They live in Queromarca, a small town in the Callayuc district, province of Cutervo and Cajamarca region. Callayuc has all the conditions to grow fantastic coffee: fertile soils, altitude that range from 1600 to 2000 masl, good cup varieties (mainly red and yellow Caturra, but also bourbon, Typica) but it is more and more affected by droughts. So farmers have had to adjust to the conditions and as a consequence the use of water is limited. On top of that, they have been fermenting their coffees into closed environments (often thick plasticbags under shade) to allow yeasts to form and add a distinctive fruity profile to their cups. Of course they supervise the levels of fermentation to avoid defects.The story of the Santacruz brothers fits within many farmers in Peru as they used to sell their entire crops to local buyers that would arrive at their farm door and take the bags away at a cheap price. Now they deliver their coffee to Cultivar, where after through quality control they receive a much higher price for it. This gap in price is a great help in their income that they complement with growing cattle. Cajamarca is very well known for its cattle culture, providing the region with an abundant amount of cheese, milk and beef.As for the future of the Santacruz family and their coffee business we have very good hopes. Jesus, one of the brothers, has recently bought a few extra hectares of land with the idea to plant more exotic and delicate varieties like Geisha and he is a good representation of the younger generation of farmers that will take the lead in the coffee production in the years to come in Cajamarca.ROASTER'S OPINIONSuper floral and sweet coffee that reminds us slightly of the Geisha botanical variety, even though it isn't one.RECIPE V6016g of coffee250g of water 96°CMedium Grind Size 1. Put a paper filter in your V60 and rinse it with hot water ( 96C ). It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that 98,5 % of your brewed coffee is water)2. Remove the rinsing water from the server.3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.8. At 00:50 pour hot water to 200g. 9. At 01:10 pour hot water to 250g.10. Swirl your V60 and let the coffee drip. 11. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long. But always taste and then judge your coffee.Store in a cold and dry space.

As it cools, the rose hip shows a touch of herbal elegance.ABOUT THE FARMThis coffee has been processed at the Kamwangi Factory, belonging to the New Ngariama Cooperative Society in Kirinyaga, Central Kenya. Among the three wet mills under the cooperative, Kamwangi is one. It serves approximately 1800 farmers, although not all are currently active. These farmers primarily grow SL 34 (90%), along with SL28, K7, and Ruiru 11 varieties, at altitudes ranging from 1500 to 1800 metres above sea level. The factory is closest to the town of Embu. Processing is done with Fresh River Water. The same water is recycled during the day through a recycling process enabling them to significantly reduce water consumption. They are Rainforest Alliance certified, and have established soaking pits for waste water treatment.THE PROCESSOnce the coffee cherries have been accepted by the Cherry Clerk, they are pulped and fermented for approximately 16-24 hours, depending on ambient temperature at the time. Following fermentation, the coffee is washed in clean water from the Kii River and soaked for 12 hours. Newly installed tiles in the washing channels help preserve coffee and water quality, and all water used in processing is cleaned by filtering in earthen pits before being reintroduced to local waterways. After washing and grading, the beans are laid to dry on raised beds. Workers rake the beds frequently to ensure even drying, covering the beds during the hottest time of day and at night, to shelter parchment from moisture. It takes approximately 14 days for the beans to dry.ROASTER'S NOTEOur Kenyan lots really flew off the shelves this season, so we were excited to source this coffee from the final harvest of 2025. Jesús Arbey Iquira is a dedicated coffee producer who employs meticulous farming practices to ensure the highest quality beans. He has developed meticulous processing methods over the years that can give his coffees very unique profiles.ABOUT COFFEEIn general, the ripest cherries are selected for natural processing, they are often hand sorted or float-sorted, cleaned, and placed on raised beds in a covered area to dry for at least a two-week period. The high humidity and rainy climates across Colombia do add to the challenging of achieving a high-quality naturally-processed coffee; but, when it is done properly and the coffee is moved consistently throughout the curing process, we find the resulting cup profile to be exquisite. Pink Bourbon: Cultivated from hybridization of Red and Yellow Bourbon. It's very rare, but the producers say it is quite resistant to rust. Pink and Orange Bourbons are very difficult to produce with consistency. The recessive genes leading to the expression of these colors are easily thwarted by the presence of yellow and red genes in a given pollen grain. A carefully isolated and contained lot can do quite well and preserve the unique color and character of this variety, though this is quite hard to find.ROASTER'S NOTEElegant yet very expressive. Thanks to the natural processing method, the coffee retains intense sweetness and aromatic complexity.The secret behind this coffee's character lies in the natural process, one of the oldest methods of preparing coffee beans. The process begins with the hand-picking of fully ripe coffee cherries. Selection at this stage is crucial, as only perfectly ripe cherries ensure the subsequent sweetness and clarity of flavor.After harvesting, the fruit undergoes an initial selection to remove unripe or damaged cherries. Water tanks are often used for this purpose – lower-density fruits float to the surface and are discarded, while the highest-quality cherries sink to the bottom and proceed to the next stage of production.Next, the whole fruits—complete with skin and pulp—are spread in a thin layer on raised drying beds. This is where the most critical part of the natural process begins. For several weeks, the fruit slowly dries in the sun, allowing the sugars and aromatic compounds from the pulp to permeate the beans inside. This stage is responsible for the characteristic sweetness, fruitiness, and intense aroma.During drying, the cherries are regularly turned to ensure even moisture evaporation and to prevent uncontrolled fermentation. Farmers closely monitor the temperature and drying time, which typically lasts from two to even four weeks. Once the fruit reaches the correct moisture level, they resemble hard, dried coffee cherries.Only at the end of the process are the dried fruits sent to the mill, where the dried skin and pulp are mechanically removed. This yields the green coffee beans, ready for sorting, grading, and export.Thanks to this slow, natural process, the beans from Nyamyumba acquire exceptional sweetness and aromatic depth. In the cup, this translates into an elegant flavor profile where linden flowers meet honey sweetness, while notes of Damson plum and cherry add a juicy, fruity structure. Although it will not put you on your feet, it is a ticking fruit bomb. Decaf coffees have long had their place on our shelves and in our hearts, but this one quickly turned our habits upside down. From the very first encounter, it delivered a juicy punch straight to the taste buds. Is this really a decaf? This fruity? This expressive? We could not walk past it indifferently, nor resist sharing what the renowned Nogales farm is doing with caffeine free coffee. Nogales is a family run farm led today by Oscar Hernandez, a third generation farmer from Huila, who has been breaking coffee conventions for years, a mindset confirmed by a Cup of Excellence win in 2006.For the sensory description, we limited ourselves to three descriptors, although the truth is that the profile could easily hold almost an entire palette of Mamba like flavours. The cup is complex and intense, hard to confuse with anything else. A pronounced sweetness is supported by well balanced acidity and a round body. If you enjoy fruit forward profiles, avoid caffeine and do not want to give up either, these beans are made for you.The processing begins in a classic way. Hand harvesting, flotation to separate only ripe cherries, followed by 24 hours of fermentation and thorough washing. The coffee is then gently dried on raised beds until it reaches the desired moisture level.Only then does the decaffeination begin. First, the beans are immersed for four hours in hot water at 40°C, allowing the caffeine to be extracted. This step is repeated twice. Next, a natural must is used, an extract obtained from the husk and pulp of the coffee cherry. The entire process relies solely on components derived from the coffee itself. Finally, the beans are washed once more and dried again, preserving clarity in the cup and the coffee’s natural sweetness.Store in a cold and dry space.
