A blend of beans from Hendra Maulizar and Asman Arianto, who started the specialty revolution on the island. Both started with small fields and selling fruit to the mass market. In the early 2000s, both decided to switch to producing high-quality coffee and processing fruit from surrounding farmers. And both live in the same village of Pantan Musara near Lake Takengon.The revolution they started consisted of being the first to depart from the traditional Sumatran processing method, gilling basah, which minimized the fruit drying time due to the humid local climate and unfortunately resulted in a coffee flavor that was not good. Asman and Hendra tried natural processing (whole fruits are dried for a long time, and finally, the dry pulp and skin are removed) and washed processing (skin and pulp are removed from the fruits immediately, and the prepared beans are dried this way), and they began experimenting with fermentations. The result turned out to be excellent. Today, they work with trusted farmers who cultivate and harvest with proper care.You should know that Hendra and Asman are very demanding - of themselves and others. Hendra personally supervises his workers almost every day during the harvest season; he is a perfectionist. Asman is a Cup of Excellence winner. It is also worth mentioning that their path to where they are now was not easy. Asman came to Aceh from around Berastagi after a local volcano awakened and many people were displaced. Hendra arrived in Aceh with his father, who moved here to grow coffee - initially, they had only 1 hectare of land and struggled with many difficulties. It is also worth emphasizing that both support the farmers they work with, share knowledge and access to exporters, and are known for their high work ethic. What does this mean? For instance, they pay farmers immediately for delivered fruit, which is unfortunately not so obvious in the coffee world.  ROASTER'S OPINIONOur blend consists of a full spectrum of varieties characteristic of Aceh, including some you won't find outside of Indonesia. Each of them influences the final profile of the coffee, but roasting them together presents a significant challenge. The coffee composition includes: P88, Ateng, Abyssinia, Catimor, and Typica. Farmers grow them not only for their flavor qualities, but high yields and resistance to diseases or pests also matter.P88 comes from Colombia, from where it was brought to Sumatra; it can also be found on the island of Java. Catimor and the related Ateng are varieties known for their resistance to fruit disease; Ateng is a typical Indonesian hybrid. Abyssinia - almost unseen outside of blends - is a variety brought to Indonesia from Ethiopia in the early 20th century. Indonesian Typica arrived in Indonesia from Yemen - likely back in the 17th century. It is a very old variant of this variety, almost unseen in Indonesia outside of Sumatra. Probably each of these varieties separately would not yield such a good effect as they create in a blend, offering flavor intensity, sweetness, body, acidity, and earthy notes characteristic of Sumatra.When it comes to roasting beans from Sumatra, it is always a great pleasure for us, because for many years we have had an undisguised weakness for coffees from that region of the world and we love drinking them. But at the same time, it is a big challenge, because it means roasting several varieties in one drum, each behaving differently during the roasting process (which is why you will find beans of various shapes and shades of brown in the bag). The second difficulty lies in the fact that the beans from there are internally not very dense, and consequently very delicate and easy to "over-roast." When roasting coffee, we always strive to make its taste as balanced as possible. The roast cannot be too light, because then the coffee lacks sweetness. Nor can it be too dark, so that the brew has appropriately high acidity and well-emphasized fruity notes. In the case of coffees from Sumatra, as well as our coffee of the month, this window is exceptionally narrow. After 30 seconds, slowly pour in the rest of the water.3. After 1:45 min, open the dripper so the brew flows into the server - it should drain completely in about 2:15 min.Iced version20 g coffee 90 g ice 180 g water temp. 94 degrees1. Medium-high intensity ensures that the coffee remains distinct, yet at the same time remarkably pleasant and balanced.ABOUT THE PROCESSINGThe exceptional character of this coffee is heavily influenced by the anaerobic natural processing method, which requires great precision at every stage. The process begins with meticulous hand-harvesting of only fully ripe cherries. Next, the coffee cherries are thoroughly sorted so that only the finest fruit moves on to further processing.The next stage is the fermentation of whole fruits in an anaerobic environment. The cherries are placed in sealed bags from which oxygen access is removed. For about 120 hours, a controlled fermentation takes place, during which yeast and microorganisms intensively develop complex aromatic compounds while maintaining full control over the process flow. As a result, the coffee gains greater sweetness, depth, and an intensely fruity character.After fermentation is complete, the fruits are spread out in a very thin layer on the patio to immediately halt the fermentation process and begin even sun-drying. The result of this demanding processing is an espresso with a creamy body, distinct fruitiness, and