Hard Beans - Colombia Finca Santa Bárbara Gesha Washed Filter 200 g

Manufacturer: HARD BEANS

Roasting date: 25.08.2026

Specialty-grade whole-bean coffee from Colombia, roasted by the Polish roastery Hard Beans. Light roast – perfect for pour-over brewing methods such as drip, Chemex, AeroPress, French Press, batch brewers, and other alternative methods. In the cup, you’ll find notes of white flowers, peach, caramel and milk chocolate.Origin: ColombiaRegion: HuilaFarm: Finca Santa BárbaraProcessing method: WashedVariety: GeshaAltitude: 1950 m a.s.l.FARM AND REGIONFinca Santa Bárbara belongs to Jhon Edwin Samboní Chachón. The farm is located in Algeciras, in the department of Huila, at an altitude of approximately 1,950 meters above sea level. It covers 32 hectares, 24 of which are dedicated to coffee cultivation.Huila is one of the most important regions for specialty coffee production in Colombia. Diverse topography, high-altitude crops, and specific microclimatic conditions make it possible to obtain coffees with high sweetness, well-defined acidity, and great profile clarity. The producer specializes in high-quality coffees and controlled processing. In this case, the most important aspect is preserving the distinct character of the Gesha variety: floral notes, fruity sweetness, and a delicate brew structure.ABOUT THE VARIETYGesha is an Arabica variety valued for its high aromatic potential, particularly towards floral notes, stone fruits, and delicate, well-defined acidity. In this case, the profile leans towards white flowers, peach, caramel, and chocolate. This is a coffee where it is not about a heavy fermentation effect or excessive intensity. Profile clarity, sweetness, and the easily recognizable character of the variety are more important.ABOUT THE PROCESSINGWashed processing involves removing the skin and part of the pulp from the coffee cherry, carrying out fermentation, rinsing off the remaining pulp, and drying the beans. This process usually yields greater profile clarity than natural or honey processing. In this coffee, washed processing helps balance the acidity and better highlight the features of the Gesha variety. As a result, the brew features a floral aroma, fruity sweetness, and a chocolate-caramel base.ROYAL BEANSWhat’s behind the name Royal Beans? Whole-bean specialty coffee from Colombia, roasted by Hard Beans from Poland. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the notes of vanilla, caramel and milk chocolate.Origin: ColombiaRegion:  Huila, Tolima, Caldas Variety: Castillo, Caturra, ColombiaFarm: El Vergel EstateProcessing: Co-fermentationAltitude: 1750 m n.p.m.ABOUT THE FARMTolima, Huila, Caldas — three regions, many producers, one processing standard: El Vergel Estate. Thanks to this approach, a “regional blend” is not random mixing, but coffee unified under one processing protocol, in one place and under one supervision.Forest Coffee develops this project under the “Innovation” concept and openly communicates its goal: consistency, transparency, and real added value for producers.ABOUT THE COFFEECastillo, Caturra, Colombia. In practice: a solid foundation that carries sweetness and allows vanilla to shine without the flavor losing balance. This combination of varieties maintains structure in the cup — which means the processing can be intensive while the coffee still tastes like coffee, not perfume.First comes a 24-hour pre-fermentation of whole cherries. Then depulping and washing. Next, 96 hours of anaerobic fermentation in sealed tanks with the addition of natural vanilla aroma. Finally, mechanical drying (3–4 days) and 30 days of stabilization in GrainPro to allow the flavor to settle and remain consistent across future batches.RECIPERatio: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind size: medium-coarseMethod:Pour the water in five equal stages (e.g., 5 × 60 g), every 30 seconds.Allow the water to fully drain through the coffee between pours. If the flow is too slow or too fast, adjust the grind size accordingly.Use soft, filtered water.Store in a cold and dry space.

