The caffeine is then removed from the solution using activated carbon. The caffeine-free solution is subsequently added back to the pre-dried coffee beans. Hard Beans - Colombia Carambolo Estate Washed Filter 250 g

Manufacturer: HARD BEANS

Roasting date: 21.04.2026

Whole-bean specialty coffee from Colombia, roasted by Hard Beans from Poland. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the notes of peach, red currant and vanilla.Origin: ColombiaRegion: HuilaVariety: Tabi, Yellow ColombiaFarm: Finca El Diviso / Finca Las FloresProcessing: WashedAltitude: 1700 – 1900 m a. s. l.ABOUT THE COFFEEThis is a blend of green beans from two farms in Pitalito, Huila: Finca El Diviso run by Nestor Lasso and Finca Las Flores run by Johan Vergara. These are names that genuinely matter on the competition scene. Coffees from El Diviso have won the World Barista Championship, and lots from Johan Vergara regularly appear in the routines of world-class competitors. In practice, this means one thing: the raw material is predictable, clean, and produced to meet the highest standards. This is a deliberate combination of two varieties. Tabi brings structure and elegance, often expressed as a more tea-like clarity and a stable, citrus-fruit acidity, while Yellow Colombia adds sweetness and juicy, ripe fruit character.Formally, this is a washed coffee, but processed in a way that strongly shapes the flavor profile. First, the fermentation is two-stage: an initial aerobic phase, followed by anaerobic submersion, designed to emphasize stone fruit notes (peach, apricot) rather than heavy, wine-like flavors. Second, after fermentation the coffee undergoes controlled hot/cold quenching, meaning contact with hot and cold water to stop the process at the right moment and preserve aromatic clarity. This is followed by natural drying under cover for greater stability and reduced risk of overheating, finished with mechanical drying in a silo, and at least 10 days of resting before final preparation.RECIPERatio: 60 g coffee per 1 liter of waterWater temperature: 93°CGrind size: Medium-coarseBrew time: 3:30 minutesMethod: Pour the water in five equal pours (for example, 5 × 60 g) at 30-second intervals.Allow the water to fully drain through the coffee between pours. If the water flows too slowly or too quickly, adjust the grind size coarser or finer.Remember to use soft, filtered water.Store in a cold and dry space.

Hard Beans - Colombia Finca Santa Bárbara Gesha Washed Filter 200 g

Manufacturer: HARD BEANS

Roasting date: 25.08.2026

Specialty-grade whole-bean coffee from Colombia, roasted by the Polish roastery Hard Beans. Light roast – perfect for pour-over brewing methods such as drip, Chemex, AeroPress, French Press, batch brewers, and other alternative methods. In the cup, you’ll find notes of white flowers, peach, caramel and milk chocolate.Origin: ColombiaRegion: HuilaFarm: Finca Santa BárbaraProcessing method: WashedVariety: GeshaAltitude: 1950 m a.s.l.FARM AND REGIONFinca Santa Bárbara belongs to Jhon Edwin Samboní Chachón. The farm is located in Algeciras, in the department of Huila, at an altitude of approximately 1,950 meters above sea level. It covers 32 hectares, 24 of which are dedicated to coffee cultivation.Huila is one of the most important regions for specialty coffee production in Colombia. Diverse topography, high-altitude crops, and specific microclimatic conditions make it possible to obtain coffees with high sweetness, well-defined acidity, and great profile clarity. The producer specializes in high-quality coffees and controlled processing. In this case, the most important aspect is preserving the distinct character of the Gesha variety: floral notes, fruity sweetness, and a delicate brew structure.ABOUT THE VARIETYGesha is an Arabica variety valued for its high aromatic potential, particularly towards floral notes, stone fruits, and delicate, well-defined acidity. In this case, the profile leans towards white flowers, peach, caramel, and chocolate. This is a coffee where it is not about a heavy fermentation effect or excessive intensity. Profile clarity, sweetness, and the easily recognizable character of the variety are more important.ABOUT THE PROCESSINGWashed processing involves removing the skin and part of the pulp from the coffee cherry, carrying out fermentation, rinsing off the remaining pulp, and drying the beans. This process usually yields greater profile clarity than natural or honey processing. In this coffee, washed processing helps balance the acidity and better highlight the features of the Gesha variety. As a result, the brew features a floral aroma, fruity sweetness, and a chocolate-caramel base.ROYAL BEANSWhat’s behind the name Royal Beans? If Speciality beans are the pinnacle of coffee, our Royal Beans reach the Himalayas! In this series, we present the very top of the coffee pyramid, the crème de la crème, as precious as crown jewels. Anaerobic, Gesha, Nanolot, Lychee – what does it mean to go beyond the ordinary? – Royal Beans is a selection of coffees chosen by us from various roasters – they share exceptional flavor, limited production, unique processing methods, and the highest quality. A treat for coffee connoisseurs (and those aspiring to be)!RECIPERatio: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind size: mediumBrew time: 3:30 minutesMethod: Pour water over the coffee in 5 equal pours (e.g., 5x 60 g) at 30-second intervals. The water should completely drain through the coffee between pours. If the water flows too slowly or too quickly, adjust the grind size to coarser/finer.Remember to use soft, filtered water!Store in a dry and cool place.

