Whole-bean specialty coffee from Colombia, roasted by Caffe Grano roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The flavour of the brew resembles pineapple, sweet rum and flowers.Country: ColombiaRegion: CristalinaVarietal: Castillo Processing: NaturalFarm: Finca Cristalina Altitude: 1700-1800 m a.s.l.Cupping score: 87 / 100 ABOUT THE COFFEECoffee from the Quindio region, very juicy, very fruity in a broad sense, a coffee with a strong tropical profile in aroma and flavor at a medium temperature, which over time changes into a more floral and light fruitiness. Such coffees are rarely available today, so I think it's a real treat.ROASTER'S OPINIONOne of the "louder coffees" – it screams, being absolutely tropical, sweet, with medium+ acidity like in a ripe pineapple. We can even find slightly fermented notes that may bring wine and rum tones to mind. A natural so advanced that you could easily mistake it for an anaerobic in a blind tasting. Fortunately, all of this is nicely balanced by flowers, which greet us in the aroma and bid us farewell in the long aftertaste.ROYAL BEANSWhat’s behind the name Royal Beans? If Speciality beans are the pinnacle of coffee, our Royal Beans reach the Himalayas! In this series, we present the very top of the coffee pyramid, the crème de la crème, as precious as crown jewels. Anaerobic, Gesha, Nanolot, Lychee – what does it mean to go beyond the ordinary? – Royal Beans is a selection of coffees chosen by us from various roasters – they share exceptional flavor, limited production, unique processing methods, and the highest quality. A treat for coffee connoisseurs (and those aspiring to be)!RECIPEImmersion method:17 g coffee / 270 g water at 95°CGrind size: coarseBloom: use 70 g of water and wait 50 seconds.Open the flow and add 100 g of water.Around 1:45 add another 100 g of water.Total time: 2:30 Store in a dry and cool place.

Whole-bean specialty coffee from Ethiopia, roasted by Bracia Ziółkowscy roasting brand. Dark roast, perfect for espresso machines and moka pots. The flavour of the brew resembles milk chocolate, blackberry and forest fruits.Country: EthiopiaRegion: Chelbesa, GedeoFarm: SNAP Coffee, 400 local farmersVarietal: HeirloomProcessing: NaturalCupping score: 88 / 100 pointsAltitude: 2000 - 2300 m a.s.l.FROM THE ROASTEREvery year, we choose fresh beans from Ethiopia. It’s a big deal for us; we serve them to you over the next 12 months in an espresso that is the gem of our offer. Lively, distinct, and fruity. Sweet, but balanced by a pleasant acidity. We like it that way, and it has already won you over too.Why does this coffee change? Well, we can't stock up five years in advance because the beans will age and no longer taste as good. Every year brings a new harvest, and every year we look for something that matches our ideal flavor profile. That's how we've previously had coffees from the Buku Abel and Banko Gotiti washing stations. This year, the best beans we tasted were produced by the Danche washing station from the Gedeo region. In recent years, Gedeo has become our favorite coffee region. Traditionally, coffees from these areas were sold as originating from Yirgacheffe. However, in recent years, this specific part of the region has begun to be distinguished to highlight the uniqueness of the flavor profiles found here.ABOUT THE FARMThe Danche washing station is located in the renowned coffee town of Chelbesa, situated at an altitude between 2,000 and 2,300 meters above sea level. Thanks to fertile soils and suitable cultivation methods, local farmers—around 400 households—achieve very good yields. Most of them manage small, one- or two-hectare farms. Their cherries end up precisely at Danche to be processed according to strict procedures. And trust us, the result is excellent. This coffee doesn't need to "defend" itself in the cup. It is simply outstanding.ROASTER'S OPINIONSweet, fruity, and chocolaty, with clearly marked acidity. If you like lively espresso, you won't find a better place. Our flagship espresso from East Africa.Store in a dry and cool place.

