This lot was produced as part of the Black Condor Project – an initiative supporting more than 100 independent farmers through fair pricing, training, and access to modern processing infrastructure.The project is led by Emmanuel, a producer raised in a family with a multi-generational coffee tradition. In 2016, together with his family, he established a central processing station to help farmers from more than 15 nearby villages process their coffee in a controlled, quality-focused way. This approach allows for a consistent and clean sensory profile while also significantly increasing the income of the local community. Farmers are offered prices up to 18–20% higher than the market average, and regular workshops on fermentation, drying, and cupping help continuously improve production standards.ABOUT COFFEEColombia La Roma undergoes a classic washed process, which highlights the natural clarity and elegance of Colombian varieties such as Caturra and Castillo. This decision led to the creation of the Bridazul Blends line, and with it, this particular composition.ABOUT THE COFFEEThe coffee comes from several farms around Dipilto and Mozonte, including El Avion, Los Pirineos, and La Bendición, located at elevations between 1400 and 1650 meters above sea level. Moments later, a note of dark cola appears, the kind you’d find in boutique, craft bottles, where caramel, spices, and fizzy depth create an almost dessert-like shadow. It all finishes with a soft, nostalgic accent of cherry pudding, like a homemade hot mug whose aroma lingers long after the cup is empty.This character is born from dry processing, which on this farm feels more like a slow dance between fruit and sunlight than a technical procedure. Hand-picked cherries first land on sorting tables, where each one undergoes a personal “interrogation.” Only those with perfectly taut skins and a ruby-red color move on, looking like tiny sugar-filled ornaments. They remain intact, unpeeled, unwashed, still wrapped in their juicy skins, as if freshly picked from the tree.Next, they are laid out on African beds, where the sun does its work slowly. Day after day, the cherries gently wilt, wrinkling like dried plums as they pass their sweetness into the beans. Aromas begin to concentrate, the pulp caramelizes from within, and the fruit is turned regularly so fermentation stays even, calm, and elegant.Only when the fruit becomes brittle, almost shell-like, is the bean released from its center: bright, smooth, nourished by weeks of slow drying. Founded in 2018 near the town of Palestina in southern Huila, the station was built to support local farmers by providing easier access to coffee processing and sales. Today, 214 nearby farmers deliver their freshly harvested cherries to El Puente—most of them of the Castillo variety.El Puente focuses primarily on honey, natural, and other experimental fermentation methods, all while minimizing water usage.This particular lot is 100% Castillo, processed using the honey method. Upon arrival at the station, cherries underwent an initial selection to remove debris and under- or overripe fruit. Then, they were placed in a water tank to eliminate remaining floaters and defects. Next, the cherries were pulped to remove the skin, and the beans were placed in anaerobic fermentation tanks for 6 hours. Afterward, they were dried on raised beds for about 20 days until reaching optimal moisture content. Willian Hoyos, Julián Sandoval, Rubén Castillo, and Yovany Muñoz cultivate coffee on small, multi-hectare farms in the El Tambo microregion, located west of Popayán, the capital of the Cauca department.PROCESSINGA single-variety Castillo, hand-harvested and depulped immediately after the cherries are picked. The beans are fermented for approximately 36 hours in a tank, then washed three times to completely remove any remaining mucilage from the parchment. They are slow-dried for around 15 days on raised beds, then homogenized and stabilized for several more days.ROASTER'S OPINIONYou can’t drink the same blend twice. We know this, and that’s how Elixir was born. Wildly unstable, always sweet. Different every time, always fruity. We throw our best coffees into it, because honestly, who’s going to stop us? Much like with co-fermented coffees, we approached it with a fair amount of scepticism. But after the first tests, we knew this was exactly the direction we believed in. The profile is exceptionally delicate and clean. Floral, herbal, lightly spiced, with a distinct citrus freshness.It became one of the stars of the Warsaw Coffee Festival. The label raised eyebrows, sometimes even doubt. Thyme in coffee? Seriously? And yet everyone who tasted it left the festival with a bag. For some, it was green curry, for others pure umami, for others a herbal garden in the cup. That’s the power of thermal shock.But this character doesn’t happen by accident. Thermal shock allows fermentation to be stopped at a critical moment, before it begins to dominate the flavour. Aromas are not blown out or over-fermented, but stable and clearly defined. The cup feels lighter, cleaner and more tea-like, with distinct layers instead of one heavy fermentation note. That’s why this process works so well with floral and herbal coffees such as Maragesha. A natural hybrid of Gesha and Maragogype, it combines florality and lightness to create a profile that is complex yet remarkably elegant.Finca Quebraditas is a young but highly intentional project. Edinson Argote and Ángela Rojas focus on full process control and developing their own flavour language. Oporapa in Huila still sits outside the specialty mainstream, and their goal is to highlight the potential of the entire region.Processing takes place entirely on site, and Edinson makes sure nothing is left to chance. Harvesting begins only when at least 80% of the cherries are fully ripe. After flotation, the coffee undergoes controlled oxidation, followed by dry depulping and a long 72-hour fermentation with added yeast. Fermentation is then deliberately halted through a rapid temperature shift, the thermal shock itself, preserving clarity and precision in the profile. Finally, the coffee is dried and stabilised under controlled conditions.

Anyone who has been a fan of juicy Kenyan coffees for years may also recognize names such as Kii or Kiangoi, stations also operated by this cooperative. The group brings together 850 smallholder farmers, with the entire operation managed by Mr. Zablon Kamongo. Established in 1997, Karimikui has today become an undisputed synonym for top-quality Kenyan coffee. And indeed, year after year, coffees from this station generate excitement at the cupping table.ABOUT COFFEE PROCESSING AT THE FARMKenyan varieties are hand-picked and initially sorted using the floating method. The cherries undergo depulping (separating the seed from the fruit) and are divided into three quality grades. They are wet-fermented for up to 36 hours, then washed and dried on raised beds for several days.ROASTER’S OPINIONKarimikui is a true benchmark. I still remember how coffee from this station completely blew my mind back in 2012. You’re drinking a concentrated fruit juice, not coffee. If that’s your thing, go in blind. There are zero shots in the dark here.
