ABOUT THE COFFEE
There is a lot going on in the cup. First comes the juicy sweetness of blueberries, followed a moment later by a distinctive note of cola, with the whole experience rounded off by a delicate aroma of magnolia flower. The profile is extremely intense, creamy, and multidimensional, with every sip revealing something new. It is one of those coffees that can pause time and leave you wishing the cup lasted much longer.
Behind this character is both the exceptional terroir of the Guji region and thoughtful processing. Only ripe cherries from local family farms, where coffee is still cultivated with a vast amount of manual labor, arrive at the Uraga station. The cherries then undergo controlled anaerobic fermentation and are dried slowly on raised beds. This process does not overpower the coffee's natural character, but instead extracts even more sweetness, depth, and aromatic complexity.
We chose this lot because it is exactly what we expect from modern specialty coffees. Fermentation here is a means, not the end — it does not take center stage, but rather enhances the very best that Guji has to offer. The result is spectacular. It is a coffee that delights from the first cupping and stays in your memory long after the last sip.
