Finca El Llano belongs to the Perez family and is located in the prestigious Acatenango region, in the Chimaltenango department, in the heart of Guatemala’s volcanic mountain chain. It is here, in the shadow of volcanoes and under the influence of breezes from the Pacific Ocean, that coffees of remarkable depth and elegance are produced.The name El Llano means “the plain” in Spanish, and the name is no coincidence. Coffee grows here at an altitude of approximately 1,700 m a.s.l., in fertile, volcanic soils and a cool climate that slows down the ripening of the cherries, allowing more sweetness and complexity to build.ABOUT THE VARIETAL AND PROCESSINGIts character is shaped by SL28 and SL34 — iconic Kenyan varietals that have been the foundation of the country's finest coffees for decades. These are precisely what give coffees from Kenya their distinctive fruitiness, high acidity, and intensity.The beans underwent Fully Washed processing. The cherries are hand-picked and meticulously sorted, then fermented for 12–24 hours, washed, and soaked in clean water for another 24 hours. That’s when Hacienda Sonora became a pioneer of quality in a country historically known almost exclusively for washed processing.Today, the farm is co-managed by Alberto’s son, Diego Guardia, who blends family traditions with a modern approach to quality, experimentation, and selection. Over 80 hectares are dedicated to more than 20 botanical varieties, each treated as a unique project.ABOUT THE COFFEEThis exceptional batch is SL28 — a legendary variety known for its incredible purity and elegance, especially in Kenya, but under Hacienda Sonora’s conditions, it achieves extraordinary clarity and finesse. Grown at an altitude of about 1300 meters above sea level, it offers a cup full of juiciness, delicate structure, and refined sweetness.The natural processing was carried out with great precision: selectively picked cherries are first separated by floatation, then dried whole on black tarps for about 12 days, with full control over airflow and humidity. After the initial drying, the coffee matures, undergoes final drying at low temperatures (up to 35°C), and then rests for two months before being hulled and hand-sorted.In the cup, the coffee is light, juicy, and incredibly clean for a natural – with dominant notes of raspberry and ripe melon, complemented by a delicate, tea-like tannin of black tea. The finish is long, elegant, and sweet, with no heaviness or excessive fermentation. This is a natural in the Hacienda Sonora style: precise, harmonious, and incredibly drinkable.We always roast the coffee fresh, so when it arrives to you, it’s just a few days old. Our lot comes from Bruselas, Huila – a region known for truly wild, fancy coffees.The coffee comes from the Nogales farm, a project by Oscar Hernandez. He is a third-generation farmer who is constantly developing the plantation and the processing methods used. His father, Ricaurte, was the one who put Bruselas on the specialty coffee map after winning the Colombian Cup of Excellence in 2006.Here we are dealing with a fancy Mosto Fermented Washed process – in short, the coffee ferments in juice extracted from the very same coffee cherries. After 7 days of fermentation, the beans are sun-dried and then aged for 15 days in whiskey barrels. [Strong combination, right?]The result? A juicy, sweet cup full of raspberries, cherries, and lemongrass. Complex acidity, smooth body, and plenty of room for everyone to find something of their own in it!ROASTER'S OPINIONHere we are dealing with a fancy Mosto process – in short, the coffee ferments in coffee cherry juice. This boosts the sugar content, and more sugar = more food for bacteria = more power to create complex acidity. In taste, lots of raspberries, cherries, and lemongrass. Evin decided to focus on different methods of processing and has been extremely successful at it.He shares his wet mill with fourteen of his family members including his brothers and cousins. He constantly improves the farm’s and the wet mill’s infrastructure and this year he’s planning to build two more solar dryers to assure maximum coffee quality.We are so happy and proud to be able to share Evin’s Pacas anaerobic experiment.ABOUT COFFEEThe cherries were picked at the perfect maturation point, placed in plastic bags and underwent a 72 hour anaerobic fermentation. Next, fermented cherries were de-pulped and dry fermented in tanks for additional 4 hours, followed by multiple water rinsing and slow drying in a solar dryer for 18 days.ROASTER'S NOTEElegant, complex, and perfectly capturing the character of high-quality coffees from Honduras.V60 RECIPE16g of coffee250g of water 96°CMedium Grind Size 1. Put a paper filter in your V60 and rinse it with hot water ( 96C ). It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that  98,5 % of your brewed coffee is water)2. Remove the rinsing water from the server.3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.At 00:50 pour hot water to 200g. At 01:10 pour hot water to 250g.Swirl your V60 and let the coffee drip. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long. But always taste and then judge your coffee.Store in a cold and dry space.
