Among them is a crown jewel from the Gasharu washing station: Women’s Crown. A lot prepared entirely by women, from the moment the cherries are harvested all the way through to the final stages of processing.The name refers to the Rwandan tradition of Urugori, a symbolic crown given to a woman after the birth of her first child as a sign of recognition for her role within the family and the community. In the case of this coffee, it also serves to highlight the role women play across the entire coffee value chain.In the cup, this year’s harvest is defined above all by sweetness. The profile is fruity, though closer to dark and dried fruits. Notes of plum appear first, followed by dried apricot and raisins. To round out this wave of sweetness, the whole profile feels as if the fruits had been drizzled with buckwheat honey. Sweet, dense and deeply satisfying.This lot was produced within a transparent pricing model, where additional value goes directly to the women involved in its production. Although it will not put you on your feet, it is a ticking fruit bomb. Decaf coffees have long had their place on our shelves and in our hearts, but this one quickly turned our habits upside down. From the very first encounter, it delivered a juicy punch straight to the taste buds. Is this really a decaf? This fruity? This expressive? We could not walk past it indifferently, nor resist sharing what the renowned Nogales farm is doing with caffeine free coffee. Nogales is a family run farm led today by Oscar Hernandez, a third generation farmer from Huila, who has been breaking coffee conventions for years, a mindset confirmed by a Cup of Excellence win in 2006.For the sensory description, we limited ourselves to three descriptors, although the truth is that the profile could easily hold almost an entire palette of Mamba like flavours. The cup is complex and intense, hard to confuse with anything else. A pronounced sweetness is supported by well balanced acidity and a round body. If you enjoy fruit forward profiles, avoid caffeine and do not want to give up either, these beans are made for you.The processing begins in a classic way. Hand harvesting, flotation to separate only ripe cherries, followed by 24 hours of fermentation and thorough washing. The coffee is then gently dried on raised beds until it reaches the desired moisture level.Only then does the decaffeination begin. First, the beans are immersed for four hours in hot water at 40°C, allowing the caffeine to be extracted. This step is repeated twice. Next, a natural must is used, an extract obtained from the husk and pulp of the coffee cherry. The entire process relies solely on components derived from the coffee itself. Finally, the beans are washed once more and dried again, preserving clarity in the cup and the coffee’s natural sweetness.

The farm was designed not only to produce exceptional coffees, but also to welcome visitors into the natural beauty and traditions of Cauca. Ecological trails wind through the plantation, biodiversity thrives, and comfortable cabins offer guests a quiet place to rest after a day on the farm.Life on the farm follows the rhythms of the coffee trees. Throughout the year, the alleys between rows are trimmed several times to keep competing plants from stealing sunlight, water, and nutrients. Before fertilization, each tree is carefully cleaned to maximize nutrient absorption. The team also practices Re-Re, an old but essential method of collecting ripe, overripe, and fallen cherries after harvest. This keeps pests like the coffee berry borer under control and protects the next crop.Fertilization is guided by annual soil analyses, tree development, and productivity. Weather, especially rainfall shaped by El Niño and La Niña, determines how and when nutrients are applied, but the goal is four fertilizations each year. Alongside these applications, the team spreads organic compost made from coffee byproducts at least once annually to enrich the soil and support long-term sustainability.ABOUT THE COFFEEHarvest begins in May and runs through August, with a smaller mitaca harvest in November and December. Skilled pickers—around seven per hectare at peak—move through the farm every two to three weeks, selecting only the deep red, fully ripe cherries. After picking, the cherries undergo Balceo, a water separation process that removes unripe or defective fruit.From the farm, the cherries travel in a refrigerated truck operated by Área 18, arriving at Banexport’s processing facility in Popayán within 24 hours. The crates remain cool and well-ventilated to slow microbial activity and prevent unwanted fermentation.At the mill, each lot is weighed, registered, and sampled. A 1-kg sample undergoes detailed analysis to determine the best processing method; for this particular lot, a Washed process was chosen. After cleaning and sorting, the fruit is pulped and the beans are moved into a stainless-steel bioreactor equipped with full environmental controls-oxygen flow, temperature, pH, °Bx, and pressure. Pink Bourbon thrives here: an oxygen-rich environment encourages the natural yeast strains of the variety to multiply, creating aromatic precursors that bring out its floral and fruity character. After 48 hours, the coffee is washed three times.These controlled microbial shifts shape the sensory profile of the coffee, accentuating the bright, delicate, and complex attributes that Pink Bourbon is known for.Drying is one of Cauca’s greatest challenges. Unlike the long dry seasons of Africa, humidity here often exceeds 60–80%, and annual rainfall can surpass 1,000 mm. To overcome this, Área 18 uses electric dehydrators that combine heat, cold air, and dehumidification. Their intelligent control system runs continuously, allowing the coffee to dry evenly in just two days without compromising flavor.Once dried, the coffee rests in fique bags lined with GrainPro for 15 days, stabilizing moisture and ensuring uniform quality before export.

