Perfect for those looking for clarity of flavor and a distinct origin character in their espresso.ABOUT THE PROCESSINGThe key to this profile lies in the washed processing method, also known as wet processing. The process begins right at the harvest stage. Only fully ripe, hand-picked coffee cherries make it to further processing. Next, the cherries are thoroughly sorted to discard any unripe or damaged fruit.The subsequent step is depulping, which is the mechanical removal of the skin and most of the pulp. A thin, sticky layer of mucilage containing natural sugars then remains on the bean. After that, fermentation begins in water tanks, usually lasting from a dozen to several dozen hours. During this time, natural enzymes break down the remaining pulp, separating it from the bean. This is one of the most crucial moments – it determines the cleanliness and character of the future flavor profile. After fermentation, the beans are thoroughly rinsed with clean water, which completely removes the remnants of the pulp and stops the fermentation processes. Thanks to this, the coffee's flavor becomes clearer and free from heavy, fermented notes. The final stage is drying on raised tables (so-called African beds), where the beans dry for about 10–15 days. They are regularly turned to ensure even moisture evaporation and to avoid defects.The result of the entire process is a coffee of exceptional clarity – one in which you can clearly taste the origin, variety, and growing conditions. Needless to say, all these excellent coffees are Arabicas.ABOUT THE VARIETYMeanwhile, the owners of Kiva Estate decided to see what the best possible Canephora from Panama would taste like. For some, this thought is still anathema. Canephora has still not gained the status of a coffee worthy of the best producing countries; in Costa Rica, its cultivation is actually banned.ABOUT THE FARMThe owners of Kiva Estate, a group of long-time friends who make a living from non-coffee professions, treated the project as a challenge – and, as it seems to us, a way to burn through a certain amount of capital (for the sake of the idea). For a year, they traveled around other producing countries, analyzing the differences in the cultivation and processing of Canephora and Arabica. They also gradually gathered the equipment needed for processing and brought a coffee cultivation specialist from Nicaragua to supervise the entire venture. This probably made a lot of sense, because although they are enthusiasts, they live in cities on a daily basis and had no prior experience with cultivation.The first harvest in 2023 immediately brought them publicity during the World of Coffee trade show in Athens. Since then, the fame of Rufina has only been growing, and the Brothers are also jumping on this train.PROCESSINGA few words about the processing – as is often the case with fine Canephora, we have anaerobic processing here. The coffee spent 10 days in fermentation tanks. Then, it underwent slow drying at a strictly controlled temperature. The result: a complex, deep, and delicate flavor. This is one of the better Canephoras we have tasted.ROASTER'S OPINIONPanama means Geisha? Well, no. We have an absolutely unique specimen for you – Canephora from a country famous for Arabica. Behind this coffee are mainly small family farms, where the fruit is harvested by hand from December to March. In the Jinotega region, coffee cultivation is a part of everyday life – most producers rely on traditional working methods and multigenerational experience.ABOUT THE PROCESSINGThe applied fully washed processing method, meaning full wet processing, has a huge impact on the cup's profile. It is precisely responsible for the clarity of flavor, clean finish, and elegant balance of this coffee.The process begins with the selective harvesting of ripe coffee fruit. Pickers choose only red, properly ripe cherries, as even a small share of unripe fruit could disrupt the sweetness and balance of the final brew.Right after the harvest, the fruit goes to a water selection. The coffee cherries are submerged in water to discard light, unripe, or damaged fruits that float to the surface. Next, an additional manual quality control is conducted.The subsequent stage is depulping, which is the separation of the skin and most of the pulp from the bean. After this process, the beans are still covered with a sticky layer of mucilage – natural sugars and pectins.Then the coffee goes into fermentation tanks. This is one of the most important moments of the entire processing. Natural enzymes break down the remnants of the pulp, and producers very precisely control the fermentation time to maintain the cleanliness of the profile and avoid excessive, alcoholic notes. In the case of this coffee, fermentation emphasizes the sweetness and fruitiness while leaving the cup incredibly clear.After fermentation, the beans are thoroughly rinsed with clean water. Thanks to this, the last remnants of mucilage are removed, and the coffee gains the elegance, lightness, and structured flavor profile characteristic of washed processing.The next stage is drying. The beans in parchment are spread out on patios or African beds and regularly turned so they dry evenly under the Nicaraguan sun. The process lasts from a few to several days and has a huge impact on the stability and longevity of the flavor. At the end, the parchment husk is removed, and the green beans are sorted by size and quality.The result? An espresso that is simultaneously sweet, creamy, and fluidly fruity.
