In 2016, together with his family, he established a central processing station to help farmers from more than 15 nearby villages process their coffee in a controlled, quality-focused way. These are precisely what give coffees from Kenya their distinctive fruitiness, high acidity, and intensity.The beans underwent Fully Washed processing. The cherries are hand-picked and meticulously sorted, then fermented for 12–24 hours, washed, and soaked in clean water for another 24 hours. Finally, the coffee dries slowly on raised beds for 7–15 days.Because we like classics when they are truly well executed. Ibonia showcases the Kenyan character without unnecessary extras — it is intense, juicy, and complex, yet at the same time very easy to drink. The farm is environmentally conscious — among other initiatives, it uses a drip irrigation system that reduces water consumption and ensures even cherry development.PROCESSINGThis lot was processed using the natural method. After harvest, the cherries are dried on large concrete patios for 10–20 days, then further stabilized in wooden silos for several weeks.It is this slow fermentation process inside the fruit that gives the coffee its density, creaminess, and deep sweetness.Store in a cold and dry space.
