and intense acidity that stays with us long after the last sip. In truth, the range of associations was almost endless, so we narrowed it down to the notes that stood out the most and best captured this juicy, ripe fruitiness.ABOUT THE VARIETYWe write the variety simply as Aji, though its fuller name is Bourbon Aji. The name comes from… a pepper. Farmers in southern Huila noticed the distinctive aroma of the cherries, reminiscent of a small chilli pepper. Here comes the plot twist, though: genetic testing has shown that it is not a direct descendant of classic Bourbon, but a variety of Ethiopian origin.ABOUT THE PROCESSINGThe coffee and its processing come from Luis Marcelino of Aroma Nativo in Pitalito. The name Hydro Honey may sound fancy, but it is not just a pretty label. Behind it stands a specific, multi-stage process. Only the ripest cherries go into processing, first fermenting in a controlled anaerobic environment. The coffee is then depulped and pre-dried. Later, it returns to the tanks for a rehydration stage with selected yeasts and bacteria, before moving to raised beds, where it dries for up to 26 days. Finally, it goes through three months of stabilisation under controlled conditions. This is exactly the process that helps build an equally layered profile: intense, juicy and long-lasting.Store in a cold and dry space.

Fazenda Mundo Novo is not just a random address on the map, but a place with a clearly established work standard.Although the farm's name is Mundo Novo (also the name of a botanical variety), the variety of this specific lot is Yellow Catucaí. It is valued for its sweetness, good structure, and a clean, organized sensory profile.This is a natural process managed with great control. The cherries were hand-picked at the optimal moment of ripeness and then spread in a thin layer on the patio that same day to begin drying. After several days, the coffee was moved to a dryer, where it finished drying slowly at a temperature of 40–45°C, which allowed for the preservation of profile clarity and good flavor intensity.RECIPERatio: 60 g of coffee per 1 liter of water. Under the right conditions, it yields sweet, complex, and very clean coffees. In this version, it shows a profile based on intense fruit and deep sweetness – with notes of strawberry, blueberry jam, and sweet cherry.This is a natural process coffee with multi-stage, controlled fermentation.Ripe cherries are first harvested and submerged in water to discard lighter, floating beans. Next, the coffee undergoes anaerobic fermentation in bags for 36 hours, after which it goes into another 36 hours of fermentation in a mucilage environment (mosto) prepared beforehand based on a previous batch and fed with panela for a month.