Hard Beans - Costa Rica Los Cipreses Milenio Natural Anaerobic Filter 200 g

Manufacturer: HARD BEANS

Roasting date: 18.05.2026

Specialty-grade whole-bean coffee from Costa Rica, roasted by the Polish roastery Hard Beans. Light roast – perfect for pour-over brewing methods such as drip, Chemex, AeroPress, French Press, batch brewers, and other alternative methods. In the cup, you’ll find notes of orange, mango and mik chocolate.Origin: Costa Rica Region: Naranjo, West ValleyFarm: Los CipresesProcessing method: Natural AnaerobicVariety: MilenioAltitude: 1600 – 1650 m a.s.l.ABOUT THE FARMBehind this coffee is the Salazar family from the Los Cipreses farm in Naranjo, located in the West Valley region of Costa Rica. For over four decades, they sold their coffee to local cooperatives, but since 2018, they began developing production with a greater focus on the specialty segment. A significant step was the launch of their own mill, Beneficio San Cristóbal, which gives them greater control over quality and processing. The crops are situated at an altitude of approximately 1600–1650 m a.s.l.ABOUT THE VARIETYMilenio, also designated as H10, is a variety with very high yield potential, high resistance to coffee leaf rust, and good quality potential at higher altitudes. World Coffee Research identifies it as a hybrid with very high productivity and good quality above 1300 meters. In practice, it is a material that successfully combines agronomic traits with sensory potential.ABOUT THE PROCESSINGNatural anaerobic is a combination of two process elements. "Anaerobic" refers to fermentation in an environment with limited or eliminated access to oxygen, usually in closed tanks. "Natural," on the other hand, means that the bean is dried within the whole fruit rather than after the pulp has been removed. Such processing typically enhances flavor intensity, sweetness, and the fruity character of the coffee while providing a more saturated profile.RECIPERatio: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind size: medium-coarseBrewing time: 3:30 minutesMethod: Pour the water over the coffee in 5 equal parts (e.g., 5x 60g) at 30-second intervals. The water should completely filter through the coffee between pours. If the water flows too slowly or too quickly, adjust the grind size to coarser/finer.Remember to use soft, filtered water!Store in a cold and dry space.

And we are still talking about coffee! We combined beans from Brazil, Guatemala, and Ethiopia to bring out a ton of sweetness and smoothness from them. And we've got it: this is one of our sweetest blends, it is sweet, smooth, and pleasant here. The addition of Ethiopian beans introduces a bit of a fruity and tea-like note – it gets more interesting with every sip. The base is almost like Yellow, but trust us – that 20% makes a difference, because blending is alchemy!About the roastery:HAYB is a Warsaw-based specialty coffee roastery that does its job properly and with a smile - they like coffee, they know a thing or two about it, they make it - can you imagine a better setup? HAYB - Costa Rica Hellen Mora Natural Espresso 250 g

Manufacturer: HAYB

Roasting date: 03.07.2026

Whole-bean specialty coffee from Costa Rica roasted at HAYB. Medium roast, perfect for espresso machines and moka pots.  In the cup, you can expect blueberries, red wine and milk chocolate.Origin: Costa RicaRegion: TarrazuVariety: GeishaProcessing: NaturalAltitude: 1800-1900 m a.s.l.Cupping score: 88 / 100Trip to Costa RicaThis is what direct trade means to me. We’ve been working with Hellen for three years now, thanks to Nicolas, who exports coffees from Costa Rica. Last year I had the pleasure of driving up the most winding and bumpy road to the top of a mountain where Hellen’s house and farm are located. We got there in a car Nico had borrowed from his mom, because his had broken down the day before. At some point his mom’s little SUV simply couldn’t make it any further, so Hellen drove down in her big pickup truck and towed us the rest of the way up.First she fed us, then she showed us the farm and told us its story. After the walk she prepared a cupping where she presented eight of her coffees. A cupping in the kitchen while rice and beans are cooking right next to you? Why not.The coffees were phenomenal. And that Geisha? That’s the coffee that’s been appearing in my dreams ever since I came back from Costa Rica. Lots of tropical fruit, but without the kind of fermentation often associated with coffees from this country. Notes of banana and pineapple, plenty of red, sweet wine, currants, and everything beautifully structured and right where it should be.I’m very happy that we’re also presenting such an exceptional coffee as an espresso. It’s the essence of that trip in a cup: sweetness, tropical fruit, bright acidity supported by deep sweetness. One of the warmest memories from that journey returns every time we roast and brew this coffee. I invite you to join me on this trip.ROYAL BEANSWhat’s behind the name Royal Beans? HAYB - Costa Rica Hellen Mora Natural Filter 250 g

