Thanks to the natural processing method, the coffee retains intense sweetness and aromatic complexity.The secret behind this coffee's character lies in the natural process, one of the oldest methods of preparing coffee beans. The process begins with the hand-picking of fully ripe coffee cherries. Selection at this stage is crucial, as only perfectly ripe cherries ensure the subsequent sweetness and clarity of flavor.After harvesting, the fruit undergoes an initial selection to remove unripe or damaged cherries. Water tanks are often used for this purpose – lower-density fruits float to the surface and are discarded, while the highest-quality cherries sink to the bottom and proceed to the next stage of production.Next, the whole fruits—complete with skin and pulp—are spread in a thin layer on raised drying beds. This is where the most critical part of the natural process begins. For several weeks, the fruit slowly dries in the sun, allowing the sugars and aromatic compounds from the pulp to permeate the beans inside. This stage is responsible for the characteristic sweetness, fruitiness, and intense aroma.During drying, the cherries are regularly turned to ensure even moisture evaporation and to prevent uncontrolled fermentation. Farmers closely monitor the temperature and drying time, which typically lasts from two to even four weeks. Once the fruit reaches the correct moisture level, they resemble hard, dried coffee cherries.Only at the end of the process are the dried fruits sent to the mill, where the dried skin and pulp are mechanically removed. This yields the green coffee beans, ready for sorting, grading, and export.Thanks to this slow, natural process, the beans from Nyamyumba acquire exceptional sweetness and aromatic depth. In the cup, this translates into an elegant flavor profile where linden flowers meet honey sweetness, while notes of Damson plum and cherry add a juicy, fruity structure. Fermentation was carried out using only fresh river water from the Kaboyo River.This is a washed coffee grown in rich volcanic soil, with a classic Kenyan variety mix of SL34 and SL28—textbook quality in every sense.

High altitude, fertile soils, and regular rainfall create conditions for which Yirgacheffe is famous for exceptionally aromatic coffees with a floral and fruity character.Only ripe cherries enter the processing stage, which, after selection, are dried whole on raised African beds for 12–15 days. During this time, they are regularly turned and protected from intense sun, rain, and night moisture. Slow and controlled drying allows the beans to absorb sugars from the pulp, building the intense sweetness and characteristic floral notes of the finest Ethiopian natural process coffees. This coffee stands out with an unusual combination of features from two different processes – intense floral notes and citrus acidity typical of washed coffees, alongside clear, sweet strawberry associated with natural process coffees.Intense flowers dominate the aroma, accompanied by delicate citrus and sweet berries. The coffee has a high, almost sparkling acidity associated with currants and a clear, slightly umami character that creates its dry twist.The body is high and smooth, and the aftertaste is long and fruity, with a delicate, dry accent. This is a direction you will also see in subsequent coffees from Kenya from this year's harvest.ROASTER'S OPINIONAt the Tegu washing station, the coffee undergoes multi-stage wet processing characteristic of Kenya. After initial selection, the cherries go to the first fermentation stage, which lasts about 24 hours. They are then washed and moved to another fermentation tank.After the pulp is removed, the beans go into washing channels where lighter beans (so-called floaters) are separated, and the heavier ones are thoroughly cleaned of the sticky layer surrounding the bean (mucilage).The next stage is soaking the beans again for about 24 hours. This process promotes the development of amino acids and proteins, which translates into higher acidity and greater complexity of the fruity profile – a key element of Kenyan coffees.Finally, the beans are spread in a thin layer on African beds, where they initially lose some moisture quickly, and are then regularly turned and dried until they reach about 11% moisture. After drying, the coffee is hulled, packed, and undergoes a short stabilization stage before export.RECIPEThis coffee responds well to the brewing method – you can emphasize its juicy, currant acidity or bring out its more savory, tomato-like character.In a V60, it is at its most juicy and distinct – redcurrant, peach, and high, sparkling acidity. In an Origami, the profile balances out, and the tomato twist becomes more legible. In an AeroPress, the coffee is smoother and fuller, with a more pronounced umami character.Lower temperatures emphasize freshness and fruit, while higher temperatures bring out depth and strengthen the savory profile. A coarser grind provides more lightness and acidity, while a finer grind yields more body and umami.We recommend a medium-coarse grind (25 clicks on a Comandante) and a drip brewing method – such as the Origami – with a dose of 17 g per 240 ml of water.Using water at 95°C, pour according to the following timeline:0:30 – 50 ml , 0:50 – 110 ml , 1:15 – 200 ml , 2:40 – 240 mlGently stir at the end.Store in a cold and dry space.

