Whole-bean specialty coffee from Colombia, roasted by Heresy roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of red wine, tropical fruits, fermented notes, blueberries and chocolate.

ABOUT THE FARM AND THE PRODUCER
One of several boutique farms owned by Banexport—an institution from the Cauca region focused on continuous innovation, with which we are collaborating for the second season. Las Villas was established in 2012 and, like its sister plantations, is managed in an incredibly professional manner.The farm combines coffee cultivation with care for biodiversity, creating a system where a healthy ecosystem helps maintain high and repeatable coffee bean quality. Coffee trees are regularly weeded and pruned, and damaged cherries are removed after harvest to help limit pest development. Native tree species, as well as citrus trees and avocados, grow among the coffee bushes. They provide shade, protect the soil, attract beneficial organisms, and support the natural resilience of the entire farm.
ABOUT THE PROCESSING
The Castillo variety, hand-picked at peak ripeness, is transported on the same day to the Popayán city center to the state-of-the-art Area 18 laboratory.Fermented for 72 hours in a stainless steel bioreactor while controlling parameters such as temperature, pressure, and pH.Afterward, the fruit pulp undergoes sterile filtration before being placed along with the beans into American white oak barrels for 60 days.Drying takes place in mechanical chambers with controlled temperature and airflow. After five days, the beans reach optimal moisture levels, ensuring stability during storage and export.
