Colombia Cesar Buesaquillo is a smooth, fruity coffee with a clean and pleasant profile. Beans of the Castillo variety mature at an altitude of approximately 1,800 meters above sea level, where cooler conditions favor the slow development of the fruits and the buildup of sweetness.Pineapple and coconut appear in the cup, but in a light, subtle form. They are accompanied by delicate wild strawberry, and a soft, almond sweetness of marzipan can be found in the finish. The overall character is harmonious and fresh, without exaggerated intensity – it is a coffee that will work well when you are looking for a distinctly fruity character, but still care about an elegant and easy-to-drink cup.

Anaerobic Washed 30h – what is this processing method about?Anaerobic Washed combines fermentation under limited oxygen conditions with the subsequent thorough washing of the beans. After harvesting, the ripe cherries undergo fermentation in a sealed environment for about 30 hours. During this time, naturally occurring microorganisms process the sugars contained in the fruits, influencing the coffee's subsequent aroma and flavor.After fermentation is completed, the beans are rinsed and cleaned of pulp residues, and then dried to the appropriate moisture level. Thanks to this, the coffee retains the cleanliness characteristic of washed processing, while gaining an additional layer of aromatic complexity originating from the fermentation.In the case of Cesar Buesaquillo, the effect is subtle – the process helps emphasize the fruity sweetness and freshness, but does not dominate the natural character of the bean.