Hard Beans - Kenya Kii AA Natural Filter 250 g

Manufacturer: HARD BEANS

Roasting date: 26.08.2026

Whole-bean specialty coffee from Kenya, roasted by Hard Beans from Poland. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the notes of black currants, black cherry, plum and raspberry.Origin: KenyaRegion: KirinyagaVariety: SL28, SL34, BatianFarm: Kii Coffee FactoryProcessing: NaturalAltitude: 1600 – 1800 m n.p.m.ABOUT THE FARMKii Coffee Factory operates in the Kirinyaga region, at the foot of Mount Kenya. It is one of three stations belonging to the Rungeto Farmers’ Cooperative Society, alongside Karimikui and Kiangoi.Approximately 850 smallholders deliver cherries to Kii. The average farm size is around 0.5 ha, meaning production relies on a large number of small family farms. Coffee grows here alongside avocado, macadamia, and banana trees, and farmers also cultivate crops for their own consumption on the same plots, including beans and potatoes.Rungeto has been working with producers for years on agronomy and the quality of delivered cherries. Kii is also among the stations with high farmer loyalty, which has a very practical significance: good cherries are regularly delivered to the same station, rather than being sold wherever a better price happens to appear.ABOUT THE VARIETALThis lot contains SL28, SL34, and Batian. This is a set very characteristic of modern coffee production in Kenya.SL28 and SL34 are strongly tied to the history of the Kenyan coffee sector. Both selections were introduced in the 20th century and remain an important part of cultivation in central Kenya to this day. They yield good results at high altitudes, but are also susceptible to certain coffee diseases.Batian is a much younger varietal. It was introduced in Kenya in 2010 as a response to issues with Coffee Berry Disease and coffee leaf rust. Its goal was to combine strong quality potential with higher resistance and better productivity. The name of this coffee also includes "AA". This is neither a varietal nor a taste grade. AA is the Kenyan designation for bean size—it applies to the largest fraction separated during sorting.ABOUT THE PROCESSINGThis is where this lot deviates most from what Kii is usually associated with. The station's standard production is based on washed processing. Cherries are sorted, depulped, fermented, washed, and then the parchment is dried on raised beds. This lot was prepared as Natural. In this method, the bean dries inside the whole fruit. The skin and pulp remain on the seed for a significant portion of the drying process and are removed only later. This is a completely different way of processing than the classic Kii washed. That is precisely what makes this coffee interesting. Not because Natural in itself is rare—in Brazil or Ethiopia, it is a standard part of production. In Kenya, the situation is different. There, washed processing has been the standard for high-quality coffees for decades, and naturals still account for a small fraction of the market.RECIPERatio: 60 g coffee per 1 liter of waterWater temperature: 93°CGrind size: mediumBrew time: 3:30 minutesMethod: Pour water over the coffee in 5 equal pours (e.g., 5x 60 g) at 30-second intervals. The water should completely draw down through the coffee between pours. If the water flows too slowly or too quickly, adjust your grind size coarser/finer.Remember to use soft, filtered water!Store in a dry and cool place.

When Rafał joined the team and sat down with us for his first cupping, he blurted out right away: "Hey, I think you've never had a coffee from Burundi, and I like them so much!" We had, but a long time ago! So we decided to make Rafał's life a little nicer, ordered samples, and chose this (and one more!) great lot.Located in Ngozi Province, the Mubuga processing station collaborates with over 1,900 local farmers who deliver their carefully selected harvests here every year. This place stands out for its impressive technical infrastructure created for the precise processing of only the finest, fully ripe cherries. The station's facilities include as many as 12 fermentation tanks, 3 soaking tanks, over 300 drying beds, and 4 specialized tables for quality sorting.Harvesting in this region usually lasts from April to June, but this coffee's journey to your cup only begins then. Burundi is a completely landlocked country – before these exceptional beans head out into the world and reach our roastery, they must travel an extremely long, demanding, and complex route.Store in a cool and dry place.

