During the harvest, ripe cherries are handpicked and delivered to the station for sorting, grading, and drying. After sorting by hand and then floatation, the best quality cherries are transferred to raised African drying tables for 3 to 4 weeks. Expressive yet calm and highly drinkable – a great everyday coffee.RECIPEIt works best as filter coffee when you are looking for something sweet, balanced, and easy for daily brewing. Use a V60, Chemex, or batch brew, grind medium-coarse, and brew with water at 92–94°C to preserve the caramel sweetness and citrus brightness without losing the tea-like structure.In an AeroPress, the coffee becomes slightly fuller and rounder – the note of caramel steps into the foreground, and the body becomes a bit richer. Still clean, just more compact and warming. As it cools, the black tea character becomes more distinct and the citrus sweetness more noticeable – the cup gets smoother and more elegant. It stands out for its dark fruit notes and tropical character, while maintaining a distinct structure and being very pleasant in taste. This lot comes from the Ndurutu washing station in the Nyeri Central region of Kenya, where it is grown at an altitude of 1700–1720 meters above sea level. The station has been operating since 1999 and currently works with over 527 smallholder farmers growing mainly SL28, SL34, and Ruiru 11 varieties on volcanic soils. The process is a long, anaerobic natural process with a unique "Sleeping Bag" drying technique: after selective hand-picking and sorting by ripeness, the cherries undergo anaerobic fermentation lasting over 300 hours, and then are dried using the "Sleeping Bag" method, which concentrates sweetness and develops a winey, fruity character in the cup.ROASTER'S OPINIONA strong Kenyan natural coffee with a winey, tropical, and very distinctive flavor profile. Passion fruit and blueberries give it a distinct fruity character, while dark chocolate adds richness and depth.
