ABOUT THE COFFEE
Imagine a morning in southern Ethiopia. You are sitting with a cup of coffee and someone asks: “Where are you?”You check your mug, look around the kitchen, and for a moment you wonder if you might have accidentally traveled to Ethiopia without a ticket. Because Margarissa tastes like a postcard sent straight from Gedeo: tangerine, flowers, and milk chocolate.
High in the mountains, at an altitude of 1,900–2,100 m a.s.l., coffee ripens slowly among green hills, red-brown soil, and plants that have formed this unique landscape for generations. Coffee bushes grow here alongside Enset*, beans, and avocado trees — not in an isolated plantation, but in a living garden where every plant has its place.
It is precisely from this place that this coffee originates — a natural-process coffee from the Gedeb region that demonstrates how much flavor can be hidden within a single bean. Ripe coffee cherries are dried whole in the sun, allowing the bean to retain more of its natural sweetness and fruity character.
Behind the quality of Margarissa stands not only an exceptional terroir, but also a developing processing infrastructure. In Ethiopia, access to precise processing stations and quality control remains a challenge, which is why projects like the Tadesse Desta Business Group are of immense importance — they allow producers to better harness the potential of coffees that have grown in this region for generations.
These are the exact kinds of stories we want to support when building our range: buying coffees that have character in their flavor and celebrating the people behind their quality.
*Enset (Ensete ventricosum), known as the “false banana,” is a plant typical of Ethiopia whose leaves and underground parts are used as a food source, while in coffee cultivation it helps protect the soil and retain moisture.
Store in a dry and cool place.
