Coffee cultivation is usually managed by family members, rarely hiring out external workers. 70% of the population wears traditional clothing, and 46% of the producers are women producers.Before the arrival of Spanish conquerors, Tzeltal indigenous people settled in the actual Tzajalchen area. The Aztecan people came and lived here, but in the 16th century, Dominican Friars started to colonize the area. In 1712 Tzeltal people started to rebel against the Dominican people, resulting in the entirety of the population today being the Tzeltal indigenous people.Pedro's father, along with his three brothers, initially grew corn and beans. There weren't any coffee trees planted in the farm. More than 30 years ago, a program of INMECAFE (El Instituto Mexicano del Café) arrived in Tzajalchen and brought coffee seeds of Bourbon and Caturra to plant, and that's how they started coffee cultivation in the area. About 20 years ago, his father handed over the farm to him and his two brothers, then Mr. Pedro began to work organically with his wife and his son. He produced 15 quintales from his 1-ha farm, and bought three more hectares. Now his farm is 4-has and continues to maintain organic practices.The harvest is picked by hand, selecting only 100% ripe cherries, and is usually done in 4 picking sessions per season. Pulping is done on the same day of the harvest, and the coffee is then fermented for 10-16 hours. The drying continues for 3-4 days thanks to the sunny climate on the roof of the house.V60 RECIPE16g of coffee250g of water 96°CMedium Grind Size 1. Put a paper filter in your V60 and rinse it with hot water ( 96C ). It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that  98,5 % of your brewed coffee is water)2. Remove the rinsing water from the server.3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.8. At 00:50 pour hot water to 200g. 9. At 01:10 pour hot water to 250g.10. Swirl your V60 and let the coffee drip. 11. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long. So farmers have had to adjust to the conditions and as a consequence the use of water is limited. On top of that, they have been fermenting their coffees into closed environments (often thick plasticbags under shade) to allow yeasts to form and add a distinctive fruity profile to their cups. Of course they supervise the levels of fermentation to avoid defects.The story of the Santacruz brothers fits within many farmers in Peru as they used to sell their entire crops to local buyers that would arrive at their farm door and take the bags away at a cheap price. Now they deliver their coffee to Cultivar, where after through quality control they receive a much higher price for it. This gap in price is a great help in their income that they complement with growing cattle. Cajamarca is very well known for its cattle culture, providing the region with an abundant amount of cheese, milk and beef.As for the future of the Santacruz family and their coffee business we have very good hopes. Jesus, one of the brothers, has recently bought a few extra hectares of land with the idea to plant more exotic and delicate varieties like Geisha and he is a good representation of the younger generation of farmers that will take the lead in the coffee production in the years to come in Cajamarca.ROASTER'S OPINIONSuper floral and sweet coffee that reminds us slightly of the Geisha botanical variety, even though it isn't one.RECIPE V6016g of coffee250g of water 96°CMedium Grind Size 1. Coffee trees grow here at altitudes above 1,500 meters above sea level, in fertile, well-drained soils of volcanic origin that require little fertilization. The climate is warm but moderated by the altitude, with annual rainfall of 1,500–2,500 mm spread over about nine months. Temperatures usually remain within the range of 15 to 24°C. Over the past few decades, Guji has established its position as one of the most recognized and valued coffee-producing regions in Ethiopia.Sidamo is recognized as the largest coffee region in Ethiopia. It encompasses the fertile highlands located south of Lake Awasa in the Rift Valley. Crops are situated at altitudes ranging from 1,500 to 2,200 meters above sea level, which promotes slower ripening of the coffee cherries in a cooler climate. As a result, coffees from this region stand out with their natural sweetness and pleasant acidity. Highly fertile soils and annual rainfall of 1,200 to 2,000 mm create ideal conditions for growing high-quality coffee.Yirgacheffe lies in the central part of the Gedeo zone in southwestern Ethiopia. This region is famous for producing coffees of exceptional quality, which is influenced by fertile soils, a tropical climate, and high-altitude plantations, often exceeding 2,000 meters above sea level. Due to the altitude of the crops, local coffees are classified as SHG (Strictly High Grown) or SHB (Strictly Hard Bean). This means that the cherries ripen more slowly, allowing the plants to deliver nutrients to the beans for a longer period. Each farmer owns a farm ranging from about 1/5 to 1/3 of a hectare and delivers coffee to the station in the form of freshly harvested cherries.Kenyan microlots can be traced back to a specific processing station, and whenever possible, to an individual farm. They are selected based on the evaluation of coffee quality during cupping. Since most Kenyan growers own between 1/8 and 1/4 of a hectare of land, the harvested cherries usually go to a local station, where they are sorted and processed. Deliveries from various farmers are combined there and processed into batches covering the harvest delivered on a given day.Due to the huge number of samples requiring evaluation, our green coffee buyer usually stays in Kenya throughout the entire harvest period. From the evaluated batches, they select the best ones, which we then purchase as microlots consisting of fewer than 100 bags.ABOUT THE PROCESSINGMost coffee in Kenya comes from smallholder producers delivering cherries to processing stations that specialize primarily in fully washed coffees. Larger estates are also known mainly for producing coffees processed using this method.The washed process may vary slightly depending on the location, but it typically includes a soaking stage characteristic of Kenya. Ripe coffee cherries are picked and depulped on the very same day. The beans then ferment for 24–48 hours in open concrete or cement tanks. After fermentation, they are thoroughly rinsed in water channels and then soaked in water for 12–72 hours. Finally, they are spread out on raised beds to dry.Store in a cool and dry place.

It features an unconventional and highly satisfying profile—plum with cinnamon, notes of chocolate-covered cherry, and a finish that reminds you of a freshly baked cookie.V60 RECIPECoffee dose: 19gWater dose: 50g > 300gWater temperature: 93°CGrind size: 8.4 (EK43); 23 clicks (Comandante)Place the filter in the V60 and rinse it under a heavy stream of water to ensure it adheres well to the walls.Grind the coffee, pour it into the V60, and level the grounds.Pour 50g of water, aiming for any dry spots to ensure everything is thoroughly saturated. If the coffee is very fresh (foaming intensely), you can extend the bloom (pre-infusion) to 2 minutes, or perform an additional bloom at 1:00 (pour another 50g and wait until 2:00).At 1:00 (or 2:00), start pouring into the center of the V60 (using circular motions about the size of a small coin). The pulping machine is only started once a large enough batch has been collected to allow for at least 2 hours of continuous operation. In the meantime, further deliveries arrive to maintain the workflow until approximately 19:00. After the pulp is removed, the beans are sorted by density in water channels into different grades: P1, P2, P3, lighter fractions, and so-called "pods" (the lowest grade).The coffee then ferments for 12–24 hours, after which it is thoroughly washed and soaked for another 8–12 hours. The cherries first undergo a 36-hour pre-fermentation, and then, after pulping, they go into sealed anaerobic tanks for as long as 6 days, where the addition of enzymes allows their full potential to be unlocked.ROASTER'S OPINIONThis coffee is my favorite offering in our lineup.
