The coffee is fermented anaerobically as whole cherries and then sun-dried using the “sleeping bag” method under carefully controlled conditions. This allows for better control of fermentation and the development of aromatic complexity.ROASTER’S OPINIONKenyan coffees processed using the sleeping bag method are still rare, which is why this lot immediately caught my attention. Whole-cherry fermentation combined with controlled drying resulted in an unusual profile that is softer than classic washed Kenyan coffees.In the cup, you’ll find notes of nectarine, blackberry, and tea, with a subtle chocolate accent in the background. The acidity is medium and well-balanced, and the overall profile is very clean and cohesive for a natural process.This coffee shows a different side of Kenya: less aggressive, more juicy and calm, yet still full of character. Nearly four decades ago he started with hard labor at a processing station—milling, sorting, drying—where he learned the foundations of coffee processing. Today he runs his own farm, El Renacer, where every step of processing is dialed in to perfection.I chose a Colombian SL28, a super fruity and vibrant variety that already promises a party for your taste buds. On top of that, we add ginger co-fermentation. In short: we prepare microbes (Lactobacillus and Saccharomyces), feed them ginger and a bit of panela (a fancy kind of sugar), add freshly harvested cherries, and let everything ferment for 72 hours. After fermentation and depulping, the coffee is dried until it reaches ideal moisture and stability.So what does it taste like, my friend? A total flavor festival. The co-ferment takes center stage, but in the background you’ll find mandarin, lemongrass, high sweetness, and lots of citrus notes. It consists of six farms with a total area of 105 hectares and its own washing station with a laboratory for anaerobic processing. Since its inception, the estate has focused on quality coffees. Initially, this was primarily related to producing coffees using the washed process, which is rare in Indonesia. Later, experimental processes were added to the mix. Thanks to the experience of the Mustofa and Mustikaningtyas couple and continuous investment in infrastructure, these coffees are always of the highest standard.ROASTER'S OPINIONThis is our first washed bean from Indonesia. At any time of day or night. It tastes a bit like toffee, a bit like buttery biscuits. The cup is sweet and creamy, with a soft, nutty note.All the magic happens after harvest. Sueño is decaffeinated with water by Descamex in Mexico, without the use of solvents. First, the green coffee is placed in a steam bath that opens up the structure of the beans and allows soluble compounds, including caffeine, to be released. The resulting water is not “empty”, though. Aromatic components remain, and this becomes the base for the rest of the process.Subsequent batches of beans are immersed in this same aroma-saturated water. Because of the difference in concentration, caffeine gradually moves from the beans into the solution, while flavour compounds stay in place. The process is repeated until the caffeine content drops to trace levels. Finally, the coffee is gently dried to the desired moisture level and prepared for transport.That’s why Sueño never feels “stripped back”. The crops are situated at an altitude of 1900 to 2200 meters above sea level, and the dominant varieties are Kurume and other local varieties characteristic of this region.The name Harruu Bunnaqaa originates from the Oromo language. "Harruu" means a large shade tree, under which Oromo community meetings traditionally took place, while "Bunnaqaa" is related to sharing coffee. Harruu Bunnaqaa is also a historical site in Guji, where local Oromo leaders would meet to jointly celebrate peace, blessings, and coffee.Coffees from this area stand out for their exceptional complexity and aromatic intensity, resulting primarily from the high altitude of the crops and very fertile soils. At the factory, the cherries are carefully hand-sorted to ensure the highest quality. Only the ripest are selected and pulped. After pulping, the coffee is fermented for 16 to 24 hours. The parchment is then washed through grading channels using clean water before being soaked in clean, circulating water for around 24 hours. Recent research has shown that the step also has added benefit to the coffee’s final quality and longevity, adding clarity to the cup. After soaking, the coffee is delivered to dry on raised beds, where it will be turned regularly and covered during the hottest part of the day and evenings to ensure even drying. They are then washed and moved to another fermentation tank.After the pulp is removed, the beans go into washing channels where lighter beans (so-called floaters) are separated, and the heavier ones are thoroughly cleaned of the sticky layer surrounding the bean (mucilage).The next stage is soaking the beans again for about 24 hours. This process promotes the development of amino acids and proteins, which translates into higher acidity and greater complexity of the fruity profile – a key element of Kenyan coffees.Finally, the beans are spread in a thin layer on African beds, where they initially lose some moisture quickly, and are then regularly turned and dried until they reach about 11% moisture. After drying, the coffee is hulled, packed, and undergoes a short stabilization stage before export.RECIPEFrom currant to tomato: in all conditionsOpen the sachet. For a long time, pink cherries were believed to be a hybrid of Red and Yellow Bourbon. However, recent research suggests that this variety does not belong to the Bourbon group. Its origins are very likely linked to Ethiopian landrace varieties.As a result, Pink Bourbon combines characteristics of high-quality varieties such as Gesha, while also showing greater disease resistance than classic Bourbon, with which it often grows on the same farms. In the version prepared by Miriam Quesada, the coffee underwent natural processing. Hand-picking only ripe cherries ensures remarkable uniformity of the raw material.After initial cleaning, the cherries are placed in water tanks, where they rest briefly to allow separation of underripe or damaged fruit. The coffee is then dried in a specialized dryer, where controlled temperature and humidity, along with continuous rotation of the beans, ensure an almost perfectly even process. Finally, the beans are separated from the remaining fruit material and packed in GrainPro bags. The Pink Bourbon coffee prepared in this way is then exported to the European market.ROASTER’S OPINIONPink Bourbon is a variety we reach for almost every time it appears in importers’ offerings. We highly value it in both washed and natural versions. Each one reveals a completely different side of the same variety, while consistently delivering a lot of enjoyment. In this case, we are dealing with a bold, expressive natural that stands out from the very first contact.The aroma is rich and evocative, dominated by notes of almonds, juicy stone fruits, and fresh pink grapefruit. In the background, there is a distinctive sweet “purple” note reminiscent of fruity candies like Skittles.
