The farm is environmentally conscious — among other initiatives, it uses a drip irrigation system that reduces water consumption and ensures even cherry development.PROCESSINGThis lot was processed using the natural method. After harvest, the cherries are dried on large concrete patios for 10–20 days, then further stabilized in wooden silos for several weeks.It is this slow fermentation process inside the fruit that gives the coffee its density, creaminess, and deep sweetness.
