Coffee cherries are collected from 476 small producers, who work the land around the village of Chelbesa. The coffee grows here in semi-forest, under shade trees and close to other food crops, such as bananas. SNAP has installed tiled fermentation tanks and 164 drying beds here: 100 are for washed coffees, 64 for natural coffees. SNAP Coffee was founded in Addis Ababa in 2008. Operating three washing and processing stations, their work revolves around three key principles: ensuring consistent processing of specialty coffee, sharing essential knowledge and training on processing and cleaning methods to partnering farmers, and implementing waste recycling systems to protect the environment.THE PROCESSIn Ethiopia, natural coffees are typically delivered the day they are harvested, and are first sorted for ripeness and quality before they are rinsed clean. The whole cherries are spread on raised drying beds or tables, where they will be rotated constantly throughout the course of drying. The sweetness is gently syrupy, like raisin or candied orange. As it cools, the rose hip shows a touch of herbal elegance.ABOUT THE FARMThis coffee has been processed at the Kamwangi Factory, belonging to the New Ngariama Cooperative Society in Kirinyaga, Central Kenya. Among the three wet mills under the cooperative, Kamwangi is one. It serves approximately 1800 farmers, although not all are currently active. These farmers primarily grow SL 34 (90%), along with SL28, K7, and Ruiru 11 varieties, at altitudes ranging from 1500 to 1800 metres above sea level. The factory is closest to the town of Embu.  Processing is done with Fresh River Water. The same water is recycled during the day through a recycling process enabling them to significantly reduce water consumption. They are Rainforest Alliance certified, and have established soaking pits for waste water treatment.THE PROCESSOnce the coffee cherries have been accepted by the Cherry Clerk, they are pulped and fermented for approximately 16-24 hours, depending on ambient temperature at the time. Following fermentation, the coffee is washed in clean water from the Kii River and soaked for 12 hours. Newly installed tiles in the washing channels help preserve coffee and water quality, and all water used in processing is cleaned by filtering in earthen pits before being reintroduced to local waterways. After washing and grading, the beans are laid to dry on raised beds. Workers rake the beds frequently to ensure even drying, covering the beds during the hottest time of day and at night, to shelter parchment from moisture. It takes approximately 14 days for the beans to dry.ROASTER'S NOTEOur Kenyan lots really flew off the shelves this season, so we were excited to source this coffee from the final harvest of 2025. From Kirinyaga, Kamwangi AB is sweet and aromatic.

The high altitude of the area favors the production of high-quality coffees. The processing at Bulambuli is carried out by specialized staff who ensure precise and controlled conditions throughout the entire process.The region primarily grows the SL14, SL28, and SL34 varieties, which are also characteristic of Kenya. The cherries come from small family farms with an area of less than 1 hectare. These farms are located in parishes—local administrative communities consisting of 7 to 12 villages, often with as few as 200 inhabitants. Farmers typically work in groups led by a designated leader.The harvest of East Ugandan coffee takes place from August to January. In lower-lying areas, the season falls between August and October, while at higher altitudes, it lasts from September to January. Farmers sell their cherries at small collection points or deliver them directly to the washing station. There, the fruit is sorted and then—depending on the method—sent for depulping (washed process) or to the drying yard in Mbale (natural process).ROASTER'S OPINIONSurprisingly sweet, with notes of chocolate and almond, complemented by a light hint of forest and stone fruits. Sweet notes of caramel and milk chocolate show great depth as it cools.ABOUT THE FARMBen and Kristy Carlson moved to Burundi in 2011 and saw that both injustice and poor farming practices permeated the country's newly privatized coffee industry. They also saw that roasters around the world had a difficult time getting consistently great coffees from Burundi. In an effort to see positive change in both farmers and roasters' lives, Long Miles Coffee was born. Long Miles Project is a farmer-driven coffee production model. They work with coffee farming families on eleven unique hills within Burundi. Long Miles create traceable micro-lots that yield consistently great coffees while improving the livelihoods of the small holding farmers who grow them. Here are three of the most important ways to do this: 1. The farmers who grow coffee on the eleven hills receive year-round agricultural assistance through one of the twenty-six Long Miles Coffee Scouts who are trained agronomists. 2. Long Miles pay higher prices for coffee cherries as well as annual premiums. 3. They strengthen relationships between roaster and farmer so they can serve coffee from a specific hill year after year.THE PROCESSThe traditional Burundian process is fully washed: freshly harvested cherries are delivered by coffee farmers to the washing station, then floated and hand-sorted for ripeness upon arrival. The cherries are pulped and undergo a single fermentation process. Parchment spends around twelve hours dry fermenting, before the final washing that creates a clean, balanced profile.ROASTER'S NOTE Our latest from the Long Miles Project in Burundi - a farmer-focused producer working with some of the most remote coffee growers in the country. There are 540 contributing smallholder producers who deliver cherries to the factory from their farmland in the area.The Ndimi Coffee Factory is named after the locality where it is situated, just outside of the town of Kerugoya, which is the largest town in Kirinyaga County, located in the southern foothills of Mount Kenya. The area is forested with a wealth of exotic wildlife, receiving 50 inches of rain per year. Many rivers run through the region and the soil is rich and volcanic, providing smallholders and cooperatives with resources to grow and process some of Kenya's most fruit-forward coffees.ABOUT THE COFFEEAfter coffee is delivered and sorted, it is immediately depulped, fermented underwater for 15-24 hours and washed three times before being spread on metal drying tables where it dries for 6 to 7 days.
