The first sip is like biting into a red grape: bursting with sweet juice, almost sparkling with freshness. Moments later, a note of dark cola appears, the kind you’d find in boutique, craft bottles, where caramel, spices, and fizzy depth create an almost dessert-like shadow. It all finishes with a soft, nostalgic accent of cherry pudding, like a homemade hot mug whose aroma lingers long after the cup is empty.This character is born from dry processing, which on this farm feels more like a slow dance between fruit and sunlight than a technical procedure. Hand-picked cherries first land on sorting tables, where each one undergoes a personal “interrogation.” Only those with perfectly taut skins and a ruby-red color move on, looking like tiny sugar-filled ornaments. They remain intact, unpeeled, unwashed, still wrapped in their juicy skins, as if freshly picked from the tree.Next, they are laid out on African beds, where the sun does its work slowly. Day after day, the cherries gently wilt, wrinkling like dried plums as they pass their sweetness into the beans. Aromas begin to concentrate, the pulp caramelizes from within, and the fruit is turned regularly so fermentation stays even, calm, and elegant.Only when the fruit becomes brittle, almost shell-like, is the bean released from its center: bright, smooth, nourished by weeks of slow drying. It then rests, its flavors settling like wine aging in a barrel. By the time it reaches the roastery, it already holds fullness within it: sweetness, depth, and intensity that later unfold in the cup as grape-like juiciness and a dark, dessert-style cola note.Corazon de Jesus is not a coffee that slips in quietly. With twelve hours of sun per day, this creates an ideal environment for Honey and Natural processing. Quality and responsibility are central to the way Diego works. With more than 60 employees, Diego ensures year round employment on projects across the farm.ABOUT THE PROCESSOur Pacamara lot underwent Black Honey processing. After harvest, ripe cherries are pulped but almost all of the mucilage is left intact. The pulped coffee is then spread in a thin layer on shaded raised drying beds. The shade slows the drying process compared to the other Honey processes used on the farm. From the very beginning, Bridazul has acted as a link between farmers and roasters. Producers deliver their coffee cherries here, while the Bridazul team handles processing, quality control, and matching coffees with the right buyers without ever taking ownership of the raw product.This allows small farmers to focus on cultivation, while buyers gain access to unique microlots that might otherwise never leave the region.What sets this place apart is its exceptionally advanced approach to fermentation and drying. Years of collecting data, testing temperatures, fermentation times, and slow drying techniques have given Bridazul a far wider range of processing methods than most standard mills in the region. Processes here are designed with a specific flavor profile in mind rather than maximum efficiency.Little Red Riding Hood is an example of this approach. In 2020, Tim Willems from Bridazul noticed that several experimental batches were too small to export individually. Instead of discarding them, they were combined into a cohesive whole. This decision led to the creation of the Bridazul Blends line, and with it, this particular composition.ABOUT THE COFFEEThe coffee comes from several farms around Dipilto and Mozonte, including El Avion, Los Pirineos, and La Bendición, located at elevations between 1400 and 1650 meters above sea level. The blend features the Caturra and Catuai varieties and undergoes Carbonic Maceration fermentation.The cherries ferment briefly in small batches under controlled conditions to highlight fresh, fruit-forward notes. This approach allows them to bring out the best sensory qualities of every batch and offer coffees with truly distinctive profiles.José Antonio Salaverria and his sons, Andrés and José Antonio Junior, represent the sixth and seventh generations of coffee producers from Huachapán. In recent decades, the family has focused on top-quality coffees, implementing programs that select plots based on altitude, quality potential, and growing conditions. Their main production areas are Santa Rita, San Francisco, and El Molino, located around the Santa Ana volcano.Traditional varieties dominate on the Salaverria farms, such as Bourbon Elite and Híbrido San Francisco, a hybrid of Bourbon and Pacas. The family is known for its innovative approach to coffee cultivation and processing. They experiment with various fermentation methods to optimize quality and create lots with standout sensory profiles. Each farm is divided into smaller plots called tablones, allowing for precise crop management and the creation of meticulously described microlots. In response to challenges such as coffee leaf rust, the Salaverrias have focused on soil regeneration and strengthening plant resilience. They produce their own organic fertilizer called Huisil, made from organic waste, mainly coffee pulp as well as fish and animal by-products. Currently, they use a blend of 50% Huisil supplemented with mineral components such as nitrogen, potassium, boron, and zinc. They also apply various pruning methods adapted to tree height and variety to maintain productivity and plant health.The Salaverrias place great importance on staff management and providing fair working conditions. Farm managers receive bonuses based on harvest quality, and many workers are employed on a permanent basis, fostering a committed and experienced team. Between 50 and 60 people live and work directly on the farms, and coffee pickers are offered competitive wages along with optimized work systems that allow them to finish earlier in the day, giving them more time with their families.The family also invests in local social infrastructure. Near one of the farms in San Francisco, housing has been built for seasonal workers and access to medical care has been ensured. Doctors regularly visit the plantations, and the family supports local clinics, including two they built themselves in Ataco. It’s a lively, energetic coffee, the kind that makes your foot tap without you even noticing.Fresh harvests from Carlos Pola, senior and junior, regularly appear in our line-up. Recently, in espresso as Finca Las Brisas, previously in a lighter roast. Each lot is expressive in its own way, and this Pacamara, with its intense candied sweetness, literally coats the taste buds.This nano lot was purchased directly from the Pola family at a financially demanding point in the season, before the larger volumes had begun to generate returns. In practical terms, it provided the farm with additional liquidity at a time when labour costs are at their peak.After harvest, the cherries aren’t exposed to full sun straight away. For the first few days, they rest in bags kept in the shade. With access to air, the fruit begins to breathe and soften, while sugars in the pulp slowly break down. This brief pause before drying allows fermentation to begin more gradually and proceed more evenly.As a result, the fruit releases more natural sweetness, the profile feels more composed, and fermentation stays clear of harsh alcoholic edges. Pacamara, with its fuller structure and long finish, pairs beautifully with natural processing.