Manufacturer: HAYB

Roasting date: 03.07.2026

Specialty-grade whole bean coffee from Costa Rica, roasted by the Warsaw-based roastery HAYB. Light roast, ideal for filter coffee makers, drippers, Chemex, AeroPress, French Press, and other alternative brewing methods. The flavor profile features notes of fig, red currant and milk chocolate.Country of origin: Costa RicaRegion: TarrazuVariety: CaturraProcessing method: NaturalCupping score: 87 / 100Altitude:  1800-1900 m a.s.l.Natural revolutionWhen it comes to coffee from Hellen, we started this season on a high note with a Geisha, and now we present to you Caturra. Although it was born in Brazil, it made a real career in Colombia, and later precisely in Costa Rica. According to World Coffee Research and Perfect Daily Grind, it is an absolute classic and a benchmark against which other modern botanical varieties are evaluated. What is worth knowing about it?Compact growth: Caturra possesses a dwarfism gene. The shrubs are short and stocky, which allows farmers to plant them more densely and makes harvesting the cherries much easier.A demanding patient: The price for high yield is poor health. Caturra is extremely susceptible to coffee leaf rust (roya) and pests, meaning it requires a great deal of attention, knowledge, and care from the farmer.Cup profile: Grown at the right altitude, it rewards you with brilliant quality. Expect a multi-dimensional, vibrant, and clean citric acidity, a medium body, and a distinct sweetness with notes of chocolate, caramel, and juicy fruits. No genetic modifications in a laboratory – a pure, natual revolution that changed the map of the specialty coffee world. Enjoy!Store in a cold and dry space.

Roasting date: 07.05.2026

Whole-bean specialty coffee from El Salvador roasted at HAYB. Dark roast, perfect for espresso machines and moka pots.  In the cup, you can expect hints of dark chocolate, walnut and toffee.Origin: El SalvadorRegion: ApanecaVariety: BourbonProcessing: WashedCupping score: 86 / 100 Altitude: 1400-1800 m a.s.l.With love and respectIt all began in 1966, when a group of small-scale farmers from El Salvador decided they could achieve more together. This led to the founding of the San José de La Majada cooperative, which today – after nearly 60 years of experience – is an absolute leader in quality in the Sonsonate region. Their secret lies in volcanic soil, shade-grown cultivation, and a focus on specific varieties such as Bourbon and Pacas. Currently, it is a tight-knit team of over 400 producers who combine good old traditions with new technology. Their mission is simple: to provide the world with high-quality beans while caring for the well-being of the local community and the environment. In short – total professionalism fueled by a love for coffee and respect for nature! In the espresso version, you will taste dark chocolate, nuts, and pleasantly sweet toffee. Heresy - Antidotum Espresso 252g

