Specialty grade coffee in capsules, originating from Rwanda and roasted for espresso by the Hungarian roastery, Samurai Shoelace. Each pack contains 10 capsules compatible with Nespresso® machines. A true natural Rwandan coffee. Nice and sweet with mild acidity and notes of red berries.Country of origin: RwandaRegion: NyamashekeFarm: KiramboAltitude: 1545 m a.s.l.Varietal: Red BourbonProcess: NaturalABOUT THE REGION AND FARMThis exceptional coffee comes from the Nyamasheke region in southwestern Rwanda, located on the shores of Lake Kivu. It is one of the most valued specialty coffee growing areas in the country. Volcanic soil, the lake's humid microclimate, and an altitude of 1500–2100 m a.s.l. create ideal growing conditions here. Thanks to the slower ripening of the cherries, Rwandan coffee is characterized by a deep, complex flavor profile. The Kirambo washing station is picturesquely situated on a hillside overlooking Lake Kivu. It was established in 2008, but initially operated irregularly. The breakthrough came in 2017 when Rwanda Trading Company (RTC) took over management. Since then, Kirambo has become one of the leading specialty coffee processing centers in the region, regularly delivering highly rated and award-winning lots of beans. The coffee comes from small, family-owned farms that manage small plots of land. For this reason, processing stations were created in the region – they collect cherries from many local suppliers, sort them by quality, and process them using professional equipment, which would be unattainable for individual farmers. Rwanda Trading Company, which manages the washing station, actively supports smallholder producers by offering them agricultural training, crop renovation programs, and financial support. These actions translate into a steady increase in coffee quality, integration of the local community, and improved living conditions for farmers. The coffee cherries are hand-harvested and undergo rigorous selection, and are then processed using the natural (dry) method. The beans dry for 15–22 days on special raised beds, under continuous control of humidity levels. This processing method allows for achieving an extremely intense, fruity profile, rich sweetness, and a complex aroma.FROM THE ROASTERY: The capsule is made of 100% recycled aluminum (including 80% post-consumer recycled aluminum) and is fully recyclable. It is compatible with the Nespresso* Original system. We roast the green coffee and pack it into capsules in our own roastery. Inside, there is exclusively freshly ground, roasted coffee – without any artificial additives.Store in a dry and cool place.

In the cup, you can expect the notes of red apple, almonds, and caramel.Country: ColombiaRegion: Palestina, HuilaFarm: CadefihuilaProcessing: WashedVarietal: Caturra, TabiAltitude: 1700 m a.s.l.ABOUT THE REGION AND THE FARMThe municipality of Palestina is a unique place, often referred to as the "water and forest factory" of the Huila region. It is characterized by two types of climate: cool and temperate. Coffees from this area differ from the rest of Huila – they are more acidic and delicate, with distinct fruity notes. Our coffee comes from a selected group of producers from the upper part of the Palestina municipality, located at an altitude of approximately 1700 m a.s.l. This group of farmers specializes in cultivating varieties such as Tabi and Caturra.Cooperativa Departamental de Caficultores del Huila Ltda. (CADEFIHUILA is a non-profit organization and one of the most important coffee cooperatives in Colombia. It spans 27 municipalities and operates a support network consisting of 45 coffee purchasing points, 46 fertilizer stores, 36 agricultural supply stores, 16 permanent cupping laboratories, one mobile laboratory, and 7 drying service points. CADEFIHUILA implements programs aimed at achieving high production standards on farms. These standards are based on codes of conduct such as Fairtrade, Rainforest, 4C, and C.A.F.E. Practices. The development of certification processes for these specialty coffees allows the cooperative to meet market demand for coffee purchased under specific, ethical conditions.ABOUT THE VARIETYCaturra is a coffee variety that originated as a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais, Brazil, between 1915 and 1918. The name "Caturra" comes from the Guarani word meaning "small," referring to the plant's dwarf stature. Due to its small size and densely spaced branches, it can be planted closely together, increasing the yield per area. Caturra contributed to the intensification of coffee farming, particularly in Central America, where it was introduced in the 1940s. This variety also played a crucial role in breeding coffee trees resistant to coffee leaf rust, contributing to the creation of the "Catimor" family of varieties.Tabi is a relatively young variety developed in Colombia as a cross between Bourbon, Typica, and the disease-resistant Timor Hybrid. The word "Tabi" comes from the language of Colombia's indigenous people and means "peace" or "life."ABOUT THE PROCESSINGThe coffee undergoes a traditional washed process, which begins with the harvesting of ripe cherries. They are weighed and left for 24 hours in a processing tank. Next, the beans are depulped and placed in a water tank, where they are rinsed twice after approximately 12 hours. Finally, the coffee is sun-dried or machine-dried, depending on the producer's facilities.RECIPERatio: 16.5g (dose) / 36g (yield). Water temperature: 94°C. Grind size: Very fine. For many Ethiopians, coffee is a symbol, a national pride, and a lifestyle – the finalist of last year's Cup of Excellence certainly belongs to this group! His small farm of about 8 hectares is located in the Bensa region, which, in our opinion, holds the best quality potential. The crops here reach well above 2000 meters above sea level and usually consist of selected, single botanical varieties.Javier is the son of Don Andres, a producer whose coffees we have already hosted in our brown jars. His farm is just around the corner, and the terrace of the washing station offers such an extraordinary view of the valley and Lake Yojoa that if Bill Gates had visited this place, this very landscape would be known worldwide as the Windows desktop background. The Fernandez family (because there is also a second son, Nahun!) is not afraid to play around with processing, and thanks to bold experiments, year after year they deliver some of the best lots in all of Santa Barbara. This is an opinion, not a fact. But also a fact.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMWhat we have here is a 66-34 blend. The Ethiopia was processed as a natural – drying the coffee seeds inside the whole fruit. Freshly picked cherries undergo an initial selection, during which those with defects are rejected. Then, they are spread across so-called African beds – long tables, sometimes stretching for dozens (!) of meters, with a mesh lining that allows for even air circulation throughout the process, resulting in homogeneous drying. The whole process takes between 25 and 30 days, depending on the weather. On the other hand, Javier's lot is a longer-fermented honey – before depulping, the cherries fermented for 96 hours in a tank, and only later were they spread out to dry with a thick layer of mucilage. This technique extracted more deep, fruity-wine notes from the coffee.ROASTER'S OPINIONHere is our concept for this espresso: we created a roast profile that showcases the beautiful notes of flowers and fruits typical of high-quality Ethiopian coffees, but at the same time, on the flip side, offers quite a bit of chocolate-dessert depth, which also balances the acidity and gives the cup equilibrium. As a result, whether you brew it in an espresso machine, a moka pot, or even as a filter coffee, you will get a full, round, and complex coffee with a long-lasting, syrupy aftertaste!Store in a dry and cool place.