Additional crops, such as plantains, corn, cassava, avocado, and citrus, provide natural shade, improve soil condition, and serve as an additional source of income for the Sanchez family.ABOUT THE PROCESSINGCastillo variety, hand-picked, undergoes initial selection on the farm, then is transported to Area 18 - a modern lab under the Banexport banner. On site, it undergoes another selection process and analysis to determine the most optimal processing method. Fermented for 4 days under controlled conditions in a bioreactor. This process allows for precise control of microorganism activity, helping the coffee maintain a clean yet distinct sensory profile.Dried for 5 days in an automated chamber with temperature and airflow control.ROASTER'S OPINIONThe definition of perfect balance between the raw material itself and the processing. Fruity depth and complex layers plus tropical-wine intensity result in one of our favorite coffees in 2026!Store in a cool and dry place.

Kaizen - Ethiopia Tagel Alamayehu Washed Filter 250 g

Manufacturer: KAIZEN

Roasting date: 04.08.2026

Whole-bean specialty coffee from Ethiopia, roasted by Kaizen. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of jasmine, apricot and orange.Country: EthiopiaRegion: GujiFarm: Tagel AlamayehuVarietal: 74110Processing: WashedAltitude: 2300 m a.s.l.ABOUT THE REGION AND PRODUCERThis coffee comes from the Guji region, specifically the Hambela Wamena area, situated at an altitude of approximately 2300 m a.s.l. This is one of Ethiopia's most esteemed terroirs—the extreme altitude, cool climate, and slow ripening of the fruit result in a high sugar concentration and extraordinary aromatic precision. The project is led by Tagel Alamayehu—owner of the Olkai export company and coordinator of the Hambela Goro station. His story is personal and deeply rooted in the region. Tagel’s father was one of the coffee pioneers in Guji and built the first washing station in the Bule Hora community. Following family financial struggles, Tagel set a goal to rebuild what was lost—and he realized this plan by creating a modern, quality-focused project based on collaboration with local farmers.Today, Hambela Goro works with 460 small-scale producers, many of whom own only a few hundred coffee trees. Although each batch is a natural composition of many micro-plots, the coffee maintains impressive consistency and a clean profile.ABOUT THE COFFEEThis lot is the 74110 variety—a selection originating from the JARC research program, known for its high sensory quality and clarity in the cup. Combined with the altitude of 2300 m a.s.l., it yields a coffee with a distinct structure, elegant acidity, and multi-layered aromatics. The washed processing was carried out with great precision. Cherries are harvested at peak ripeness, hand-sorted multiple times, and then, after depulping, fermented in water for approximately 48 hours. Drying takes place on African beds for 10–12 days, depending on weather conditions. The cup is dominated by an intense jasmine aroma, which builds lightness and elegance. The flavor features juicy orange, providing freshness and a clear, citric acidity, while the experience is rounded off by ripe, sweet apricot, bringing softness and fruity depth.Store in a cold and dry space.

Klaro - Colombia Nogales Mosto Fermented Washed Filter 200 g

Manufacturer: KLARO

Roasting date: 06.08.2026

Specialty-grade whole bean coffee from Colombia, roasted by Klaro. Light roast, perfect for filter coffee makers, drippers, Chemex, AeroPress, French Press, and other alternative brewing methods. Its flavor profile features notes of raspberry, cherry and lemongrass.Country of origin: ColombiaRegion: Bruselas, HuilaFarm:  Nogales FarmVariety: Orange CastilloProcessing method: Mosto Fermented WashedAltitude: 1600 – 2000 m a.s.l.ABOUT THE COFFEEMosto Fermented Washed is a perfect example of how creative coffee processing methods can be. Our lot comes from Bruselas, Huila – a region known for truly wild, fancy coffees. The coffee comes from the Nogales farm, a project by Oscar Hernandez. He is a third-generation farmer who is constantly developing the plantation and the processing methods used. His father, Ricaurte, was the one who put Bruselas on the specialty coffee map after winning the Colombian Cup of Excellence in 2006.Here we are dealing with a fancy Mosto Fermented Washed process – in short, the coffee ferments in juice extracted from the very same coffee cherries. After 7 days of fermentation, the beans are sun-dried and then aged for 15 days in whiskey barrels. [Strong combination, right?]The result? A juicy, sweet cup full of raspberries, cherries, and lemongrass. Complex acidity, smooth body, and plenty of room for everyone to find something of their own in it!ROASTER'S OPINIONHere we are dealing with a fancy Mosto process – in short, the coffee ferments in coffee cherry juice. This boosts the sugar content, and more sugar = more food for bacteria = more power to create complex acidity. In taste, lots of raspberries, cherries, and lemongrass. But obviously – with such complex coffees, everyone will taste something of their own!Store in a dry and cool place.