Manufacturer: HERESY

Roasting date: 21.04.2026

Some 75% of all coffee produced in the world comes from Brazil, the vast majority being commercial grand blends from around the region. In the world of speciality coffee, we have to deal with those as well. That's why we created the Antidote, a coffee that is an antidote to the flood of santos, cerrados, and other coffees, that are far from transparent and demonstrating the producer's role in the whole process. This is for fans of the classics who do not let go of quality. For those who value true fair trade. The first classic brazil in our range!Specialty quality bean coffee, roasted at Heresy roastery by the 2020 Roasting Runner-up. Dark roast, designed for espresso, café or cup brewing.  A profile with a classic Brazilian flavour, with nut and chocolate notes, in the highest quality.Country: BrazilProducer: 20 members of San Coffee CooperativeFarm: San CoffeeVarietal: mundo novo, topazio, catuaiProcessing: naturalAltitude: 900 - 1200 m a.s.l.PROCESSING20 manufacturers, the same natural processing technique calibrated between them. Thanks to close cooperation and rigid standards, each lot is processed and dried in an almost identical manner.THE FARMSan Coffee is a rarity in Brazil. Most co-operatives in the country are made up of hundreds or thousands of producers, whose role is often limited to just supplying the coffee, nothing else. San Coffee is made up of only 20 producers who also own the company, with equally distributed shares of 5% each. We have been working with them since the very beginning of Heresy, presenting fruity microlots like Taquaral, Campo Alegre and Samambaia. This time it's time for the classic product of their work!ROASTER'S COMMENTIn the cup as classically as possible. Acidity practically invisible, shadow work. Chocolate and nuts in the liquid form. You know what I mean!PACKAGINGThe coffee is packed in a brown jar made of PET, 100% recyclable or reusable. In case you're thinking "oh no, plastic!", bear in mind that standard coffee packaging is also made of plastic (and a few other materials, making it often harder to recycle). We also thought about glass, but it's heavier, more expensive, breakable and, wait for it, has the same or greater (sic!) environmental impact! A plastic jar turns out to be pretty eco-friendly, just remember to put it in the right container, or find a creative way to reuse it at home.Store in a cold and dry space.

Heresy - Colombia El Tambo Washed Filter 252 g

Manufacturer: HERESY

Roasting date: 28.07.2026

Whole-bean specialty coffee from Colombia, roasted by Heresy roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of bilberry, sweet citrus, flowers and chocolate.Origin: ColombiaRegion: CaucaFarm: El Tambo Processing: WashedAltitude: 1900 - 2150 m n. p. m.Cupping score: 86 / 100 pktABOUT THE FARM AND COFFEE PRODUCERSThis exceptionally clean and complex lot is the result of the work of four small producers from the Cauca region. Willian Hoyos, Julián Sandoval, Rubén Castillo, and Yovany Muñoz grow coffee on several-hectare farms in the El Tambo micro-region, located west of the capital of the Cauca department, Popayán.The phenomenal quality of their coffee is driven by the following synergy of factors:the microclimate of El Tambo and cultivation at elevations exceeding 2,000 meters above sea level result in slower cherry maturation, while lower humidity facilitates the drying process: processed coffee loses moisture in a predictable and controlled manner,a well-thought-out and precisely planned system of pruning and thinning older, less productive parts of the coffee trees to ensure optimal airflow and sunlight penetration, the producers’ modern knowledge of fertilization combined with a traditional practice locally known as “re-re,” which involves selectively harvesting overripe, underripe, or dried cherries and leaving them on the ground near the coffee trees. As a result, more pests feed on this “waste” instead of attacking healthy plants, and, of course, a conscious and strict selection of cherries harvested at optimal ripeness, supported by years of experience in fermentation and drying processes.Harvesting is carried out exclusively by local residents, who form the core of the community of several small villages in El Tambo. This community has naturally developed over generations around the continuous, seasonal cycle of coffee cultivation.ABOUT COFFEE PROCESSING ON THE FARMCastillo variety, hand-picked, with the beans separated from the fruit immediately after harvest. Fermented in tanks for approximately 36 hours, then washed up to three times to completely remove any remaining mucilage from the parchment. Slowly dried for about 15 days on raised beds. Homogenized and stabilized for a further several days.ROASTER’S NOTEA time machine. I remember this profile of washed Colombian coffee from a decade ago. Then it disappeared for a few years, or became much harder to find. But it’s back again. Multi-layered, elegant, vibrant, and soft. Everything here evokes ripe, juicy fruit.Store in a cold and dry space.

