Introducing Alma Negra from the legendary Las Lajas. This is one of those micro mills whose name has become synonymous with a distinctive style: intense sweetness, juicy naturals and funky processing. Alma Negra is one of its best-known processes.This Costa Rican coffee lands in the territory of dark red fruit and dried tea leaves. The closest comparison would be cherry rooibos: sweet, gently astringent and syrupy, with an exotic, tangy flash lingering in the aftertaste.ABOUT THE PROCESSINGThis signature take on the natural process is based on the very slow and precisely controlled dehydration of whole coffee cherries. Only hand-picked fruit with a sugar content above 22° Brix makes the cut. The cherries are first washed and then density-sorted in water, with the lower-density fruit removed. An additional round of electronic sorting eliminates any remaining defects. The selected cherries are dried on patios inside a greenhouse for 22 to 30 days, depending on the intensity of the sunlight. After drying, the coffee rests for at least 60 days to equalise its moisture content and stabilise the flavour profile developed in the fruit. Only then is it hulled, sorted once again and prepared for packing.ABOUT THE FARMLas Lajas is run by Francisca and Oscar Chacón. Before they started pushing the boundaries of coffee processing, they were already ahead of their time in how they approached cultivation. They decided to switch to organic farming after the death of Oscar’s father, who had worked with pesticides for many years. Since then, Las Lajas has stopped using conventional crop protection chemicals. They made that decision at a time when organic farming did not yet command a higher price for coffee. We’ve been working with Hellen for three years now, thanks to Nicolas, who exports coffees from Costa Rica. Last year I had the pleasure of driving up the most winding and bumpy road to the top of a mountain where Hellen’s house and farm are located. We got there in a car Nico had borrowed from his mom, because his had broken down the day before. At some point his mom’s little SUV simply couldn’t make it any further, so Hellen drove down in her big pickup truck and towed us the rest of the way up.First she fed us, then she showed us the farm and told us its story. After the walk she prepared a cupping where she presented eight of her coffees. A cupping in the kitchen while rice and beans are cooking right next to you? Why not.The coffees were phenomenal. And that Geisha? That’s the coffee that’s been appearing in my dreams ever since I came back from Costa Rica. Lots of tropical fruit, but without the kind of fermentation often associated with coffees from this country. Before that the region was known for cultivating only vegetables.In 2012 during the economic crisis Evin and his wife, Alma decided to move to Spain and work hard to bring their economical situation back to balance. They’ve managed to do so and luckily they were able to return to their 3,5 hectare beauty land. In 2013 Evin participated in the Cup of Excellence for the first time and placed 12th. Evin decided to focus on different methods of processing and has been extremely successful at it.He shares his wet mill with fourteen of his family members including his brothers and cousins. He constantly improves the farm’s and the wet mill’s infrastructure and this year he’s planning to build two more solar dryers to assure maximum coffee quality.We are so happy and proud to be able to share Evin’s Pacas anaerobic experiment.ABOUT COFFEEThe cherries were picked at the perfect maturation point, placed in plastic bags and underwent a 72 hour anaerobic fermentation. Next, fermented cherries were de-pulped and dry fermented in tanks for additional 4 hours, followed by multiple water rinsing and slow drying in a solar dryer for 18 days.ROASTER'S NOTEElegant, complex, and perfectly capturing the character of high-quality coffees from Honduras.V60 RECIPE16g of coffee250g of water 96°CMedium Grind Size 1. Put a paper filter in your V60 and rinse it with hot water ( 96C ). It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that  98,5 % of your brewed coffee is water)2. Remove the rinsing water from the server.3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.At 00:50 pour hot water to 200g. At 01:10 pour hot water to 250g.Swirl your V60 and let the coffee drip. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long. But always taste and then judge your coffee.Store in a cold and dry space.
