This doesn't mean they are "small," but rather that they grow coffee on small plots of land (usually less than 2 hectares) and do not process it themselves. The harvested coffee cherries are sent to cooperatives that handle further processing at local washing stations. This is where the cherries are turned into "washed coffee."In this case, the coffee cherries are collected by the Inoi Farmers Cooperative Society, and their processing takes place at the Kaguyu factory, managed by Wilson Wanjohi. The coffee is processed using the washed method. Once delivered, the cherries are pulped to extract the seeds, fermented overnight, then washed, soaked, and dried on raised tables. The mineral-rich, red volcanic soil and the varieties used (SL-34, Ruiru 11, SL-28, Batian) give it a distinctive flavor profile: intense sweetness, high acidity, and blueberry notes.Historical Fact: Coffee arrived in Kenya only at the end of the 19th century, during the colonial era when the British began establishing plantations. Interestingly, for a long time, local farmers were not allowed to grow coffee legally. It wasn't until the 1930s that they were permitted to produce it for themselves, which today forms the foundation of Kenya's specialty coffee scene and remains a major contribution to the country's budget.

Whole-cherry fermentation combined with controlled drying resulted in an unusual profile that is softer than classic washed Kenyan coffees.In the cup, you’ll find notes of nectarine, blackberry, and tea, with a subtle chocolate accent in the background. The acidity is medium and well-balanced, and the overall profile is very clean and cohesive for a natural process.This coffee shows a different side of Kenya: less aggressive, more juicy and calm, yet still full of character. First, less mature cherries are removed through water flotation, as they float to the surface.Next, the cherries are fed into a depulper, which removes the skin and leaves the beans covered with a thin layer of sweet pulp (mucilage). The prepared coffee is then fermented in water for 10 to 12 hours, depending on ambient temperature. Finally, the beans are sun-dried for 2–3 weeks. Regular turning ensures even drying and the achievement of optimal moisture content.

The washing station is located on the slopes of Mount Kenya near the town of Kangema, and the coffee cherries harvested by 980 farmers who are members of the cooperative are processed here.Fun fact: Like many other Kenyan coffees, coffees from the Githiga station undergo a double washing process. After the ripe cherries are separated from defective, unripe, and overripe ones, they are wet-processed using clean water from the Githiga stream.