Whole-bean specialty coffee from Colombia, roasted by Heresy roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of red wine, tropical fruits, fermented notes,  blueberries and chocolate.Origin: ColombiaRegion: CaucaFarm: Las VillasProcessing: Mossto + wine barrel naturalAltitude: 1800 m a.s.l.Cupping score: 88 / 100ABOUT THE FARM AND THE PRODUCEROne of several boutique farms owned by Banexport—an institution from the Cauca region focused on continuous innovation, with which we are collaborating for the second season. Las Villas was established in 2012 and, like its sister plantations, is managed in an incredibly professional manner. The farm combines coffee cultivation with care for biodiversity, creating a system where a healthy ecosystem helps maintain high and repeatable coffee bean quality. Coffee trees are regularly weeded and pruned, and damaged cherries are removed after harvest to help limit pest development. Native tree species, as well as citrus trees and avocados, grow among the coffee bushes. They provide shade, protect the soil, attract beneficial organisms, and support the natural resilience of the entire farm.ABOUT THE PROCESSINGThe Castillo variety, hand-picked at peak ripeness, is transported on the same day to the Popayán city center to the state-of-the-art Area 18 laboratory.Fermented for 72 hours in a stainless steel bioreactor while controlling parameters such as temperature, pressure, and pH.Afterward, the fruit pulp undergoes sterile filtration before being placed along with the beans into American white oak barrels for 60 days.Drying takes place in mechanical chambers with controlled temperature and airflow. After five days, the beans reach optimal moisture levels, ensuring stability during storage and export.ROASTER'S OPINIONDefinitely not a coffee for everyone. If you like wine, intense flavors, and lots of action in life, you will love what's in the cup.ROYAL BEANSWhat’s behind the name Royal Beans? Heresy - Elixir Unstable Blend Filter 1001 g

Manufacturer: HERESY

Roasting date: 11.08.2026

Whole-bean specialty coffee from Colombia, roasted by Heresy roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of red fruits, chocolate, citrus and flowers.Origin: ColombiaRegion: Cauca / and othersProcessing: washed / natural / honey Altitude: 1900 - 2150 m n. p. m.Cupping score: 86 / 100ABOUT THE FARM AND PRODUCERSThis exceptionally clean and complex lot is the result of the work of four small producers from the Cauca region. Willian Hoyos, Julián Sandoval, Rubén Castillo, and Yovany Muñoz cultivate coffee on small, multi-hectare farms in the El Tambo microregion, located west of Popayán, the capital of the Cauca department.PROCESSINGA single-variety Castillo, hand-harvested and depulped immediately after the cherries are picked. The beans are fermented for approximately 36 hours in a tank, then washed three times to completely remove any remaining mucilage from the parchment. They are slow-dried for around 15 days on raised beds, then homogenized and stabilized for several more days.ROASTER'S OPINIONYou can’t drink the same blend twice. Heraclitus already knew that, and we trust the guy. What he couldn’t quite grasp was that life is like helium-6 isotope – an outrageously unstable joke of the universe. We know this, and that’s how Elixir was born. Wildly unstable, always sweet. Different every time, always fruity. We throw our best coffees into it, because honestly, who’s going to stop us? Take a sip of Elixir and feel… however you want to feel.Store in a cold and dry space.