The plantation grows traditional Bourbon varieties. The Salaverrias apply an innovative approach both to processing and farm management. Coffee cherries are sorted by harvest day and then processed using different fermentation and drying methods, tailored to the potential of each lot. This approach allows them to bring out the best sensory qualities of every batch and offer coffees with truly distinctive profiles.José Antonio Salaverria and his sons, Andrés and José Antonio Junior, represent the sixth and seventh generations of coffee producers from Huachapán. In recent decades, the family has focused on top-quality coffees, implementing programs that select plots based on altitude, quality potential, and growing conditions. Their main production areas are Santa Rita, San Francisco, and El Molino, located around the Santa Ana volcano.Traditional varieties dominate on the Salaverria farms, such as Bourbon Elite and Híbrido San Francisco, a hybrid of Bourbon and Pacas. The family is known for its innovative approach to coffee cultivation and processing. They experiment with various fermentation methods to optimize quality and create lots with standout sensory profiles. Each farm is divided into smaller plots called tablones, allowing for precise crop management and the creation of meticulously described microlots. In response to challenges such as coffee leaf rust, the Salaverrias have focused on soil regeneration and strengthening plant resilience. They produce their own organic fertilizer called Huisil, made from organic waste, mainly coffee pulp as well as fish and animal by-products. Currently, they use a blend of 50% Huisil supplemented with mineral components such as nitrogen, potassium, boron, and zinc. They also apply various pruning methods adapted to tree height and variety to maintain productivity and plant health.The Salaverrias place great importance on staff management and providing fair working conditions. Farm managers receive bonuses based on harvest quality, and many workers are employed on a permanent basis, fostering a committed and experienced team. Between 50 and 60 people live and work directly on the farms, and coffee pickers are offered competitive wages along with optimized work systems that allow them to finish earlier in the day, giving them more time with their families.The family also invests in local social infrastructure. Near one of the farms in San Francisco, housing has been built for seasonal workers and access to medical care has been ensured. Doctors regularly visit the plantations, and the family supports local clinics, including two they built themselves in Ataco. In addition, they donated land for the construction of two public clinics and supported the development of a local school and a football field. Both techniques remove caffeine while preserving the integrity of the bean and the full spectrum of its natural aromas.In the CO₂ Washed method, green coffee beans are exposed to carbon dioxide under high pressure. CO₂ acts as a selective solvent, binding caffeine molecules without affecting the compounds responsible for the coffee’s flavour and aroma. After the process is complete, the CO₂ is released and the caffeine separated, making this method completely safe, clean, and environmentally friendly.The Mountain Water Washed method, on the other hand, uses pure water from mountain sources. The beans are soaked under controlled conditions, which opens their structure. The water is then circulated repeatedly, washing out the caffeine through a natural difference in concentration. After the process, the beans are carefully dried to restore the proper moisture level.Both methods preserve the authentic character of the coffee, delivering a full, natural taste — without caffeine.BREWINGThe density of decaffeinated coffee differs slightly from that of caffeinated coffee. He has tested different coffee varieties and microbial cultures, always seeking harmony between flavour and aroma. During these trials, he turned to wine yeasts — well-known, thoroughly tested in countless fermentation processes, and allowing for conscious, predictable control over the entire procedure. “It’s all about integration!” Hernández repeats, emphasising that balance is central to his work. For him, aroma cannot exist without flavour, and flavour should always reflect the terroir.For this lot, processing unfolds in several carefully planned stages. After depulping, Barolo-type yeasts are added to the cherries — the same strains long used in Italian winemaking to enhance fruit expression and depth. In coffee they work similarly: stimulating the breakdown of natural sugars, which translates into a rounder mouthfeel, pronounced sweetness, and a fuller body. Fermentation takes place in barrels, without oxygen, and lasts around 24 hours. Once complete, the cherries are dried using the honey method, where part of the mucilage remains on the seed. This approach significantly reduces water consumption—a factor of growing importance on the farm, where access to water is becoming increasingly limited.In the cup, Honduras Barolo Yeast radiates a seamless integration of aroma and flavour: the depth of ripe red fruits, a subtle wine-like note, and an exceptionally smooth body. It is a coffee with a juicy, fruit-forward profile, shaped through a process that mirrors its producer’s philosophy. “Feel the terroir & play with it,” says Hernández — and that is exactly how he carries out his experiments.
