The couple focuses on quality and innovation, being among the first farmers in the country to start producing specialty coffee using the honey and natural processing methods.Fun fact: innovation at Las Lajas is not only a matter of development, but also of necessity — in 2008, an earthquake deprived the region of electricity and water during the harvest, making it impossible to run the pulping machines and produce coffee using the washed method. The processing was carried out at the cooperative’s facilities to ensure consistency. The coffee was then decaffeinated in Germany using the water process.Did you know? Water process decaf is a multi-step decaffeination method in which green coffee is soaked in a water solution to extract the caffeine. The caffeine is then removed from the solution using activated carbon. The caffeine-free solution is subsequently added back to the pre-dried coffee beans. Final drying restores the beans to their original moisture content.Store in a cold and dry space.

Their farms average 1-2 hectares in size. The coffee cherries delivered to Kindeng Mill are processed, and then the beans are dried on raised beds and cloths, turned several times a day. The entire process takes about a month.Fun fact: Jiwaka Province is located in very fertile lands in the Waghi River Valley. The river serves the locals in many areas, including agriculture.
