ABOUT THE COFFEE
Mosto Fermented Washed is a perfect example of how creative coffee processing methods can be. Our lot comes from Bruselas, Huila – a region known for truly wild, fancy coffees.
The coffee comes from the Nogales farm, a project by Oscar Hernandez. He is a third-generation farmer who is constantly developing the plantation and the processing methods used. His father, Ricaurte, was the one who put Bruselas on the specialty coffee map after winning the Colombian Cup of Excellence in 2006.
Here we are dealing with a fancy Mosto Fermented Washed process – in short, the coffee ferments in juice extracted from the very same coffee cherries. After 7 days of fermentation, the beans are sun-dried and then aged for 15 days in whiskey barrels. [Strong combination, right?]
The result? A juicy, sweet cup full of raspberries, cherries, and lemongrass. Complex acidity, smooth body, and plenty of room for everyone to find something of their own in it!
ROASTER'S OPINION
Here we are dealing with a fancy Mosto process – in short, the coffee ferments in coffee cherry juice. This boosts the sugar content, and more sugar = more food for bacteria = more power to create complex acidity. In taste, lots of raspberries, cherries, and lemongrass. But obviously – with such complex coffees, everyone will taste something of their own!