Heresy - Guatemala San Jose Del Lago Washed Filter 252 g

Manufacturer: HERESY

Whole-bean specialty coffee from Guatemala, roasted by Heresy roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of chocolate, blueberry, red fruits, caramel and citrus fruits.Origin: GuatemalaRegion: AtitlanFarm: San Jose del LagoProcessing: WashedAltitude: 1600 m a.s.l.Cupping score: 86 / 100ABOUT THE FARM AND PRODUCEROnly 45 hectares out of the total 200-hectare area are dedicated to coffee cultivation at San Jose del Lago. The rest of the farm belonging to Eduardo is a natural nature reserve offering a breathtaking view of one of the world's most beautiful lakes - Atitlan. This is one of those multi-generational producer stories - the first coffee trees were planted here back in the 1940s. Meanwhile, just 10 years ago, Eduardo was selling his entire production as whole fruit to the local market. Clear quality potential combined with an investment in a small processing mill mean that a decade later we can showcase the expertise of this lovely guy on the other side of the globe!ABOUT THE PROCESSINGTypica variety, hand-picked, processed in their own small processing station. The beans are separated from the pulp and fruit, fermented for 24 hours in tanks, then washed and dried for about two weeks.ROASTER'S OPINIONA return after two seasons of absence! Coffee from Eduardo is, as always, incredibly drinkable. Clean, deep, balanced - to be sipped by the hectoliter.Store in a cool and dry place.

Heresy - Nectar Fruity Espresso Blend 252 g

Manufacturer: HERESY

Whole-bean specialty coffee from Ethiopia and Costa Rica, roasted by Heresy. Dark roast, perfect for espresso, coffee machines, and moka pots. You can expect hints of flowers, yellow fruits, jam, chocolate, caramel and citrus fruits.Origin: Ethiopia / Costa RicaRegion: Sidama / BruncaFarma: Ethiopian smallholders / La GuacaPorcessing: Washed / Anaerobic honeyAltitude: 2100 / 1800 m a.s.l.Cupping score: 87 / 100ABOUT THE FARM AND THE COFFEE PRODUCERFor Nectar, we usually choose coffee from Ethiopian smallholders—small-scale producers whose farms cover up to a dozen or so hectares at most. Sometimes we also contract coffee from a larger cooperative if the quality remains at the exact same high level. Lots rotate periodically, but each time it is the freshest possible crop—we make sure that the unique character of coffees from this part of the world is not muted by unpleasant notes of aging.Costa Rica, on the other hand, comes from the Ureña family business, where everything runs like clockwork. We started our relationship with these excellent producers in 2021, during the very first season of Herezja's existence. La Guaca is the name of the section where the catuai variety is mainly grown, undergoing meticulously designed honey-style processing under anaerobic conditions.ABOUT THE PROCESSING OF COFFEE BEANS ON THE FARMEthiopia: Processed as natural or washed, depending on seasonality. Natural involves drying the coffee seeds inside the whole fruit. Freshly harvested cherries undergo an initial selection process to discard those with defects. Then, they are spread across so-called African beds—long tables, sometimes stretching for several dozen (!) meters, with a mesh lining that allows for even airflow throughout the process, resulting in homogeneous drying. Depending on the weather, the whole process takes between 25 and 30 days.In washed processing, before fermentation, the coffee goes to a depulper that separates the seed from the pulp and the rest of the fruit. Next, it spends about 24 hours in a tank, after which it is washed and finally dried on African beds for about two weeks.Costa Rica: First, the cherries undergo a brief pre-drying process, and then they are sealed for 2 or 3 days in airtight tanks for fermentation with limited oxygen access. Afterwards, they are dried on long African beds inside something that looks like your grandparents' greenhouse plot, you know, where tomatoes and cucumbers grow. Except about seven times longer.ROASTER'S OPINIONHere is our idea for this espresso: we created a roast profile that highlights the beautiful flower and fruit notes typical of high-quality Ethiopian coffees, while at the same time offering plenty of chocolatey-dessert depth and sticky sweetness to balance the acidity and give the cup equilibrium. That is the work of the second component in the blend. As a result, whether you brew it in an espresso machine, a moka pot, or even as a filter coffee, you will get a full, round, and complex coffee with a long-lasting, sticky aftertaste!Store in a cool, dry place.