The coffee trees grow at an altitude of 1,600–1,765 meters above sea level, under the shade of trees, which promotes the slow ripening of the fruit and the development of a complex profile.Over 200 people work permanently on the farm, and during the harvest season, up to 2,000 seasonal workers join them. The farm provides housing, medical care, and education for workers and their families, while focusing on responsible and environmentally friendly farming methods.The name "Mondul" comes from natural springs that have nourished the crops and local communities for generations. Water from these springs is also used for wet processing – after harvesting, ripe cherries are washed and fermented, then dried on raised African beds for about 7 days. This process preserves the clarity of the profile and brings out a delicate floral note, citrus, and tea-like qualities, without unnecessary heaviness or fermented character.ROASTER'S OPINIONIt is rare to come across coffee from a farm that has been operating continuously since 1899. Mondul is precisely such a case – one of the oldest and most recognizable farms in Tanzania, now belonging to Burka Estate at the foot of Mount Meru. The washed process emphasizes the clarity of the profile, allowing delicate florals, citrus, and a tea-like note to shine through.In the aroma, delicate flowers and fresh lemon come to the fore, with a light, tea-like note appearing in the background. In flavor, stone fruits build sweetness, while lemon brings a refreshing, medium acidity that does not dominate the profile. The finish remains gently tea-like. Cherries reach the Rubirizi station through local leaders who coordinate their harvest and ensure quality right from the delivery stage. The combination of high altitude, careful selection, and the experience of local producers yields an intense, fruity-chocolate character.An interesting aspect is how this lot was selected. Beans that, due to their appearance—darker parchment, spots, or pulp residue—would previously have been automatically categorized into a lower grade, were re-evaluated based on cup quality. Those without actual defects were selected and prepared as a separate, more affordably priced lot. The coffee undergoes multi-stage sorting, supported by an optical sorter, followed by intensive natural processing with a short anaerobic fermentation stage. The result is a very sweet, complex, and intense coffee.ROASTER'S OPINIONThe profile of this Ugandan coffee is the result of a long fermentation—ripe mango and dark chocolate combine with notes of balsamico and rum, creating a thick, intense character unusual for coffees from the Mount Elgon area. It is a very fruity and complex coffee with an exceptionally deep profile.In the aroma, ripe, almost caramelized mango dominates, accompanied by a sweet balsamic note and a delicate fermented accent. In flavor, mango builds an intense, syrupy sweetness, while balsamico and rum give depth and a slightly liqueur-like character to the whole profile. The profile finishes with dark chocolate and a long aftertaste. The coffee has a full, thick body and low, mild acidity, keeping it sweet, intense, and remarkably expressive.Store in a cool and dry place.

We are continuing our series of seasonal releases inspired by fruity classics, and now we are turning to one of the most sought after summer pastries of all: the blueberry bun.FROM THE ROASTERYWhen Karolina asked for a coffee that tasted like a blueberry bun, our thoughts went straight to Burundi. Naturals from this origin can deliver exactly what we were looking for: plenty of dark fruit, pronounced sweetness and a round, smooth structure. Here, the blueberry flavour blends with a sweetness reminiscent of crumble topping, while the dense and velvety texture brings to mind a soft, buttery pastry. A blueberry bun in coffee form, only with caffeine instead of icing.ABOUT THE COFFEEHafi comes from Muyinga Province and from one of the newest washing stations working with JNP Coffee. The name itself means “close” in Kirundi and refers to a very real change in the lives of local producers. Before the station was built, some of them had to travel up to 20 kilometres to deliver freshly harvested cherries to the nearest mill. In the region’s hilly terrain, that journey was often too long for processing to begin on the same day. And the sooner the harvested fruit reaches the station, the easier it is to preserve its quality and the flavour potential of the green coffee.The new station shortened that distance and gave producers better control over freshly picked cherries. Around 2,000 farmers work with it, while the team itself is made up of people who gained experience at other mills across the region. We chose Hafi as a natural once again because everything works together so well here. The process highlights its dark fruit sweetness, gives the coffee a fuller character and moves the profile towards a rounded, dessert like cup.Plenty of blueberries, plenty of sweetness and a body reminiscent of the soft centre of a freshly baked pastry. A summer filter coffee that does exactly what the packaging suggests, without making a fuss about it.
