Whole-bean specialty coffee from Colombia roasted by Manhattan Coffee Roasters from the Netherlands. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The flavour of the brew resembles stone fruit, cocoa, and grapes.

ABOUT THE COFFEE
Viani is a small town in the Cundinamarca department, located not far from Bogotá. “Viani” coffee is made from beans sourced from over 400 smallholder farmers across five municipalities and delivered to three collection points.
The largest collection point, which accounts for around 70% of all “Viani” coffee, is located in the town of Sierra and is run by Joseel. He receives both wet and dry parchment and operates a mechanical dryer on site. When parchment is delivered, he checks the quality, weighs the bag, and agrees on a price. He then pays the farmer immediately in cash and provides a new empty bag for refilling. Joseel has been working with Racafe for over 23 years and sells exclusively to Luis Fernando, Racafe’s manager in Bogotá. Each delivery consists of approximately 10,000–13,000 kg of coffee.
Due to climate change, production has dropped dramatically in recent years, making it even more important to increase revenue despite lower yields. Coffee production in Viani has decreased by 50% compared to two years ago. Rainfall has nearly doubled, with rain occurring almost every day during the season. While rain is essential for plant growth, coffee trees require 2–3 weeks of consistent sunshine without rainfall. This period of stress triggers the plant’s reproductive cycle, causing coffee trees to flower once rain returns after the dry spell.

Ratio: 1:16.5 – 1 gram of coffee to 16.5 grams (milliliters) of water
Grind size: Between fine and medium
1 cup: 250 ml water / 15 g coffee (22 clicks on Comandante)
2 cups: 500 ml water / 30 g coffee (25 clicks on Comandante)
Water temperature: 99–100°C / 210–212°F
Water mineral content: 80–100 PPM
