Extremely tea-like, clean and transparent. It’s best to give it two weeks after roasting – it gains a lot with time!V60 RECIPECoffee dose – 19 gWater dose – 50 g → 300 gGrind size:8.4 EK43; 23 clicks ComandantePlace the filter in the V60 and rinse it with a strong stream of water so it adheres well to the walls.Grind the coffee, add it to the V60, and level the coffee bed.Pour 50 g of water, aiming at the dry spots to wet everything thoroughly. If the coffee is very fresh (foaming a lot when it contacts water), you can extend the bloom to 2 minutes or add an additional bloom at 1:00 (pour another 50 g and wait until 2:00).At 1:00 (or 2:00), start pouring into the very center of the V60 (circles about the size of a 5-złoty coin), using circular movements at a pace of 6–8 g per second (slightly below the second enlarged dot on the Acai kettle), keeping the water stream just below the point where the stream breaks. When you reach 250 g, lower the kettle to about 3 cm above the water surface (you no longer need circular movements) and finish pouring to 300 g.Perform a shake while holding the narrowing at the base of the V60 (both horizontally and vertically). If the coffee drains too quickly, give it a swirl. The total brew time should be 2:30–3:00, or 3:30–4:00 if you use the extended/additional bloom.Store in a cold and dry space.

Whole bean specialty coffee from Colombia, roasted in Berlin by The Barn. Medium roasted, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods, as well as for espresso. In the cup, you can expect the notes of milk chocolate and plum.Country: ColombiaRegion: HuilaFarm: Huila CooperativeProcessing: WashedMethod of decaffeination: SugarcaneVarietal: Caturra & CastilloAltitude: 1700 m a.s.l.Cupping score: 86 / 100A sweet and silky coffee, with delicious balance. Expect notes of caramel, shortbread, and creamy milk chocolate. With a touch of yellow plum and dried fruit as it cools, this is a decaf for any occasion.ABOUT THE FARMThe coffee was produced as a collaboration of select coffee producers in Huila, who grow coffee between 1400 and 2000m. Located in southwestern Colombia, Huila is nestled between the Central and Eastern ranges of the Andes. Variations in altitude results in Huila being one of the most unique and complex regions of coffee production in Colombia. The terroir, climate, and harvest cycles all contribute to the quality of coffee produced here.ABOUT THE PROCESSThe coffee is picked ripe and pulped the same day, before open fermentation in tanks for 12–36 hours. The coffee is then washed clean of its mucilage before drying on patios. Once dry, the beans are decaffeinated through the sugarcane or Ethyl Acetate process. A solution of water and Ethyl Acetate - derived from Colombian sugarcane crops - is used to gently extract caffeine while maintaining the important flavour compounds in the coffee. The coffee is then rinsed and dried.ROASTER'S OPINIONLess Caffeine. Full Flavor. Our Balanced Decaf delivers a clean and classic Colombian cup profile: sweet, balanced, and approachable with excellent clarity. Created for those looking to reduce caffeine without compromising on quality, this coffee offers all the comfort and flavour of specialty coffee - without caffeine. For many years, we said no to decaf. Today, a new generation of decaffeination is changing that: Using a natural sugarcane EA process, caffeine is gently removed while preserving sweetness, structure, and the coffee’s origin character.Store in a cold and dry space.

Honey-like sweetness and mellow acidity make Genesis delicious adaptable, try it black or with milk.THE PROCESSIn Ethiopia, natural coffees are typically delivered the day they are harvested, and are first sorted for ripeness and quality before being rinsed clean of dirt. Whole bean specialty coffee from Guatemala, roasted in Berlin by The Barn. Medium roasted, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods, as well as for espresso. In the cup, you can expect the notes of nougat, plum and honey.Country: GuatemalaRegion: AntiguaFarm: Ricardo ZelayaProcessing: WashedVarietal: Caturra & BourbonAltitude: 1700 m a.s.l.THE CUPAtlas captures the sweet elegance that has made Guatemalan specialty coffee so admired. This washed coffee offers notes of nougat, plum and honey, creating a smooth, balanced and approachable cup. Crafted for daily exploration, Atlas shines as both filter coffee and espresso, delivering comforting sweetness and the unmistakable character of Central America.ABOUT THE FARMFinca Santa Clara has been producing exceptional coffee in the Antigua Valley of Guatemala since 1930. Today, fourth-generation producer Ricardo Zelaya continues the family's commitment to quality, building on decades of experience that earned the estate the prestigious Cup of Excellence in 2001. Coffee grows between 1,650 and 1,700 metres above sea level on the slopes of Volcán de Agua, where fertile volcanic soils and a cool mountain climate provide ideal conditions for exceptional Arabica coffee. Around a quarter of the estate is preserved as native forest, protecting biodiversity, natural water sources and the healthy ecosystem that supports both the farm and its coffee.ABOUT THE PROCESSRicardo prepares this lot using a traditional washed process, chosen to highlight the clarity and balance of the coffee. After harvest, the cherries are pulped before undergoing fermentation to remove the remaining fruit. The beans are then carefully washed and transferred to African drying beds inside purpose-built greenhouses, where they dry slowly over approximately 21 days. This measured approach allows moisture to leave the coffee evenly, preserving sweetness, enhancing clarity and contributing to the smooth, structured profile found in the cup.ROASTER'S OPINIONIntroducing Atlas: our new Core Coffee. From its birthplace in Ethiopia, coffee journeyed to the volcanic highlands of Central America, where generations of producers shaped one of the most celebrated coffee-growing regions. Atlas is our expression of that legacy. Grown at Finca Santa Clara in Antigua, Guatemala, this single origin coffee offers remarkable sweetness, clarity and balance. Rich volcanic soils, cool mountain air, and generations of expertise create a cup that feels complete. Atlas is our tribute to Central American flavour: a specialty coffee shaped by exploration, craftsmanship, and place.Store in a cold and dry space.
