Its export partner is The Coffee Gardens, who have known Norman for many years. Their cooperation is based on mutual trust, knowledge exchange, and the joint development of coffee processing expertise. An important part of this relationship is also the creation of programs that ensure full producer traceability. Thanks to this consistently built partnership, it has been possible to expand operations to include exporting Norman’s coffees to international markets.Norman established The Coffee Yard at the foothills of Mount Elgon. Coffee cherries are delivered to the station from the Sironko, Mbale, Bulambuli, and Kapchorwa regions. The facility serves as a large reception and drying center for coffee. Norman has nearly 20 years of experience in the coffee industry, and since 2018 he has specialized exclusively in naturally processed coffees. Since then, he has continuously refined his processes to achieve flavor profiles that meet market expectations.ABOUT THE COFFEECoffee cherries are delivered to The Coffee Yard from four surrounding districts, where Norman and his team process them exclusively using the natural method. The first step is flotation, followed by manual sorting to remove damaged, underripe, overripe, or defective cherries. The fruit is then pre-dried to remove excess moisture remaining after contact with water.After this stage, another round of selection is carried out based on color and moisture level, allowing for the creation of the most uniform coffee lots possible. Cherries that do not meet the set parameters are discarded. The next step is fermentation, the course of which depends on the desired flavor profile—it can take place either in sealed barrels or in open tanks. More floral profiles are typically achieved through fermentation in open containers, while the coffee in this package was fermented in barrels.The final stage of the process is drying, which lasts approximately 21 days. The coffee is dried on raised beds or on tarps until it reaches a moisture content below 12%. Once drying is complete, the beans are stored to rest and stabilize. Norman’s team then proceeds with hulling and preparing the green coffee for export, using both manual sorting and color sorting with a colorimeter.ROASTER’S OPINIONThis package contains a blend of two of the most recognizable botanical varieties—SL14 and SL28—delivered to The Coffee Yard from the Mount Elgon area. Norman Mukuru specializes exclusively in natural processing, which he carries out in two variations. The lot available here underwent a more intensive fermentation conducted in sealed barrels.The applied process gave the coffee a bold and unconventional character. On one hand, the flavor profile features classic African notes of orange and other citrus fruits. On the other, there is a pronounced wine-like acidity and balsamic notes, typical of coffees subjected to long and intensive fermentation. The coffee stands out with a high body, medium wine-like acidity, pronounced sweetness, and a subtle umami accent. This is a very interesting and unusual offering for its country of origin.BREW RECIPEThis is an intense, highly fruity coffee that is easy to brew. Just like crocuses pushing through the ground, this spring coffee comes with some lovely florals of its own.It’s a floral and properly complex cup. Fresh like pomelo, and sweet like a handful of freshly picked berries. A classic washed process, the traditional Kurume variety typical for the region, and a profile like a forest glade in bloom.Credit goes to the producer, Gemechu Shonora. This is the second harvest in a row we’ve featured on the menu, and once again it’s hard not to be impressed. Safe to say, not the last.Hand-picked cherries, flotation, depulping, then wet fermentation for 24–36 hours. After washing, the coffee moves to raised beds where it dries for around two weeks. A short rest in the warehouse follows, and only then does it head to Addis. Clean and straightforward, exactly how we like our washed Ethiopias.That’s our version of spring, sealed in a colourful bag. The crocuses are only just coming up, and this Ethiopia is already sitting proudly on the counter, waiting to be brewed.Store in a cold and dry space.

The profile is fruity, though closer to dark and dried fruits. Notes of plum appear first, followed by dried apricot and raisins. To round out this wave of sweetness, the whole profile feels as if the fruits had been drizzled with buckwheat honey. Sweet, dense and deeply satisfying.This lot was produced within a transparent pricing model, where additional value goes directly to the women involved in its production. Karindundu supports farmers by advising them on practices such as using organic fertilizers and pruning their plants. The station also operates a demonstration plot where these methods can be observed in practice.Fun fact: After harvesting ripe coffee cherries, farmers deliver them to Karindundu, where they undergo a traditional washed process. We have been buying coffee from Willy, via the importer 1000 Hills, since the very beginning of HAYB. When Willy let us know last year that he was having trouble with his cherry size sorting machine and his lot contained various screen sizes, we only asked one thing: "Willy, we understand, but how’s the flavor?". We were assured that on-site, the coffee tastes the same as every year – everything is in its place. We ordered samples and decided on this lot, even though the beans vary significantly in size. Because flavor comes first, right?If we had decided not to take this batch, the farm would have had to sell the goods on the local market for much less money or somehow sort it again – sending only the larger beans to Europe and leaving the "little ones" in Rwanda. The result would be the same: less money for the Mahembe farm. I’m glad we have this coffee because it’s a perfect example of what I like most about coffee – flavor first.I love drinking coffees when someone treats me, or blind at a cupping table. His father was a legend of Guji during his lifetime, building the region's first wet mill in the early 2000s, whose infrastructure began to be used by small producers of the Bule Hora community. When the Ethiopian government liberalized export regulations in 2018, which practically opened up opportunities for smallholders to sell their coffee outside the country, Tagel founded the Olkai company and, in addition to exporting, also took over the coordination of the Hambela Goro mill.The coffee comes from 460 small producers in the area, from an impressive altitude of approx. 2,300 meters above sea level. They cultivate the local 74110 variety here, and many of them own only a few hundred trees. The organization, standards, and cleanliness at Hambela Goro made a big impression on us, as did the incredibly clean and consistent lots that we had the opportunity to taste fresh while still on site.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMVariety 74110, hand-picked by 460 small producers from around Hambela Goro, depulped, and then fermented in a tank for 48 hours. Washed, dried on raised beds for 12 days.ROASTER'S OPINIONA washed Ethiopian classic in its pure form. The coffee comes from approximately 600 smallholders, with the average farm measuring just 0.1 ha. Small scale. Great precision.The crops are situated at an altitude of 1,650–1,700 meters above sea level, near the forest boundary of Mount Kenya. The soils are volcanic, and macadamia trees appear among the shade trees. Tea is also grown in the region, which reflects the climate of the area well: high, green, humid, with excellent conditions for the slow ripening of cherries. The coffee is processed using the washed method, so we expect cleanliness, high acidity, and classic Kenyan juiciness.ROASTER'S OPINIONThis is Kenya in a good, precise style. High acidity, plenty of juiciness, a clean profile, and that exact character you look for in Kirinyaga. Blackcurrant, citrus, tea. Zero randomness. A coffee like this does not need stories about magic. It needs a good recipe.Store in a dry and cool place.