a long, sweet finish. Guatemala Ayarza perfectly demonstrates how skillfully executed anaerobic fermentation can highlight the natural potential of the beans, creating a coffee full of juicy fruit and dessert-like sweetness.Finally, dessert sweetness, juicy fruit notes, and fruit-derived acidity meet in the cup. Just as the warm weather has settled in for good, the first fresh harvests from Africa are starting to arrive. Itumpi from Tanzania clearly reminds us why we value coffees from this part of the continent: crisp, juicy brews with a large dose of freshness.In taste, Itumpi leans towards green-red rhubarb and pink grapefruit. The acidity is distinct and pleasantly juicy. In mouthfeel, the coffee is light, tea-like, and clean, with a crisp finish that practically begs to be brewed over ice.The enigmatic PB stands for peaberry. It refers to a natural anomaly where, instead of two flat beans, a single, smaller, and rounder bean develops inside the coffee cherry. Sometimes overlooked, though completely unfairly, because it can yield a very intense, concentrated flavor. It was this intensity that stole our taste buds from among the other grades.The raw material comes from the Itumpi cooperative in the Mbozi district, Songwe region. About 160 local producers operate here, cultivating coffee at an altitude of 1500–1700 meters above sea level. The coffee grows at an altitude of 1,600–2,100 meters above sea level in fertile volcanic soils and a diverse microclimate. Cherries reach the Rubirizi station through local leaders who coordinate their harvest and ensure quality right from the delivery stage. The combination of high altitude, careful selection, and the experience of local producers yields an intense, fruity-chocolate character.An interesting aspect is how this lot was selected. Beans that, due to their appearance—darker parchment, spots, or pulp residue—would previously have been automatically categorized into a lower grade, were re-evaluated based on cup quality. Those without actual defects were selected and prepared as a separate, more affordably priced lot. The coffee undergoes multi-stage sorting, supported by an optical sorter, followed by intensive natural processing with a short anaerobic fermentation stage. The result is a very sweet, complex, and intense coffee.ROASTER'S OPINIONThe profile of this Ugandan coffee is the result of a long fermentation—ripe mango and dark chocolate combine with notes of balsamico and rum, creating a thick, intense character unusual for coffees from the Mount Elgon area. It is a very fruity and complex coffee with an exceptionally deep profile.In the aroma, ripe, almost caramelized mango dominates, accompanied by a sweet balsamic note and a delicate fermented accent. In flavor, mango builds an intense, syrupy sweetness, while balsamico and rum give depth and a slightly liqueur-like character to the whole profile. The profile finishes with dark chocolate and a long aftertaste. Since 1929, it has been managed by a group of Swiss investors. The coffee trees grow at an altitude of 1,600–1,765 meters above sea level, under the shade of trees, which promotes the slow ripening of the fruit and the development of a complex profile.Over 200 people work permanently on the farm, and during the harvest season, up to 2,000 seasonal workers join them. The farm provides housing, medical care, and education for workers and their families, while focusing on responsible and environmentally friendly farming methods.The name "Mondul" comes from natural springs that have nourished the crops and local communities for generations. Water from these springs is also used for wet processing – after harvesting, ripe cherries are washed and fermented, then dried on raised African beds for about 7 days. This process preserves the clarity of the profile and brings out a delicate floral note, citrus, and tea-like qualities, without unnecessary heaviness or fermented character.ROASTER'S OPINIONIt is rare to come across coffee from a farm that has been operating continuously since 1899. Mondul is precisely such a case – one of the oldest and most recognizable farms in Tanzania, now belonging to Burka Estate at the foot of Mount Meru. The washed process emphasizes the clarity of the profile, allowing delicate florals, citrus, and a tea-like note to shine through.In the aroma, delicate flowers and fresh lemon come to the fore, with a light, tea-like note appearing in the background. The cup is dominated by juicy notes of mirabelle plum, nectarine, and gooseberry, which smoothly transition into the sweetness of cherry jam and subtle buttery almond cookies. Medium-high intensity ensures that the coffee remains distinct, yet at the same time remarkably pleasant and balanced.ABOUT THE PROCESSINGThe exceptional character of this coffee is heavily influenced by the anaerobic natural processing method, which requires great precision at every stage. The process begins with meticulous hand-harvesting of only fully ripe cherries. Next, the coffee cherries are thoroughly sorted so that only the finest fruit moves on to further processing.The next stage is the fermentation of whole fruits in an anaerobic environment. The cherries are placed in sealed bags from which oxygen access is removed. For about 120 hours, a controlled fermentation takes place, during which yeast and microorganisms intensively develop complex aromatic compounds while maintaining full control over the process flow. As a result, the coffee