ABOUT THE COFFEE
The cup is dominated by hazelnuts, brownie, and dried figs. The profile is deep, elegant, and multidimensional—with clear sweetness, a velvety body, and a harmonious finish. Every sip reveals consecutive layers of flavor, keeping the coffee interesting from the first moment to the last sip. Such a profile effectively makes it easier to answer the question: "One more cup?"
ABOUT THE PROCESSING AND THE FARM
This profile is influenced by both the terroir of the high-altitude region of Nueva Segovia and the processing method. The coffee cherries underwent a brief Carbonic Maceration fermentation in small, strictly controlled batches. This process allows for the precise extraction of the natural sweetness and complexity of the fruit without the risk of heavy, fermentative notes dominating. Next, the fruit was dried on shaded, raised beds, laid out in a thin layer. Slow and even drying helps preserve the clarity of the profile, the intensity of flavor, and the velvety texture for which the best CM Natural processed coffees are famous.
This is another coffee season from the La Bendición farm that we reach for with complete confidence. In previous years, beans from Don Liberato and Sergio Jarquin proved that they can delight not only with their character, but above all with consistently high quality. This year's harvest confirms that this is a producer worth following.
