Coffees from El Diviso have won the World Barista Championship, and lots from Johan Vergara regularly appear in the routines of world-class competitors. In practice, this means one thing: the raw material is predictable, clean, and produced to meet the highest standards.This is a deliberate combination of two varieties. Tabi brings structure and elegance, often expressed as a more tea-like clarity and a stable, citrus-fruit acidity, while Yellow Colombia adds sweetness and juicy, ripe fruit character.Formally, this is a washed coffee, but processed in a way that strongly shapes the flavor profile. First, the fermentation is two-stage: an initial aerobic phase, followed by anaerobic submersion, designed to emphasize stone fruit notes (peach, apricot) rather than heavy, wine-like flavors. Second, after fermentation the coffee undergoes controlled hot/cold quenching, meaning contact with hot and cold water to stop the process at the right moment and preserve aromatic clarity. The harvest season runs from April to December and is based on selective hand-picking to maintain consistent quality and uniformity of the cherries.ABOUT THE COFFEEGesha is a variety strongly associated with exceptional quality and a very high sensory potential when grown at high altitudes. It is also a low-yield variety, which means that even with high demand, it remains genuinely limited on the market. For years it has consistently won the most prestigious coffee competitions and achieved record-breaking results at international auctions.This lot is processed using a washed method with extended, controlled fermentation. The harvest is done manually and selectively, in cycles roughly every 20 days, using only fully ripe cherries.After harvesting, the cherries ferment in bags for about 12 hours. They are then transferred to a hopper, where the initial oxidation stage is completed. The coffee then undergoes flotation, followed by depulping and an extended fermentation of approximately 200 hours in tanks or vats.After fermentation, the coffee is washed using either a portable washing unit or an Ecomill system. It is then dried on raised beds for 15–17 days and stabilized in GrainPro bags for 10–15 days. It is located in the Kirinyaga region, Kagumo area, at the foothills of Mount Kenya. Coffee cherries are delivered to it by over 1,700 small-scale producers who grow coffee mainly on small plots of land.The crops are situated at an altitude of approximately 1,700–1,800 meters above sea level. The region is characterized by red volcanic soils, good access to water, and conditions that favor slower ripening of the fruit. Longer ripening can support the development of sweetness, acidity, and a more complex sensory profile.This is a classic Kenyan production model: small farms, a central washing station, fruit selection, and a consistently managed process. Simple. Effective. Good.ABOUT THE VARIETYThe dominant varieties are SL28 and SL34. These are classic Kenyan Arabica varieties, valued for their high sensory potential, especially in terms of vibrant acidity, fruitiness, and the structure of the brew.Batian and Ruiru 11 may also appear in smaller quantities, which are varieties introduced, among other reasons, for the plants' greater resistance to diseases. However, the character of this coffee is primarily built by SL28 and SL34.ABOUT THE PROCESSINGAfter harvest, the coffee cherries are delivered to the station and sorted. Then, the skin and part of the pulp are removed from the fruit, and the beans undergo fermentation, washing, and drying on raised beds. His father was a legend of Guji during his lifetime, building the region's first wet mill in the early 2000s, whose infrastructure began to be used by small producers of the Bule Hora community. When the Ethiopian government liberalized export regulations in 2018, which practically opened up opportunities for smallholders to sell their coffee outside the country, Tagel founded the Olkai company and, in addition to exporting, also took over the coordination of the Hambela Goro mill.The coffee comes from 460 small producers in the area, from an impressive altitude of approx. 2,300 meters above sea level. They cultivate the local 74110 variety here, and many of them own only a few hundred trees. The organization, standards, and cleanliness at Hambela Goro made a big impression on us, as did the incredibly clean and consistent lots that we had the opportunity to taste fresh while still on site.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMVariety 74110, hand-picked by 460 small producers from around Hambela Goro, depulped, and then fermented in a tank for 48 hours. After harvest, the cherries are sorted and then dried on raised beds. During the first 10 days, they are stirred every 2 hours, and dried for 24 to 30 days depending on the weather and humidity.Fun fact: this is already the second coffee this year that is coming back to us. Last season we had Sambewe as a natural process; this time, the washed version is arriving. If you remember the previous harvest - you know it is worth it! - KlaroROASTER'S OPINIONWe have another washed coffee on board! This time it is Tanzania Sambewe. In the cup, you will find plenty of sweetness: molasses, orange, and red fruits take center stage here. This is the second year in a row that this lot has been with us!