The altitude of over 1,800 m above sea level, the mineral-rich volcanic soil and the ideal microclimate give the coffee beans a full, complex flavour with exceptional sweetness and balanced acidity.AMCOS (Agricultural Marketing Cooperative Societies) group plays a very important role in supporting local farmers. AMCOS is a cooperative organization that brings together small farmers and provides them with various services that improve their living conditions and contribute to a better quality of their products.Mbeya Region – the pearl of the African highlandsMbeya is one of Tanzania’s most important coffee regions, located near Lake Nyasa and bordering Kitulo National Park. The area is known not only for its fertile soil but also for the small family farms that have been growing coffee here for generations. Agriculture is deeply rooted in the local culture – coffee cherries are hand-picked and farmers pay close attention to every detail of the harvest and processing. The Sambewe processing station works with more than 400 smallholder farmers who bring their carefully hand-picked cherries to it.For this particular batch, only Peaberry beans were selected, which give the coffee a unique flavor profile. After hand-picking, the floaters were sorted from the coffee and then the coffee was hulled and sent to fermentation tanks, where after 18-36 hours of fermentation, the beans were freed from the remaining pulp. After washing in channels, the subsequent beans were spread out in parchment on African beds, where they are dried for an average of 14-30 days depending on the weather. Coffees from Tanzania are covered by the AMCOS organization. The role of AMCOS in Mbeya regionEnsuring access to marketsAMCOS helps farmers in the region connect to wider markets and sell their coffee at fair prices. This cooperative gives smaller farmers, who would otherwise struggle to sell directly, collective access to larger buyers and exporters.Support for processing and quality productionAMCOS provides its members with access to improved processing technologies and advice on improving coffee quality. This includes training on proper cherry picking, drying and processing methods , resulting in high-quality coffee that is gaining international recognition.Securing financing and equipmentThe AMCOS cooperative often assists farmers in the Mbeya area with access to finance and necessary equipment such as peelers , drying beds and warehouses , which improves farm infrastructure and streamlines the entire production process.Social and community supportAMCOS also contributes to the development of local communities by investing in educational programs , healthcare , and infrastructure , thereby improving the living conditions of farmers and their families. It also promotes the sharing of experiences among farmers, ensuring the continued growth and stability of coffee production in the region.Ensuring sustainabilityA focus on sustainability is also part of AMCOS' work. The cooperative supports farmers in transitioning to organic and environmentally friendly practices , such as integrated pest management systems or protecting water resources in coffee growing areas. Thanks to these activities, AMCOS provides farmers not only with better conditions for growing quality coffee, but also with broader access to markets and sustainable economic opportunities for the entire region.ROASTER'S NOTEA juicy, yet tea-like coffee that is a great representative of Tanzanian coffees and demonstrates how complex they can be. It stands out with notes of juicy peach and the aroma of Earl Grey tea, while maintaining balance and being very pleasant to drink. This lot comes from Banko Chelbesa in the Gedeb woreda, located in the Gedeo Zone of southern Ethiopia – part of the broader Yirgacheffe coffee-growing region, at an altitude of 2000–2300 meters above sea level. Coffee here is cultivated by multi-generational families of smallholders on small garden plots, often intercropped with enset, avocado, and papaya. The high altitude and iron-rich, acidic soils of the region contribute to the bright, floral character for which classic Yirgacheffe coffee is famous. For this washed-process lot, ripe cherries are depulped on the day of harvest, fermented in clean tanks to remove mucilage, and then thoroughly washed and sun-dried on raised beds.ROASTER'S OPINIONChelbesa is a classic Ethiopian washed coffee, characterized by a delicate, aromatic, and very accessible flavor profile. Peach and Earl Grey give the brew a juicy, tea-like character, while caramel adds warmth and a smooth, long-lasting finish. The brew is clean, balanced, and easy to read, yet complex enough to maintain its appeal. It is distinct, yet calm and drinkable – a great everyday Ethiopia.V60 RECIPEwater temperature: 94 degrees Celsius 300 g water 21 g coffee grind size 7.2 (Fellow Ode II)1.
