ABOUT THE REGION

The Guji region has for years been one of the most valued coffee-growing areas in Ethiopia. The beans come from smallholders whose plantations are located at altitudes ranging from 1,500 to 2,200 meters above sea level. In the shade of native trees, the cherries ripen more slowly, developing the clarity of flavor, floral aromas, and natural sweetness characteristic of this region.

ABOUT PROCESSING AND DECAFFEINATION

After being processed using the natural method, the coffee underwent decaffeination using carbon dioxide (CO₂). This is one of the gentlest caffeine removal methods, allowing the beans to retain their original character and most of the compounds responsible for taste and aroma. The result is a cup with distinct floral notes, natural sweetness, and citrus freshness – exactly what the best coffees from Guji are known for, just without the caffeine.
