ABOUT THE COFFEE

In the cup, you will find notes of cocoa and cherry, wrapped in high, honey sweetness. The whole experience is complemented by a heavy, creamy body, which adds exceptional fullness and lingers long on the tongue.A refined processing method combined with the Pacamara variety is responsible for this character. The Guillen family subjects the cherries to 120 hours of anaerobic fermentation under controlled temperatures. Afterwards, the fruit dries for nearly a month on African beds, and once the appropriate moisture level is reached, the coffee is placed in a ventilated warehouse where the beans can stabilize. The result? High sweetness and plenty of fruitiness. Ideal for winter days!

ROASTER'S OPINION