Whole-bean specialty coffee from Colombia, roasted by MAMAM roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The flavour of the brew resembles blackberry, hibiscus and cardamon.Origin: ColombiaRegion: HuilaFarm: Finca Villa BetuliaVariety: ColombiaProcessing: NaturalAltitude: 1450 m a.s.l.Cupping score: 88 / 100 ABOUT THE FARMIn the hills of Acevedo in southern Huila, Luis Aníbal Calderón and his family have transformed Finca Villa Betulia into one of the region’s most distinctive specialty-coffee farms. A second-generation producer with more than four decades of experience, Luis began working with coffee at a young age, eventually cultivating a small piece of land given to him by his father. His path hasn’t always been easy. Around 2011, low commodity coffee prices brought Villa Betulia close to financial crisis. Rather than pursuing higher yields, Luis began moving in the opposite direction: toward quality, careful processing and unusual varieties. In 2012 he planted 5,000 Gesha trees, and their success convinced him to continue transforming the farm. Villa Betulia has since become home to an extraordinary collection of coffee genetics, with more than 30 varieties cultivated and processed separately.Luis’ work is also very much a family project. Villa Betulia has developed from the small plot he first cultivated into a farm where knowledge is being passed to the next generation; his son Yeison is now involved in managing the estate alongside him.ABOUT THE VARIETYThis lot, however, comes from one of Colombia’s most important home-grown cultivars: Variedad Colombia. Developed by Cenicafé and released in 1985, Colombia was created to combine good cup quality and productivity with resistance to coffee leaf rust. At Villa Betulia, Luis approaches this familiar Colombian variety with the same attention normally reserved for his more exotic cultivars.ABOUT THE PROCESSINGFor this natural lot, only fully ripe cherries are selected. After harvest, the cherries undergo approximately 25 hours of dry fermentation before being slowly dried for around 25 days in a protected parabolic dryer. This long, controlled drying stage is particularly important in Huila’s humid and frequently rainy climate.Natural processing in Colombia is demanding. Keeping the whole fruit around the seed during drying creates the potential for greater sweetness, fruit intensity and aromatic complexity, but it also requires careful control. Consistent sorting, airflow and movement of the cherries help the coffee dry evenly and cleanly. The result is a coffee that connects traditional Colombian genetics with Luis Aníbal Calderón’s progressive approach to fermentation and processing—a beautiful example of why Villa Betulia has earned such a strong reputation among specialty roasters around the world.RECIPE V6016g of coffee250g of water 96°CMedium Grind Size 1. Whole-bean specialty coffee from Peru, roasted by Nomad Coffee from Spain. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. You can expect hints of nuts, yellow plum and toffee.Country: PeruProcessing: WashedAltitude: 1620 m a.s.l.Varietal: Colasay BourbonABOUT THE COFFEEAt NOMAD looking to establish a new long-term relationship for our house coffee section. Sofie from Sucafina recommended that we contact Alfonso from Café Monteverde and his Timuyacu farm, as his philosophy and values in the pursuit of quality, caring for his people, and protecting the environment aligned with NOMAD values.Alfonso sent us samples of several of his lots, including this Washed Bourbon from Colasay Washed was a perfect fit for what we were looking for. A sweet, easy-drinking coffee, slightly fruity but not overly so, ideal for one of our house coffees.ABOUT THE FARMTimbuyacu comes from the Quechua words Timbu (boiling) and Yacu (water), referring to a natural water spring located within the farm, where the water bubbled up as if it were boiling. This farm has a long family history, from Alfonso's grandmother, Eleodora Mori de Ibérico, to the present day, where Alfonso is in charge of the care, sale, and export of the coffee. The farm is divided into several plots: Vista Hermosa, El Mirador, Pirruro, Nuevo México, Alto Timbuyacu, Jergón, El Shapingo, El Pante, La Cabaña, Quishtucto, Pileta, and Las Peñas. This particular lot comes from the El Pante plot, named for the predominant presence of native Pante trees distributed throughout it.The farm works with a regenerative approach, recovering degraded soils through the use of organic matter, agroforestry systems, and comprehensive management from germination to post-harvest. This is something we greatly value at NOMAD.In short, we are grateful to have met and started this relationship with Timbuyacu and hope to have their coffees from now on. This commercial relationship has been directly facilitated by Sucafina's help in importing and financing the lot.ABOUT THE PROCESSThe coffee is selectively hand-picked and pulped in a drum pulper. After pulping, it is fermented for 18 to 24 hours and washed with clean water. The resulting parchment is placed on drying beds or patios where it is regularly turned to ensure even drying. The drying process takes approximately 15 to 20 days. Once dry and at the required moisture level, the parchment is stored on the farm for approximately 60 days before being transported to the dry mill for threshing and export.Store in a cold and dry space.

Whole-bean specialty coffee from Brazil, roasted by Caffe Grano roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The flavour of the brew resembles mango, white tea and melon.Country: BrazilRegion: CachoerinhaVarietal: TopazioProcessing: Anaerobic 96hFarm: CachoerinhaAltitude: 1000 m n.p.m.Cupping score: 86 / 100 ABOUT THE COFFEEA real treat, grown on volcanic soils, of the rare Topazio variety characterized by high sweetness, which, combined with anaerobic fermentation, offers a profile of yellow fruits and a syrupy texture.ROASTER'S OPINIONA item both for those who enjoy safe, classic flavors, and for those looking for something unusual and wild! The characteristic Brazilian motif of "nut and chocolate" is present here, but it doesn't take center stage. The body of white tea, plus high sweetness similar to mango. The process itself does not consist—as one might assume—of adding cooled volcanic lava to the fermentation tank. Ripe cherries are gathered into mounds resembling the shape of a volcano, allowing for more intense fermentation "inside" the pile. After some time, level it, comb it, and shape the mound again.ROYAL BEANSWhat’s behind the name Royal Beans? If Speciality beans are the pinnacle of coffee, our Royal Beans reach the Himalayas! It does most of the work here: providing chocolate, nut, sweetness, and a calm body. An espresso classic. Without edgy acidity. Without pretending that morning coffee needs to be a research project.ABOUT THE COFFEEThe Brazil comes from the Mogiana region and is naturally processed. In the blend, it is responsible for the base: milk chocolate, hazelnut, cocoa, and a smooth profile. Peru Negrisa, making up 20% of the mix, adds a bit of freshness. It is a washed Typica, hand-picked and sun-dried, featuring a citric acidity, smooth body, and notes of stone fruits. The result is simple: the espresso is meant to be sweet, full-bodied, and suitable for everyday life, but not flat.ROASTER'S OPINIONESKO! is a coffee for everyday espresso. The kind that is supposed to work in the morning, in the afternoon, and whenever the espresso machine is already waiting and you just don't feel like analyzing life. Brazil provides the foundation: chocolate, nut, and body. Peru throws in a touch of fruit and a cleaner finish. Very good solo. Very good with milk. Straightforward.Store in a dry and cool place.