gains greater sweetness, depth, and an intensely fruity character.After fermentation is complete, the fruits are spread out in a very thin layer on the patio to immediately halt the fermentation process and begin even sun-drying. The result of this demanding processing is an espresso with a creamy body, distinct fruitiness, and a long, sweet finish. Guatemala Ayarza perfectly demonstrates how skillfully executed anaerobic fermentation can highlight the natural potential of the beans, creating a coffee full of juicy fruit and dessert-like sweetness.Finally, dessert sweetness, juicy fruit notes, and fruit-derived acidity meet in the cup. The espresso has a silky body and leaves a long, pleasant finish. It works great as a dose of refreshment on its own. When combined with milk, it takes on even greater sweetness, while the fruity accents become gentler, resembling a creamy dessert. The SL28, SL34, and Ruiru 11 varieties are also responsible for the profile.ABOUT THE PROCESSINGAfter selective hand-picking, ripe cherries are thoroughly sorted, including in a water tank, then depulped and fermented for about 24 hours. After fermentation, the beans are washed and dried on raised beds, where they are regularly turned and protected from intense sun and night moisture. Slow, even drying preserves the clarity of the profile and highlights the characteristic, lively acidity of Kenyan coffee.ROASTER'S OPINIONGikirima is a classic, high-altitude Kenya – clear, intense, and full of fruit, with a characteristic, lively acidity and a delicate tomato accent. Blackcurrant and citrus build an energetic profile, while kiwi and tomato add an interesting complexity to it.Intense blackcurrant dominates the aroma, complemented by fresh orange and a subtle, umami tomato note. This season, we went for the Aji variety, already warmly received by you, which struck us with its transparency. We got a proper strawberry punch straight to the taste buds, and we are still recovering from that fruity knockout.In the cup, the strawberry was the main thing: fresh, but also a little more jammy. At times, we had the impression of those yoghurt-and-strawberry chocolates appearing in the flavour too. There is no doubt that a lot is going on here, and sensory boredom is not really an option. We completed the flavour profile with notes of mango and sea buckthorn to highlight the fresh, soft sweetness and intense acidity that stays with us long after the last sip. In truth, the range of associations was almost endless, so we narrowed it down to the notes that stood out the most and best captured this juicy, ripe fruitiness.ABOUT THE VARIETYWe write the variety simply as Aji, though its fuller name is Bourbon Aji. The name comes from… a pepper. Farmers in southern Huila noticed the distinctive aroma of the cherries, reminiscent of a small chilli pepper. Here comes the plot twist, though: genetic testing has shown that it is not a direct descendant of classic Bourbon, but a variety of Ethiopian origin.ABOUT THE PROCESSINGThe coffee and its processing come from Luis Marcelino of Aroma Nativo in Pitalito. The name Hydro Honey may sound fancy, but it is not just a pretty label. Behind it stands a specific, multi-stage process. Only the ripest cherries go into processing, first fermenting in a controlled anaerobic environment. The coffee is then depulped and pre-dried. Later, it returns to the tanks for a rehydration stage with selected yeasts and bacteria, before moving to raised beds, where it dries for up to 26 days. Finally, it goes through three months of stabilisation under controlled conditions. This is exactly the process that helps build an equally layered profile: intense, juicy and long-lasting.Store in a cold and dry space.

After fermentation, the beans are washed, sorted by density, and dried on raised African beds for 12–15 days. Regular turning and protection from intense sun and night moisture help preserve the clarity of the profile, highlighting the clear acidity and delicate florals characteristic of washed coffees from Yirgacheffe.ROASTER'S OPINIONAricha is one of the most valued stations in Yirgacheffe, and its washed lots have been recognized for years as a great example of the region's character. This coffee combines intense jasmine, sweet apricot, and an unusual, hoppy accent that adds originality and complexity.In the aroma, distinct jasmine dominates with a delicate, tea-like note. In flavor, juicy apricot appears, accompanied by a characteristic hoppy accent. As it cools, the profile becomes more tea-like. According to World Coffee Research and Perfect Daily Grind, it is an absolute classic and a benchmark against which other modern botanical varieties are evaluated.What is worth knowing about it?Compact growth: Caturra possesses a dwarfism gene. The shrubs are short and stocky, which allows farmers to plant them more densely and makes harvesting the cherries much easier.A demanding patient: The price for high yield is poor health. Caturra is extremely susceptible to coffee leaf rust (roya) and pests, meaning it requires a great deal of attention, knowledge, and care from the farmer.Cup profile: Grown at the right altitude, it rewards you with brilliant quality. Expect a multi-dimensional, vibrant, and clean citric acidity, a medium body, and a distinct sweetness with notes of chocolate, caramel, and juicy fruits.No genetic modifications in a laboratory – a pure, natual revolution that changed the map of the specialty coffee world.
