Bourbon is produced here by nearly 500 smallholder farmers living around the washing station. Nearby lies Nyungwe National Park, known for its pristine forests and a significant protected population of gorillas. The water used during processing comes from a natural spring.Cyiya supports its local community in several ways, including providing training for producers and distributing coffee seedlings and shade trees free of charge. At the same time, it promotes environmental protection through conservation programs and wastewater treatment initiatives.ABOUT THE COFFEE PROCESSING AT THE FARMThe Bourbon variety is hand-picked and undergoes an initial selection before being delivered to the mill. The next stage involves soaking the cherries in water to separate the under-ripe ones, which float to the surface instead of sinking. After the beans are separated from the fruit, they undergo fermentation in tanks for 18 hours, followed by washing and drying on raised beds for approximately two weeks.ROASTER'S OPINIONEvery year we get excited about fresh Rwandan coffees and pack these beautiful beans into jars. It’s like a lemonade-style, fruity compote where all the layers come together in such perfect synergy that we end up gulping it down by the liters.

Our visit to his place was entirely spontaneous.In January 2025, while traveling through Guji, our local partner Gemechu mentioned that he wanted to show us a small coffee drying plot behind the house of one of the nearby smallholders. It was our last day in this part of Ethiopia, so we were happy to stop by Gelo’s farm. Freshly harvested coffee, only a few days old, was covered with a tarpaulin to protect the cherries from the intense sun. This is a very good practice, although a distinct, intense fermentation aroma was clearly noticeable beneath the cover. Curious about the outcome, we took a sample of coffee that had previously been dried in the same way. Two days later, at the cupping table, we tasted a juicy, fruity, and very clean coffee, without any “wild” notes that can sometimes appear as a result of extended processing.Mr. Gelo owns just 5 hectares of coffee fields, and his annual production amounts to only… about 20 bags of export-ready coffee.A true gem from deep within Guji.ABOUT COFFEE PROCESSING ON THE FARMA single, regionally traditional Wolega variety, hand-picked and delivered to a small drying area with raised beds. Dried as a natural, in whole cherry, covered daily with a tarpaulin during periods of the most intense sunlight. After approximately 30 days, the coffee is removed from the beds and homogenized in bags in a shaded storage area.ROASTER’S NOTEAn excellent representation of Guji terroir from a small producer exporting only 20 bags per year. It’s an easy, comforting coffee that works just as well for everyday drinking as it does for slow, attentive cups. One we never get tired of.BREW RECIPE:Ethiopian coffees are known to produce more fines, which can sometimes clog filters.
