Evin decided to focus on different methods of processing and has been extremely successful at it.He shares his wet mill with fourteen of his family members including his brothers and cousins. He constantly improves the farm’s and the wet mill’s infrastructure and this year he’s planning to build two more solar dryers to assure maximum coffee quality.We are so happy and proud to be able to share Evin’s Pacas anaerobic experiment.ABOUT COFFEEThe cherries were picked at the perfect maturation point, placed in plastic bags and underwent a 72 hour anaerobic fermentation. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.At 00:50 pour hot water to 200g. At 01:10 pour hot water to 250g.Swirl your V60 and let the coffee drip. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long. But always taste and then judge your coffee.Store in a cold and dry space.

He has tested different coffee varieties and microbial cultures, always seeking harmony between flavour and aroma. During these trials, he turned to wine yeasts — well-known, thoroughly tested in countless fermentation processes, and allowing for conscious, predictable control over the entire procedure. “It’s all about integration!” Hernández repeats, emphasising that balance is central to his work. For him, aroma cannot exist without flavour, and flavour should always reflect the terroir.For this lot, processing unfolds in several carefully planned stages. After depulping, Barolo-type yeasts are added to the cherries — the same strains long used in Italian winemaking to enhance fruit expression and depth. In coffee they work similarly: stimulating the breakdown of natural sugars, which translates into a rounder mouthfeel, pronounced sweetness, and a fuller body. Fermentation takes place in barrels, without oxygen, and lasts around 24 hours. Once complete, the cherries are dried using the honey method, where part of the mucilage remains on the seed. This approach significantly reduces water consumption—a factor of growing importance on the farm, where access to water is becoming increasingly limited.In the cup, Honduras Barolo Yeast radiates a seamless integration of aroma and flavour: the depth of ripe red fruits, a subtle wine-like note, and an exceptionally smooth body. We’ve been working with Hellen for three years now, thanks to Nicolas, who exports coffees from Costa Rica. Last year I had the pleasure of driving up the most winding and bumpy road to the top of a mountain where Hellen’s house and farm are located. We got there in a car Nico had borrowed from his mom, because his had broken down the day before. At some point his mom’s little SUV simply couldn’t make it any further, so Hellen drove down in her big pickup truck and towed us the rest of the way up.First she fed us, then she showed us the farm and told us its story. The farm covers 90 hectares, but as much as half of the land is preserved as natural forest. Part of the remaining area is used for avocado cultivation to help maintain soil balance.Our close relationship with Raul and his family means we know these beans inside out and have been buying them every single year since the very beginning of Heresy.– The RoasteryABOUT THE COFFEE PROCESSING ON THE FARMA processing method that the Perez family has perfected over the years. It begins with depulping, which separates the beans from the fruit. The beans then ferment in tanks for 36 to 40 hours. This particular microlot is later washed and moved to African drying beds. Compared to patio drying, these beds allow for more even airflow during drying, resulting in greater control over the process.ROASTER’S OPINIONWe’ve been drinking Raul’s coffee every year for the past six years, and this is unquestionably the best Bourbon he has produced so far.
